1 5.3 ounce container Silk brand vanilla Almondmilk Yogurt Alternative
2 teaspoons freshly grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 teaspoon poppyseeds
1 1/2 cups pineapple (cubed)
1 cup honeydew melon (cubed)
1/2 cup red grapes (halved)
2 ripe nectarines (pitted and cubed)
1 black or red plum (pitted and cubed)
1/3 cup blueberries
Thinly sliced lemon
Fresh mint

Steps:

  • In a medium bowl, add the yogurt, lemon zest, lemon juice, and poppyseeds. Stir with a whisk to combine.
  • Add the fruit. Toss gently with a spatula to coat the fruit with the yogurt dressing. Pour into your serving bowl and garnish with a couple of lemon slices and a few fresh mint leaves if desired. Serve.

½ cup white sugar
½ cup lemon juice
2 teaspoons diced onion
1 teaspoon Dijon-style prepared mustard
½ teaspoon salt
⅔ cup vegetable oil
1 tablespoon poppy seeds
1 head romaine lettuce, torn into bite-size pieces
4 ounces shredded Swiss cheese
1 cup cashews
¼ cup dried cranberries
1 apple - peeled, cored and diced
1 pear - peeled, cored and sliced

Steps:

  • In a blender or food processor, combine sugar, lemon juice, onion, mustard, and salt. Process until well blended. With machine still running, add oil in a slow, steady stream until mixture is thick and smooth. Add poppy seeds, and process just a few seconds more to mix.
  • In a large serving bowl, toss together the romaine lettuce, shredded Swiss cheese, cashews, dried cranberries, apple, and pear. Pour dressing over salad just before serving, and toss to coat.

An easy way to dress up fruit salad. I've also made fruit kabobs this way, which is pretty to take to parties. I get whatever fruit is in season & on sale! :) This dressing makes more than you need for the salad, but I love it & use it on sandwiches, greens, etc.

8 - cups fresh fruit (approximately)
1/3 - cup white sugar
1/2 - cup vinegar (white wine, apple cider or raspberry)
1 teaspoon(s) salt
1 cup(s) canola oil
1 teaspoon(s) onion
1 tablespoon(s) (heaping) poppyseeds

Steps:

  • Blend the sugar, vinegar, salt & onion. Slowly pour in the oil & blend together. Then add the poppyseeds.
  • Slowly pour over the fruit, stirring gently, until you have the amount of dressing you want. I usually use less than half of the dressing, as it gives it a lovely zing, but not overpowering the natural fruit flavors.
  • Serve & enjoy!
