This is a super-easy recipe for pork chops. I pan-fry the chops first and then bake them with sauerkraut, apple, onion, and brown sugar. Delicious!

4 pork chops
salt and freshly ground black pepper to taste
1 tablespoon oil, or as needed
1 (20 ounce) can sauerkraut, drained
1 apple - peeled, cored, and diced
1 onion, finely chopped
¼ cup brown sugar
½ tablespoon caraway seeds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  • Rub pork chops with salt and pepper on both sides. Heat oil in a skillet over medium-high heat and pan-fry pork chops on both sides until browned, 5 to 7 minutes per side. Place browned pork chops into the prepared casserole dish.
  • Combine sauerkraut, apple, onion, brown sugar, and caraway seeds in a bowl; cover pork chops with the mixture. Cover dish with aluminum foil.
  • Bake pork chops in the preheated oven until no longer pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

2 tablespoons canola oil
1 jar (32 ounces) sauerkraut, undrained
3/4 cup packed brown sugar
1 medium green pepper, sliced
1 medium onion, sliced

  • In a large skillet over medium heat, brown pork chops in oil for 3-4 minutes on each side; drain. In a 5-qt. slow cooker, combine the sauerkraut and brown sugar. As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

2 pounds sauerkraut, drained
1 large red apple, diced
1 onion, chopped
1 cup brown sugar
1 tablespoon caraway seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large nonstick skillet over medium-high heat, and brown the pork chops on both sides, about 5 minutes per side. Place the chops into a 9x13-inch baking dish.

This is the smell of Cleveland in late fall. Show up at the Municipal Parking Lot to tailgate before any home football game and you'll see a million variations on the theme of pork, kraut, and beer. The hoppy beer-I like Commodore Perry IPA from Great Lakes Brewing- deglazes the pan and makes a great sauce for the chops. Go Browns!

1 teaspoon paprika
1/2 teaspoon coriander seeds, toasted and ground
Kosher salt and freshly ground black pepper
Four 4-ounce boneless pork chops, each 1/4-inch thick
3 tablespoons olive oil
2 cups thinly sliced red onions
1 cup sauerkraut
1 cup IPA-style beer
1/3 cup fresh flat-leaf parsley leaves, chopped
Put a large skillet over high heat.
Whole grain mustard, for serving

Steps:

  • Combine the paprika, coriander, 1 teaspoon salt and black pepper to taste in a small bowl. Season both sides of the pork with this spice mixture.
  • Add the oil to the preheated skillet. Add the pork in a single layer in the pan. Cook, without moving, until lightly golden brown, about 1 minute. Flip the meat and scoot to the outer edges of the pan. To the open space in the middle, add the onions and a pinch of salt. Cook for 2 minutes, stirring the onions occasionally.
  • Add the sauerkraut and continue cooking until the onions have softened and the sauerkraut turns golden brown, about 1 1/2 minutes. Add the beer and deglaze the pan, scraping with a wooden spoon to get up the browned bits on the bottom of the pan. Cook until the sauce reduces slightly, about 30 seconds.
  • Remove from the heat and stir in the parsley. Serve the pork chops topped with the sauerkraut mixture, any accumulated juices and mustard.

Served with mashed potatoes, this meal reminds me of time I spent in Germany. A real German hausfrau would cook up an apple in her sauerkraut, but using baby food is a real time-saver and still softens the flavor of the sauerkraut and makes it delicious.

1 tablespoon vegetable oil
4 boneless center cut pork chops, 1/2 inch thick (4 to 5 oz. each)
1/4 teaspoon pepper
1/8 teaspoon salt
1 lb sauerkraut (bagged, not canned!)
1 (6 ounce) jar pear baby food or 1 (6 ounce) jar apple baby food

Steps:

  • Heat oven to 375°F.
  • Heat oil in a large ovenproof skillet over medium heat.
  • Add pork chops and cook about 2 minutes per side, turning once, until lightly browned.
  • Remove skillet from heat and remove chops to a plate.
  • Sprinkle with pepper and salt.
  • Meanwhile drain sauerkraut, rinse under cold water, and squeeze dry with paper towels.
  • Mix sauerkraut and puréed pears in the skillet.
  • Top with pork chops.
  • Bake uncovered, 18 to 20 minutes, until centers of chops are opaque and barely pink.
  • Serve with mashed potatoes.
  • Note: My supermarket stores the bagged sauerkraut in the meat section near the bratwurst and other sausages.
  • It really is better tasting than any of the canned or jarred kinds I've tried, if you can find it.

4 pork chops
1 medium onion, sliced
1 1/2 pounds sauerkraut, washed
1 tablespoon caraway seeds
1 teaspoon freshly ground pepper
1 cup beer
Coarse salt to taste

  • In a heavy skillet, fry the bacon until golden. Remove and drain on paper towels. Brown the chops in the bacon fat and add the onion, the sauerkraut, the bacon, caraway seeds and pepper. Cover the chops well with the sauerkraut.

1 teaspoon salt

1 lb small red potatoes, cut into 1/4-inch wedges
1 can (1 lb) sauerkraut, drained
1 teaspoon parsley flakes

  • In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium heat. Sprinkle pork with 1/2 teaspoon of the salt and the pepper; cook pork in oil 5 to 8 minutes, turning once, until brown. Remove pork from skillet; cover to keep warm.
