3 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 teaspoons salt
1/4 teaspoon pepper
1 can (14-1/2 ounces) chicken broth
6 pork rib or loin chops (3/4 inch thick)
2 tablespoons canola oil
Additional salt and pepper, optional
6 cups thinly sliced peeled potatoes
1 medium onion, sliced
Paprika and minced fresh parsley, optional

Steps:

  • In a small saucepan, melt butter; stir in the flour, salt and pepper until smooth. Add broth. Bring to a boil; cook and stir for 1 minute or until thickened. Remove from the heat and set aside. , In a large skillet, brown the pork chops on both sides in oil; sprinkle with additional salt and pepper if desired., In a greased 13x9-in. baking dish, layer potatoes and onion. Pour broth mixture over layers. Place pork chops on top. , Cover and bake at 350° for 1 hour; uncover and bake 30 minutes longer or until meat and potatoes are tender. If desired, sprinkle with paprika and parsley.

This is the greatest recipe I was ever given. It is a family favorite for us. Simple yet delicious pork chops and scalloped potatoes baked with chicken broth and a hint of paprika.

3 tablespoons butter, divided
1 ½ teaspoons salt
¼ teaspoon ground black pepper
3 tablespoons all-purpose flour
1 (14.5 ounce) can chicken broth
6 pork chops
6 cups thinly sliced potatoes
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In sauce pan melt 1 tablespoon butter over medium heat. Add salt, pepper and flour. Pour in the chicken broth, cook and stir until mixture boils. Remove from heat and set aside.
  • In skillet brown pork chops in 1 tablespoon butter. Grease a cooking dish with the remaining tablespoon butter and layer potatoes. Pour mixture over potatoes and place browned chops on top. Sprinkle paprika on top.
  • Cover and bake for 1 hour. Uncover and bake for an additional 30 minutes.

5 cups thinly sliced peeled potatoes
1 cup chopped onion
Salt and pepper to taste
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup sour cream
6 pork loin chops (1 inch thick)
Chopped fresh parsley

Steps:

  • In a greased 13-in. x 9-in. baking dish, layer half of the potatoes and onion; sprinkle with salt and pepper. Repeat layers. Combine the soup and sour cream; pour over potato mixture. Cover and bake at 375° for 30 minutes. , Meanwhile in a nonstick skillet, brown pork chops on both sides. Place chops on top of casserole. Cover and bake for 30 minutes. One from my mom's old recipe box. This is the first time I have made this and it is a great one-dish meal for the family with very quick preparation for folks with busy lives. The chops are moist and delicious and the potatoes are creamy with a bit of crispness. Next time I may leave the skin on the potatoes for a bit more color. Most of the cooking time is passive, so enjoy that glass of wine before dinner. :)

4 boneless pork chops
1 tablespoon olive oil
4 cups potatoes, thinly sliced
1 (10 3/8 ounce) can condensed cream of chicken soup
1/2 cup heavy cream
1/4 cup skim milk
1 tablespoon dried parsley
salt & fresh ground pepper
fresh chives, snipped to garnish

Steps:

  • Preheat oven to 375F degrees.
  • Season pork chops with salt and pepper; in frying pan flash fry chops in olive oil to seal.
  • Blend together soup, cream, milk, and parsley.
  • In a 2 quart buttered casserole dish, alternate sauce and potatoes, starting with a spoon of the sauce, then potatoes and sauce again, sprinkling with salt and pepper; repeat ending with the layer of sauce. Reserve a couple spoons of the sauce.
  • Top with browned pork chops; spoon saved sauce over top of each.
  • Cover and bake at 375F degrees for 1 1/4-1 1/2 hours or until bubbly, potatoes are tender and begin to brown.
  • Sprinkle with snipped fresh chives to garnish.
  • Trim fat off chops before transferring to serving plate.

1/2 c milk
2 can(s) cream of mushroom soup
8 large potato's
salt and pepper to taste
2 c cheddar cheese, shredded,
PREHEAT OVEN TO 350 DEGREES

Steps:

  • 1. Peel, sliced and rinse potato's shaking excess water off placing the potato's in a 9 by 13 inch baking pan
  • 2. I a small mixing bowl mix the mushroom soup, milk and salt & pepper to taste. Pour over the potato's, place the pork chops on top, cover with foil and bake FOR 45 min uncover and bake for 15 more min, the last 5 min cover with the cheese

1/2 cup sour cream
1/4 cup water
1/2 teaspoon dried dill weed
4 cups thinly sliced potatoes

vegetable oil
parsley, for garnish

Steps:

  • Combine mushroom soup, sour cream, water and dill weed in a small bowl; blend well.
