3 tablespoons all-purpose flour
2 tablespoons plus 1/4 cup grated Parmesan cheese, divided
1-1/2 teaspoons salt
1/2 teaspoon dill weed
1/4 teaspoon pepper
6 boneless pork loin chops (4 ounces each)
1 tablespoon canola oil
2 medium onions, sliced
1/4 cup warm water
3 medium zucchini (about 1 pound), sliced
1/2 teaspoon paprika

Steps:

  • In a shallow dish, combine the flour, 2 tablespoons cheese, salt, dill and pepper. Dip pork chops in flour mixture to coat both sides; shake off excess., In a large skillet, brown chops on both sides in oil. Top with onions; add water. Bring to a boil. Reduce heat; cover and simmer for 15 minutes., Place zucchini over the onions. Sprinkle remaining cheese over zucchini. Sprinkle with paprika. Cover and simmer for 10-15 minutes or until vegetables are tender and a thermometer inserted in pork reads 145°. Let stand 5 minutes.

4 pork chops, about 1-inch thick and 6 to 7 ounces each, see notes
Salt, to taste
1 tablespoon all-purpose flour
1 teaspoon chili powder, see our homemade chili powder recipe
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground black pepper
1 tablespoon neutral oil like avocado oil or vegetable oil
1 cup low-sodium chicken stock, see our homemade chicken stock recipe
1 tablespoon apple cider vinegar
2 teaspoons honey or brown sugar
1 tablespoon butter
2 tablespoons chopped fresh parsley, optional

Steps:

  • Take the pork chops out of the refrigerator and season on both sides with salt - we use just less than 1/4 teaspoon of fine salt per pork chop. Set the chops aside to rest for 30 minutes.
  • Meanwhile, make the spice rub. In a small bowl, mix the flour, chili powder, garlic powder, onion powder, smoked paprika, and 1/2 teaspoon of black pepper.
  • After 30 minutes, use a paper towel to pat the pork chops dry, then rub both sides of the chops with the spice rub.
  • Heat the oil in a skillet (with a lid) over medium-high heat. When the oil is hot and looks shimmery, add the pork. Cook until golden, 2 to 3 minutes.
  • Flip the pork so that the seared side is facing up. If there is a fattier side of the pork, use kitchen tongs to hold the chops, fat-side-down until it sizzles and browns slightly; about 30 seconds.
  • Reduce the heat to low, then cover the skillet with a lid. Cook 6 to 12 minutes or until an instant-read thermometer reads 145° F when inserted into the thickest part of the chop. Cook time depends on the thickness of the chops, so check for doneness at 5 minutes, then go from there, checking every 2 minutes after that. If you do not have a thermometer, you will know they are done, if, when cutting into the chops, the juices run clear.
  • Transfer pork chops to a plate, then cover loosely with aluminum foil. Let the pork rest for 5 minutes.
  • While the pork rests, make the pan sauce. Increase the heat to medium-high, then add the chicken stock, vinegar, and honey. Use a wooden spoon to scrape the bottom of the pan so that any stuck bits of pork come up.
  • Bring the sauce to a simmer and cook until reduced by half. Taste, then adjust the seasoning with additional salt, vinegar, or honey.
  • Slide the skillet off of the heat and when the sauce is no longer simmering, swirl in the butter.
  • Slide the pork chops back into the pan and spoon some of the sauce on top. Alternatively, slice the chops, then place them back into the pan. Scatter fresh parsley over the pork, and then serve.

1 cup finely chopped onion
3 cloves garlic, finely chopped
1 cup white wine
3 1/2 cups water
1 cup white cornmeal, plus 1 cup for dredging the croutons
Salt and freshly ground pepper
3 cups canola oil
1 cup grated Parmesan cheese
1 cup grated Asiago cheese
1 tablespoon flour
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
Salt and freshly ground pepper
1 teaspoon pureed canned chipotles
Few dashes Worcestershire
Few drops hot pepper sauce
1/4 cup red wine vinegar
1 teaspoon capers
4 anchovy fillets
8 cloves garlic, roasted
3/4 cups olive oil
5 cups romaine lettuce, torn into bite sized pieces
4 (1 1/2-inch) thick center-cut loin pork chops, with bone
Salt and pepper

1 cup dry white wine
1 cup chicken stock
1 teaspoon Dijon mustard

  • Hominy Croutons:
  • Heat oil in a small saute pan. Cook onions and garlic until soft. Add wine and reduce by half. Place the water in a medium saucepan and add 2 tablespoons of salt, bring to a boil. Slowly whisk in the cornmeal and cook for, 15 to 20 minutes. Season with salt and pepper and spread into a buttered 11 by 17 inch baking sheet. Chill in the refrigerator for at least 1 hour. Heat the oil in a cast iron skillet or a deep fry to 350 degrees F. Cut the polenta into 1/2-inch squares. Dredge lightly in cornmeal and fry in batches until golden brown.
  • Parmesan Crisps:
  • Heat a large saute pan over medium heat. Combine the cheese and flour in a medium bowl. Sprinkle 2 tablespoons of the cheese into the pan to form a 4-inch circle. Cook until the cheese is somewhat melted but not firm. Using a spatula, turn the cheese over and cook until firm. Drape the crisp over a large rolling pin until cool. Repeat.
  • Salad:
  • Put all ingredients except oil in a blender and blend until smooth. Slowly add the oil and season with salt and pepper. Place the romaine in a large bowl and toss with some of the dressing. Divide among 4 plates. Scatter croutons around and place a Parmesan crisp in the center of the salad.
  • Pork:
  • Season pork with salt and pepper on both sides. Heat a few tablespoons of oil in a large saute pan until almost smoking. Cook the pork for 3 to 4 minutes on 1 side or until golden brown, turn over, reduce heat to medium and continue cooking to medium doneness. Remove to a plate and keep warm. Pour off all but 2 tablespoons of the fat. Add the garlic and onions and cook until soft. Add the wine and cook until reduced by half. Add the stock and cook to a sauce consistency. Whisk in the mustards and thyme and season with salt and pepper to taste.

2 pork rib chops, bone in, 8 ounces each (1 inch thick, brined if desired)
salt and pepper
6 teaspoons vegetable oil
1 minced shallot
1/2 cup low sodium chicken broth
1/4 cup dry white wine
1/2 tablespoon Dijon mustard
1 tablespoon unsalted butter, cut into 2 pieces
1 teaspoon fresh tarragon leaves
table salt & fresh ground pepper

Steps:

  • Pat the pork dry with paper towels, then season with salt and pepper.
  • Heat 3 teaspoons oil in a 10-inch skillet over medium-high heat until just smoking. Brown the chops on the first side, about 3 minutes.
  • Flip the chops over, reduce the heat to medium, and continue to cook until the center of the chops (away from the bone) registers 135 degrees on an instant-read thermometer, 5 to 10 minutes.

ZUCCHINI STUFFED PORK CHOPS & MUSTARD SAUCE



Zucchini Stuffed Pork Chops & Mustard Sauce image

This is my mother's recipe, and it's a good one! I've added a few things like the sesame seeds, but otherwise, I've copied it. It looks long, but this comes together very quickly! If you don't want to use the heavy cream, try it with sour cream, or lite sour cream.

3/4 lb zucchini, grated
1 tablespoon salt
1 tablespoon minced garlic
1/4 cup extra virgin olive oil
3 tablespoons freshly grated parmesan cheese, plus
3 tablespoons more freshly grated parmesan cheese
6 thick pork chops (3/4 inch)
1/4 cup toasted sesame seeds (or more)
1 small onion
1/3 cup dry white wine
1/2 cup heavy cream
1 tablespoon Dijon mustard

Steps:

  • Toss the zucchini and salt well in a colander and let it drain for about 30 minutes. Squeeze the zucchini dry (I use paper towels to do this).
  • In a large non-stick skillet heat 3 tbsp of the oil and cook the garlic and the zuchini over a fairly low heat, stirring until it's just tender. (Don't cook it any longer or it will be too mushy).
  • Stir in the parmesan and let cool.
  • Cut a deep pocket in each chop and stuff with the zucchini.
  • Heat the remaining oil in another large non-stick skillet over medium high heat until it is hot but not smoking.
  • Pat the chops dry with a paper towel, and coat them in the sesame seeds. Press the seeds in (you might need more or less depending on the size of your pc's) -- and saute (3 at a time if you like), turning them once, til they are firm to the touch (about 8 minutes total).
  • Keep warm on a platter in the oven.
  • Meanwhile, make the mustard sauce: In the oil remaining in the skillet that you cooked the pork chops in, saute the onion over medium high heat until it is soft, about 2 minutes. Add the wine and de-glaze the pan. Whisk in the cream (or stir in the sour cream). Add the mustard, the parmesan cheese, and any juice that may have accumulated on the platter, and stir to combine. Add salt and pepper to your liking.
  • I spoon it over the chops or you could serve them on top of a pool of sauce. Goes very well with spinach btw!

Transfer to a shallow baking pan, reserving skillet, and bake, uncovered, until cooked through, about 5 minutes. Let stand, loosely covered with foil, 5 minutes.
  • Meanwhile, pour off fat from skillet, then cook shallots in butter over moderate heat, stirring, until softened, 3 to 5 minutes. Add broth and any juices from baking pan and boil, scraping up any brown bits, 2 minutes.
