SAUSAGE AND MUSHROOM STRUDELS

1/2 pound sweet Italian sausage links, casings removed
1/2 pound chicken sausage links, casings removed
16 tablespoons (2 sticks) unsalted butter, divided
1 cup chopped yellow onion
1 pound cremini mushrooms
1 teaspoon whole fennel seeds
Kosher salt and freshly ground black pepper
1 (8.8-ounce) package Italian mascarpone cheese, at room temperature
1/2 cup fresh bread crumbs
1 package (24 sheets) Kontos phyllo dough, defrosted
Plain dry bread crumbs, such as Progresso

Steps:

  • Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
  • If either of the sausage meats is coarsely ground, place the meat in the bowl of a food processor fitted with the steel blade, and pulse until the meat is finely ground.
  • Heat 4 tablespoons of the butter in a large (12-inch) saute pan, add the onion, and cook for 4 to 6 minutes over medium heat, until tender but not browned. Add all the sausage meat and mash with a fork, breaking it up and browning it, for 5 to 7 minutes, until no longer pink.
  • Meanwhile, prep the mushrooms. Without washing the mushrooms, wipe the caps with a slightly damp paper towel or sponge to remove any dirt. Trim the stems, then roughly chop the caps and stems. Add the mushrooms, fennel seeds, 1 teaspoon salt, and 1 teaspoon pepper to the sausage and cook for 10 minutes, until the mushrooms give off their liquid and the liquid evaporates. Set aside to cool for 10 minutes. Stir in the mascarpone and the fresh bread crumbs and season to taste. The seasoning will depend on how highly seasoned the sausage meat is.
  • Melt the remaining 12 tablespoons of butter in a small saucepan. Unfold the phyllo dough and keep it covered with a slightly damp (not wet!) kitchen towel. Transfer one sheet of phyllo to a board, brush it lightly with melted butter, and sprinkle with a teaspoon of dry bread crumbs.
  • Place a second sheet of phyllo directly on top, brush with butter, and sprinkle with dry bread crumbs; repeat until you have 5 sheets piled up.
  • With the long edge of the stack of phyllo facing you, make a 1-inch strip of sausage filling (about 1/3 of the filling) near the bottom edge. Fold up the sides and roll the phyllo firmly up and over, rolling the log away from you. Transfer the log, seam side down, to the prepared sheet pan. Brush with butter and score diagonally at 1-inch intervals. Make two more strudel logs and place them on the sheet pan.
  • Bake the strudels for 20 to 30 minutes, rotating the pan once to cook evenly, until browned. Cool slightly, cut in pieces through the scored lines, and serve warm.

1 (14 ounce) package pre-baked pizza crust
2 tablespoons barbeque sauce, or more as desired
1 teaspoon chipotle chili powder
salt and ground black pepper to taste
½ cup prepared pulled pork
⅛ cup sliced onion
⅛ cup sliced red bell pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place the pizza crust onto a baking sheet.
  • In a bowl, mix the barbeque sauce with chipotle chili powder; season with salt and black pepper.
  • Spread the sauce over the pizza crust.
  • Arrange pulled pork, sliced onion, and red bell pepper slices evenly over the pizza.
  • Bake in the preheated oven until the toppings are hot and the pizza crust is crisp on the bottom, 12 to 15 minutes.

1 pork tenderloin (about 1 pound)
3 tablespoons butter
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup sliced fresh mushrooms
1 small onion, sliced
2/3 cup milk
1 tablespoon Dijon mustard
1-1/2 teaspoons cornstarch

Steps:

  • Cut tenderloin widthwise into fourths. Slice each piece in half but do not cut all the way through; open and flatten each piece. Melt butter in a large skillet; add pork. Combine thyme, salt and pepper; sprinkle half over the meat. Cook 3-4 minutes per side. Add mushrooms and onion. Cook and stir until vegetables are almost tender and pork is no longer pink. Remove meat to a platter and keep warm. Combine milk, mustard, cornstarch and the remaining thyme mixture; stir into the vegetables. Bring to a boil; cook and stir for 2 minutes. Spoon over pork and serve immediately.

4 boneless pork chops, 1-inch thick
½ teaspoon seasoning salt, or to taste
1 tablespoon oil
2 cups chicken broth
1 cup sliced button mushrooms
1 small chopped onion
2 tablespoons butter
¼ cup flour, or more as needed

Steps:

  • Trim fat off pork chops and season generously with seasoning salt.
  • Heat oil in a large skillet over medium heat. Add pork chops and cook until browned, 3 to 4 minutes per side. Transfer pork chops to a plate.
  • Pour chicken broth into the skillet and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add mushrooms, onion, and butter; simmer for 5 minutes. Transfer 2 tablespoons of sauce to a small bowl.
  • Add flour to the sauce in the bowl and mix with a fork until no lumps remain. Pour slurry back into the skillet and stir until combined with the sauce.

An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). For a thicker gravy, mix in more flour.

MUSHROOM AND CHEDDAR PORK SAUSAGES



Mushroom and Cheddar Pork Sausages image

1/2 large portobello mushroom, stem and gills removed, small diced
Kosher salt
8 ounces sharp Cheddar, small diced (about 1 cup)
2 1/2 pounds pork butt, cut into medium-large pieces (See Cook's Note)
1 tablespoon freshly ground pepper
1 teaspoon dried sage
1/2 cup whole milk, cold
Pretzel buns, for serving
Coarse ground mustard, for serving

Steps:

  • Season the mushroom with 1 teaspoon salt and set aside in a bowl in the refrigerator to allow it to release any moisture. Put the Cheddar and pork on 2 quarter-sheet trays and freeze just until firm, about 1 hour.
  • Using a stand mixer fitted with the coarse grind attachment, grind the pork into the bowl of the stand mixer. Add 1 tablespoon salt, the pepper and sage and toss to combine. If the meat feels warm, place it in the freezer for a few minutes until it cools. Switch to the fine grind attachment and regrind the meat mixture. Add the milk and mushrooms to the meat mixture and switch to the paddle attachment. Mix until evenly dispersed. Add the Cheddar and stir until combined.
  • Preheat the oven to 450 degrees F. Line a baking sheet with a wire rack.
  • Bring a 6-quart saucepan full of water to a boil. Divide the meat mixture into 8 equal portions or use a 1-cup ice cream scoop to measure out eight portions. Using plastic wrap as the casing, roll each portion of meat into a 6- to 7-inch sausage link. Twist the ends tightly and wrap a second piece of plastic wrap around each sausage to prevent water from getting in. Place the sausages in the boiling water and cook until the outsides turn whitish and set up, about 6 minutes. Remove from the water, take off the plastic wrap and place on the prepared baking sheet. Bake the sausages until golden brown and firm to the touch, 15 to 20 minutes.
  • Place on a bun, top with mustard, and enjoy.
