THYME PORK CHOPS
For this easy entree, just brush thick pork chops with a flavorful marinade of herb and olive oil, and then roast until done.

- Trim fat from meat. Season chops lightly with salt and black pepper.
- In a bowl, stir together the olive oil and thyme, and brush over all sides of pork chops. Place chops on a rack in a shallow roasting pan.
- Roast thick chops, uncovered, in a 350 degree F oven for 45 to 50 minutes or until juices run clear. Or roast 3/4-inch-thick chops, uncovered, in a 375 degree F oven for 25 to 30 minutes or until juices run clear. Makes 6 servings.

Steps:
- Saute onion in butter.
- Remove onions and keep warm.
- Combine garlic, pepper, flour, sage and thyme and press onto both sides of meat.
- Brown pork chops in pan with remaining butter, remove the chops.
- Add 1/2 cup wine to pan and bring to a boil.
- Return pork chops to pan and cover, reduce heat to a simmer for 30 minutes.
- Remove pork chops and add remaining 1/4 cup wine to pan.
- Broil over high heat until reduced to a syrupy glaze.
- Pour sauce over chops and top with onions.
- Enjoy--.

PORK CHOPS WITH CREAMY MUSTARD THYME SAUCE
These pork chops are one reason to welcome fall! Easy to prepare, yet fabulously delicious, they are a great option on a weeknight. You'll start these on the stove and then finish in the oven.

- 1. Preheat oven to 375 degrees.
- 2. Melt 2 T butter in an oven-proof skillet over medium heat. Add mushrooms and saute until soft and lightly browned, about 6 minutes. Remove from pan and set aside.
- 3. Melt remaining butter in the same skillet over low heat. Add shallot and saute gently until soft, about 8-10 minutes. Remove from pan and set aside.
- 4. Season pork chops with salt and pepper. Heat the same skillet over medium-high heat and sear pork chops on one side, about 2 minutes. Turn and sear the other side, roughly the same time. Remove from heat and set aside.
- 5. Return the same skillet to medium heat. Deglaze the pan with chicken broth, scraping bits from the bottom. Whisk in cream, thyme leaves, mustard and worschestershire. Simmer until well incorporated and slightly thickened, about 5 minutes. Stir in mushrooms and shallots. Return pork chops and juices to the pan. Spoon the sauce over the chops and turn off the burner.
- 6. Place the skillet in the preheated oven and finish for 20-35 minutes, depending on the thickness of the pork.

Another recipe from my Aunt's collection. I'm not sure where she orginally got it from, but it is delicious. This recipe doubles very easily.

- Melt butter in heavy medium skillet over medium heat.
- Sprinkle pork with salt and pepper.
- Sauté pork until brown and cooked through, about 5 minutes per side.
- Transfer pork to plate.
- Add wine to same skillet.
- Bring to simmer, scraping up browned bits in bottom of pan.
- Stir in remaining ingredients.
- Reduce heat to medium-low and simmer until slightly reduced, stirring occasionally, about 3 minutes.
- Season sauce to taste with salt and pepper.
- Return pork and any juices to skillet.
- Cook until heated through, about 1 minute.
- Spoon sauce over and serve.

- In a resealable plastic bag, combine the wine or broth, 1 tablespoon thyme and garlic; add pork. Seal bag and shake to coat; refrigerate for 30 minutes. Turn and refrigerate 30 minutes longer., Drain and discard marinade. In a shallow bowl, combine the bread crumbs, salt, pepper and remaining thyme. Coat pork chops on both sides with crumb mixture. In a nonstick skillet over medium heat, cook pork in oil for 8 minutes on each side or until golden brown and a thermometer reads 160°.
