3 tbsp pomegranate seeds
big bunch mint
2 limes , quartered, plus slices to garnish
1l pomegranate juice
500ml lemonade

Steps:

  • A day ahead, divide the pomegranate seeds between the holes in an ice cube tray, top up with water and freeze.
  • Reserve half the mint for serving, and tear the rest into a large jug with the lime quarters. Using a rolling pin, bash the mint and lime to release the flavours. Add the pomegranate juice and lemonade. Put ice cubes in each glass, then strain over the pomegranate mix through a small sieve. Garnish with lime slices and more mint.

1 ounce simple syrup
10 -15 mint leaves
club soda

Steps:

  • Muddle 10-15 mint leaves, simple syrup and lime in a tall glass, add Pama.
  • Fill with crushed ice and top with soda.
  • Stir until outside of glass is frosted. Garnish with powdered sugar and dusted mint sprig.

1/8-1/4 fluid ounce simple syrup (splash, equal parts boiling water and sugar(allow to cool before using)
lime wedge
2 fluid ounces pomegranate juice
4 fluid ounces club soda

2 ounces Bacardi Superior rum (can sub any light rum)
1½ tablespoons sugar (or simple syrup)
4 ounces club soda
cracked ice (or cubed)
6 sprigs fresh mint

Steps:

  • In a cocktail shaker, combine all ingredients except the mint, and shake well. Mull the mint in the bottom of a cocktail glass. Strain the pomegranate mixture into the glass with the mulled mint, stir well and serve.

2 ounces white rum
1/2-1 tablespoon vanilla sugar (recipe follows)
4 ounces club soda
cracked ice
6 sprigs of fresh mint
1 vanilla bean, split in 1/2 lengthwise and crosswise
4 cups granulated sugar

Steps:

  • Rim cocktail glass with vanilla Sugar.
  • Combine all ingredients except mint in a cocktail shaker and shake well. Muddle the mint in the bottom of a cocktail glass. Add Ice, optional. Strain mixture into the glass with the mulled mint, and serve.
  • In a large container or glass jar with an airtight lid, pour 1/2 of the sugar. Add bean quarters and cover with remaining sugar. Seal and place in a cool, dark place. Two or more times a day, shake the container to distribute the vanilla essence. Shake daily for at least 1 week and up to 3 weeks. Replenish the sugar as it is used.

1 c sugar
1 c hot water
Several sprigs Mint
2 oz Pama Liquor
2 oz Bacardi Rum
4 oz Pomegranate Juice
Juice of 1 lime
Sparkling Water

Steps:

  • Strip Mint leaves from sprigs. Place in a container, add 1 c sugar. Muddle mint and sugar together well. Fill 2 glasses 3/4 w/ ice. Retrieve mint leaves from sugar and split into 2 glasses. Add 1 cup hot water to sugar and stir to dissolve. To each glass add: 1 oz Pama Liquor, 1 oz Bacardi Rum, 2 oz Pomegranate Juice, juice of 1/2 lime. Add some of the simple syrup to each glass (about 1/4 of volume in each glass). Stir. Taste, if desired add more of the simple syrup to desired sweetness. Devoir!
