These are wonderful to have on hand for game days or when you have unexpected guests. They freeze wonderfully and the recipe is easy to double. If you can't find the Old English, Kahuna sharp cheese spread can be substituted.

8 - english muffins, split and toasted
12 ounce(s) imitation crabmeat, chopped
5 ounce(s) jar kraft old english cheese spread
1 stick(s) salted butter, softened
1 1/2 teaspoon(s) garlic powder
1 teaspoon(s) old bay seasoning
2 tablespoon(s) mayonnaise
1 tablespoon(s) parsley flakes
3 dash(es) frank's red hot, or preferred pepper sauce
2 tablespoon(s) roasted red peppers, finely chopped

Steps:

  • Combine softened butter, cheese spread and mayonnaise until well blended and smooth.
  • Add seasonings,imitation crab and roasted peppers mix well.
  • Spread on toasted muffins and bake in a 350 oven until browned.

This recipe is easy and quick to make, and offers a good taste of the ocean. It is inexpensive to make if using imitation crabmeat.

1 tablespoon vegetable oil
½ cup chopped onions
½ cup chopped celery
1 pound imitation crabmeat
1 (10.5 ounce) can condensed cream of celery soup
½ cup water
2 tablespoons chopped fresh parsley
¼ teaspoon seafood seasoning
¼ teaspoon salt
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
1 cup shredded Cheddar cheese
1 cup dry bread crumbs
¼ cup salted butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat oil in a large saucepan over medium heat; stir in onions and celery. Cook and stir until vegetables have softened and are beginning to turn translucent, about 5 minutes.
  • Add crab, condensed soup, water, parsley, seafood seasoning, salt, garlic powder, and pepper; mix to combine. Heat until almost bubbling, about 5 minutes.
  • Remove from the heat and blend in Cheddar cheese until melted. Transfer to a 9-inch square casserole dish.
  • Mix bread crumbs and melted butter in a small bowl with a fork until combined. Spread over the casserole.
  • Bake in the preheated oven until lightly browned and bubbly, 20 to 30 minutes.

1 lb frozen cod fish fillet, thawed and drained (not breaded)
2/3 cup butter, melted
1 cup crushed herb seasoned stuffing mix
6 ounces frozen crabmeat, thawed drained (pick over well)
4 ounces mushroom stems and pieces, drain
1 egg
2 tablespoons chopped fresh parsley
1/4 teaspoon salt
2 tablespoons lemon juice
1/4 teaspoon hot pepper sauce
1/2 cup crushed herb seasoned stuffing mix
2 tablespoons butter, melted

Steps:

  • Heat oven to 350.
  • In ungreased baking dish, place cod fillets.
  • In medium bowl, mix together all crab mixture ingredients.
  • Sprinkle crab mixture over cod.
  • In same bowl, combine topping ingredients and sprinkle over crab mixture.
  • Bake 30-35 minutes or until heated through and fish flakes with a fork.

I LOVE this recipe; it came from my husband who remembered eating this at a friend's house many years ago and recreated his own version of it until he found perfection. 4 boneless, skinless chicken breast
old bay seasoning
6 to 10 small red potatoes
1 large vidalia or sweet onion
distilled white vinegar
squeezable butter
1/2 corn on the cob (optional)

Steps:

  • 1. Trim up the chicken then cut into medium size chunks
  • 2. Cut out bad spots of potatoes and cut them into medium size chunks. (You may leave the skin on)
  • 3. Chop onion into large chunks.
  • 4. In the bottom of your steamer, put a cup of distilled white vinegar and fill the rest with water.
  • 5. If you are using a double steamer place the chicken seasoned with Old Bay on the bottom. If you put it on the top it will drip onto your veggies. Also you do not need to season with as much Old Bay because some of the top steamer seasoning will drip down it.
  • 6. Place the onion, corn and potatoes on the top steamer. Season with Old Bay and butter.
  • 7. Steam until chicken is done and potatoes are soft. It is usually about an hour.
  • 8. Top off with more butter if desired or serve with melted butter on the side for dipping.

12 oz package imitation crab flakes
1 box seasoned stuffing mix
1 and 2/3 cups water
1/2 stick butter or margarine
1 level teaspoon seafood seasoning
1 tablespoon dry instant potato flakes
1 teaspoon Worcestershire sauce
1 teaspoon Tabasco sauce (more or less to taste)
2 cups plain breadcrumbs
1 jumbo egg
Flour for dusting
Oil for frying

Steps:

  • Combine crab flakes, stuffing mix, water and butter. Cook according to pkg. directions. Be careful, this mixture will be hot.
  • Then add seafood seasoning, instant potato flakes, Worcestershire sauce, and Tabasco sauce. Mix well. Add plain bread crumbs and mix well. Then lightly beat the egg and mix into patty mixture, work fast to avoid the egg from cooking. Shape into 8 nice size patties. Dip in flour.
  • Heat a large frying pan with oil (use enough oil to just cover the patties) cook till golden brown about 5 minutes then carefully turn over to brown the other side. Drain on paper towels. Serve hot with coleslaw and French fries or on a bun with lettuce and tomatoes. Also really good served cold.

Zucchini Cakes

I was looking for another way to use the surplus of zucchini from our garden, when I came across this recipe. I was surprised at how much they actually taste like crab cakes. Even my husband, who doesn't like zucchini, raved about this dish!

2 1/2 cups zucchini (peeled and grated)
1 cup breadcrumbs (seasoned or plain)
1/4 cup yellow onions or 1/4 cup red onion, minced
1/4 teaspoon salt
1/4 cup all-purpose flour
2 tablespoons butter, melted
1 teaspoon Old Bay Seasoning
fresh ground pepper, to taste
canola oil or olive oil, for frying
cayenne pepper (optional, for a little extra spice)

Steps:

  • Spread grated zucchini on a kitchen towel and roll up. Twist towel to wring out as much liquid as possible. If you fail to do this, your cakes will be too wet.
  • In a large bowl, combine zucchini and butter. Stir in bread crumbs, onion, Old Bay, cayenne pepper, salt, and pepper. Mix thoroughly to combine.
  • Coat your hands in oil, and shape mixture into patties. Coat each patty in flour. In skillet, heat oil over medium-high heat until hot. Fry patties until golden brown on both sides. (About 3-5 min per side).
