When our grandkids sleep over, we usually watch a movie; they like seasoned popcorn but we pefer the plain old buttered stuff! Thanx to Martha Stewart, we now spend a little quality time in the kitchen as each child "cooks up" a mix before "show time"! All of the variations can be doubled or tripled, depending on the size of the container you plan to use. The Italian mixture should be kept in the refrigerator, as it contains fresh cheese.

- Preheat the oven to 425 degrees F. Line a baking sheet with foil.
- Toss the cauliflower with the oil and a pinch of salt and pepper. Arrange in a single layer on the prepared baking sheet. Roast, stirring once or twice, until tender and browned in spots, 15 to 30 minutes.
- Toss the roasted cauliflower with the chile-lime seasoning and transfer to a serving bowl.
HOMEMADE CHILI SEASONING POPCORN
Popcorn as good as the theater's, with a kick! Salty, spicy and a little smoky. All you need is a large pot or metal bowl. I use a large 2 gallon metal bowl. Omit the chili powders if you don't like it spicy.

- Heat canola oil in a large pot over medium-high heat; add 1 popcorn kernel to the hot oil. The oil is ready when the kernel pops.
- Pour popcorn kernels into the hot oil; season with half the popcorn salt. Stir to coat. Cover the pot with a sheet of aluminum foil. Poke about 10 holes into the aluminum foil using a knife. Cook popcorn until all the kernels are popped, 5 to 10 minutes. Remove pot from heat; sprinkle popcorn with remaining popcorn salt, garlic powder, onion powder, cayenne pepper, chipotle chile pepper, and ancho chile pepper. Toss to evenly coat.

- Pop Popcorn and place in large bowl.
- Melt around 2-3 tbsp butter. (or soy "butter").
- Mix tabasco sauce in with the butter. (To taste, I like about a teaspoon or two.).
- Mix 1 tsp of paprika, 1 tsp of salt, 1 tsp of garlic powder, and 1 tsp pepper in small cup.
- Pour butter mixture on popcorn about one tablespoon at a time. After you pour the butter mixture on; sprinkle a bit of the seasoning mixture in, and voila!
