This is a very old Campbell's recipe that I found in my recipe files. I remember it to be very tasty as it incorporates pork & beans along with the apples and pork chops.

6 pork chops (about 2 pounds)
1 (28 ounce) can pork & beans (in tomato sauce)
cinnamon (generous dash)
1/4 cup brown sugar (packed)
1 dash ground cloves
6 apples, slices (thick)

Steps:

  • In a skillet, brown chops. In a 2-qt. shallow baking dish, combine beans and cinnamon; top with chops. Cover; bake at 350 degrees F. for 30 minutes. Combine sugar and cloves. Top chops with apples; sprinkle with sugar mixture. Bake uncovered 15 minutes more or until tender.

Threw this together tonight because I had some chops I needed to cook and it was the only thing thawed. I also had a few apples everyone was passing over and I haven't been to the grocery store in over a week. Made a pan of cornbread to go with it and dinner was complete. Hubby and sons loved it and were asking for seconds. Good thing I made dessert...lol

Number Of Ingredients 8

4 or 5 - boneless pork chops, about 1-1/2 pounds (i had 5 small chops)
- salt and pepper to season chops
- oil or butter to brown the chops
2-16 ounce(s) cans pork and beans in tomato sauce
- generous dash of ground cinnamon
4 tablespoon(s) light brown sugar
- dash of ground cloves
4-5 - thick apples slices, can use any good cooking apple (i used 2 galas and cut 5 thick slices)

Steps:

  • Season chops with salt and pepper and brown in fry pan with butter or oil on medium high heat. Just lightly brown each side you do not want to cook them through.
  • Combine generous dash of cinnamon and two cans of pork and beans in either a bowl or can combine them right in a 1-1/2 quart baking pan (one less dish to wash). Place browned pork chops on top of beans in the baking pan.
  • Cover with foil; bake at 350 degrees for 30 minutes.
  • While the chops and beans are baking combine your brown sugar and cloves and slice your apples.
  • After baking 30 minutes uncover and place an apple slice on each chop and sprinkle with the brown sugar clove mixture. Place baking pan back in oven uncovered and bake for an additional 15 minutes more or until apples are tender.
