1/2 cup sliced fresh gingerroot
1 medium lime, sliced
3 cups pomegranate juice
3/4 cup orange juice
3 cups chilled club soda
Optional: Lime wedges, pomegranate seeds and ice

Steps:

  • Place ginger and lime slices in a pitcher; stir in pomegranate and orange juices. Refrigerate overnight. , Just before serving, strain and discard ginger and lime. Stir club soda into juice mixture. Garnish as desired.

1 cup sugar
1/4 cup finely minced peeled ginger
1 bottle (750 ml) cava or other dry sparkling wine
1/2 teaspoon pomegranate molasses

Steps:

  • Combine the sugar, 1 cup water and the ginger in a saucepan over medium-low heat; allow to come to a gentle simmer, stirring until the sugar has completely dissolved.
  • Remove from the heat and let the ginger syrup cool to room temperature. Strain the syrup and discard the ginger.
  • Pop open the bubbly and grab a couple of champagne flutes. Divide the pomegranate molasses between the flutes, then add about 2 tablespoons of the ginger syrup to each. Top with the bubbly. Clink glasses and enjoy! (Store the remaining ginger syrup in the fridge. You can drizzle it into seltzer the rest of the week.)

It is commonly available in Middle Eastern markets, but is easily made at home if you can get pomegranate juice, now easily found in supermarkets.

4 cups pomegranate juice
½ cup white sugar
½ cup lemon juice

Steps:

  • Bring the pomegranate juice, sugar, and lemon juice to a simmer in a saucepan over medium-high heat. Once the sugar has dissolved, reduce the heat to medium-low, and simmer until the juice has reduced to 1 1/2 cups, about 1 hour. Stir the molasses frequently as it thickens to keep it from burning. When the molasses is done, allow it to cool to room temperature, then pour into a glass storage container, and keep in the refrigerator.

1 cup pomegranate juice
3 tablespoons sugar
½ tablespoon lemon juice
sugar, for coating rim
½ tablespoon lemon juice
1 ½ tablespoons pomegranate juice
4 oz sparkling wine, or as needed
1 tablespoon pomegranate seeds
1 sprig fresh rosemary

Steps:

  • Make the pomegranate molasses: In a small saucepan, stir together the pomegranate juice, sugar, and lemon juice. Bring to a simmer over medium heat, then reduce the heat to low and cook for 20-30 minutes, stirring occasionally, until syrupy. Be careful not to burn the syrup. Remove the pot from the heat and let the pomegranate molasses cool completely before using. Any leftovers will keep in an airtight container in the refrigerator for up to 2 weeks.
  • Make the cocktail: Add a few tablespoons of sugar to a small plate. Dip the rim of a champagne glass in the pomegranate molasses, then in the sugar to coat.
  • Add ½ tablespoon of the pomegranate molasses to the bottom of the glass, then pour in the lemon juice and pomegranate juice. Fill the rest of the way with sparkling wine.
  • Float the pomegranate seeds on the top of the cocktail and garnish with the rosemary sprig.
  • Serve immediately.
