PINEAPPLE PORK CHOPS

Pineapple pork chops are a breeze to make and unbelievably delicious. The seasoned pork chops are first seared then cooked in a simple sauce made of pineapples, honey, soy sauce, and garlic. The pineapples become caramelized and the chops are super tender.

4 boneless pork chops
1 teaspoon EACH: garlic powder and onion powder
½ teaspoon EACH: salt and pepper
1 tablespoon cooking oil
14 ounce can of unsweetened pineapple tidbits (juice and fruit)
2 tablespoons honey
2 tablespoons soy sauce (gluten-free or coco aminos, as needed)
3 cloves garlic (finely minced)
Minced cilantro (to serve)

Steps:

  • Season the pork chops on both sides with garlic powder, onion powder, salt, and pepper.
  • Heat the oil in a large, non-stick frying pan over medium-high heat. Add the pork chops and sear for 4-5 minutes, or until golden on one side.
  • While the chops are searing, add the pineapple tidbits, honey, soy sauce, and garlic to a medium-sized bowl.
  • Flip the chops over then pour the pineapple sauce into the pan. Continue to cook the pork chops until they reach an internal temperature of 145 degrees Fahrenheit and the pineapple sauce has reduced and thickened a little, about 10 minutes. If the pineapple sauce is getting too thick, add a splash of water.
  • Serve the pineapple pork chops with a little cilantro over the top.

4 bone-in pork loin chops (each 8 to 10 ounces and 1/2 inch thick), trimmed of fat
Coarse salt and ground pepper
1 tablespoon adobo sauce
2 tablespoons brown sugar
1 mango, peeled and cut into 1/2-inch pieces
1/2 small red onion, finely chopped
1 small jalapeno chile (ribs and seeds removed), finely chopped
2 tablespoons fresh lime juice

Steps:

  • Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with aluminum foil. Place pork on baking sheet; season with salt and pepper. Spread with adobo sauce; sprinkle with brown sugar.
  • Broil until an instant-read thermometer inserted in thickest part of a chop, avoiding bone, registers 155 degrees, 8 to 10 minutes. Let rest 5 minutes before serving.
  • Meanwhile, make salsa: In a medium bowl, combine mango, onion, jalapeno, and lime juice. Season with salt and pepper, and toss to combine. Top chops with salsa, and serve with Arugula Cucumber Salad, if desired.

2 boneless pork chops
garlic powder
pepper
goya sazon (two packets)
1 medium onion sliced thin
1 medium sized ripe mango
2 to 3tablespoons of pineapple juice
2 good squirts of lime juice

Steps:

  • 1. Trim excess fat from pork chops
  • 2. Season both sides of chops with garlic powder, pepper and one packet of goya sazon.
  • 3. Heat oil in skillet until hot. Add Chops and sear on both sides.
  • 4. Remove chops from stove. Season onions with same seasoning (only use 1/4 packet of sazon) Cook in small skillet with olive oil until tender but still crisp.
  • 5. Cut chops into cubes, reseason and return to skillet. Continue cooking on medium heat until they are cooked through and tender.
  • 6. Add onions to pork and stir fry for a few minutes more.
  • 7. Remove from stove and keep warm.
  • 8. Meanwhile cut mango in chunks and put in blender. Pulse till they are crushed. Add pineapple juice and pulse several times. Add two good squirts of lime juice and pulse again. Taste. (should have a sweet yet tart flavor) Add another squirt of lime juice if needed. Pour into small bowl to use for dipping pork in.
  • 9. I served mine up with some simple homemade stuffing (pepperidge farms italian stuffing cubes, chicken broth, onions, salt pepper and garlic powder) and mixed veggies with a butter and garlic sauce.

6 boneless pork loin chops (5 ounces each)

1 clove garlic, minced
1 teaspoon chili powder
¼ teaspoon cayenne pepper
1 pod cardamom seeds
½ teaspoon water, or as needed
1 teaspoon vegetable oil
¼ cup rice wine vinegar
½ cup sugar
1 mango - peeled, seeded, and chopped
¼ teaspoon salt
½ teaspoon cilantro
2 teaspoons lemon juice
1 fresh jalapeno pepper, minced
1 ½ cups unsweetened applesauce
3 pineapple rings, chopped
1 pinch white pepper
⅓ cup soy sauce
⅓ cup rice wine vinegar
6 pork chops

Steps:

  • With a mortar and pestle, mash together the garlic, chili powder, cayenne, and cardamom seeds. Mix in enough water to form a paste.
  • Heat the oil in a saucepan over medium heat. Stir in spice paste, and cook until it begins to bubble, about 30 seconds. Stir in vinegar; cook without boiling for 2 minutes. Stir in sugar until it dissolves. Mix in mango, salt, cilantro, lemon juice, and jalapeno; simmer 20 minutes. Stir in applesauce and pineapple; simmer 10 minutes more. Season with white pepper. Place in a bowl, cover, and refrigerate until ready to use.
  • To prepare marinade, mix 2/3 cup of the salsa with soy sauce and 1/3 cup vinegar. Place pork chops in a large resealable plastic bag, and pour marinade over chops. Seal tightly, and place in the refrigerator for 1 hour.
  • Prepare grill for medium-high heat. Drain marinade from bag, and heat in a saucepan until boiling.
  • Lightly oil grill grate. Place pork chops on the hot grill. Cook 10 minutes, or to desired doneness, turning once and basting occasionally with the boiled marinade.
  • Warm remaining salsa over medium-low heat. Serve pork chops topped with the salsa.
