1 shallot, minced

1 large fresh fennel bulb, trimmed, halved, very thinly sliced
1 8-ounce Fuji apple, halved, cored, cut into matchstick-size strips
6 cups trimmed arugula leaves (from two 4-ounce packages)
2 mandarin oranges or tangerines, peeled, each cut crosswise into 3 slices

Steps:

  • Whisk first 4 ingredients in small bowl. Season dressing with salt and pepper. Combine fennel and apple in medium bowl; mix in 3 tablespoons dressing.
  • Place arugula in large bowl. Add fennel-apple mixture. Toss, adding more dressing to taste. Divide salad among 6 plates. Garnish each with 1 mandarin orange slice and sprinkle with pomegranate seeds.

Steps:

  • Vinaigrette Dressing:.
  • In a small bowl combine the shallot, pomegranate molasses, vinegar, salt and pepper and whisk until the salt is dissolved.
  • Whisk in the olive oil and let vinaigrette stand at room temperature until salad is assembled.
  • Salad:.
  • Combine the arugula, romaine, pears and half of the pomegranate seeds in a large bowl.
  • Crumble half of the goat cheese over the ingredients in the bowl (this works best if the cheese is very cold).
  • Whisk the vinaigrette until uniform and add all but 2 tablespoons of it to the bowl.
  • Gently toss the salad with your hands or salad tongs, coating the ingredients well with the vinaigrette. If the salad seems dry, add the vinaigrette in small increments until it is dressed to your liking.
  • Crumble the remaining cheese over the salad and sprinkle the remaining pomegranate seeds and the pistachios over the top. Serve immediately.

1 tablespoon pomegranate molasses

Steps:

1 tablespoon balsamic vinegar (I tend to use cherry balsamic)

1/8 teaspoon nutmeg
4 tablespoons olive oil
1/2 tablespoon honey

7 ounces arugula (may use half romaine and half arugula)

3 clementines, peeled and cut into segments
1 ruby red grapefruit, peeled and cut into segments
Salt
Pinch crushed red pepper
8 large dry diver sea scallops
Extra-virgin olive oil
2 cloves garlic, smashed
2 cups baby arugula
1/2 small red onion, finely julienned
1/2 cup pomegranate seeds

Steps:

  • Combine all the citrus in a medium bowl with a pinch of salt and crushed red pepper and reserve.
  • Season the scallops with salt. Coat a large saute pan with olive oil. When the oil is hot but not smoking add the smashed garlic cloves. When the garlic has become golden and very aromatic remove it from the pan and discard it. Next, gently lay the scallops in the pan and cook for 2 to 3 minutes on each side. If the pan begins to smoke reduce the heat of the burner. The scallops should look beautifully caramelized on each side.
  • While the scallops are cooking, dress the arugula in a small bowl with some of the juice from the reserved citrus and also high-quality extra-virgin olive oil and some salt. Arrange the arugula on individual serving plates. Toss the onion in with the citrus and give it a sprinkle of olive oil. Lay the citrus on the arugula.
  • Cut the scallops in half equatorially and place them overlapping in a line against the citrus. Sprinkle with pomegranate seeds and give another little drizzle of olive oil.

4 large handfuls arugula leaves
1 small red onion, thinly sliced

Steps:

  • Preheat the oven to 400°F.
  • Peel and cut the eggplants into thick rounds of about 1 inch thick, brush both sides with oil, sprinkle with sea salt and place on a shallow baking sheet. Place in the oven to roast until golden and cooked through, about 15 minutes. Remove, cool completely and slice each round in half. Set aside.
  • Using a mortar and pestle, crush the fennel seeds and garlic to make a paste. Add the balsamic vinegar, honey, lemon juice, Dijon mustard, pomegranate molasses and olive oil. Whisk together to emulsify the dressing. Set aside.
  • In a shallow serving platter lay the arugula leaves. Sprinkle the onion, tomatoes, salt and pepper on top. Toss to combine. Scatter the eggplant slices on the salad.
  • Drizzle some dressing all over. Garnish with pine nuts and pomegranate seeds. Serve immediately, with crusty olive bread and olives on the side.

4 breakfast radishes, tender tops reserved if available
1/2 small head cauliflower or 1/4 large head
1 pomegranate
1 lemon, zested and juiced
Kosher salt and freshly ground black pepper
1/2 teaspoon granulated sugar
1/2 cup extra-virgin olive oil
8 ounces baby arugula
1/2 cup shaved Parmesan (shaved with a vegetable peeler)

Steps:

  • Thinly slice the radishes and florets of cauliflower on a mandoline or with a vegetable peeler. Cover with a damp towel and reserve. Wash and dry the radish tops if using.
  • Cut the pomegranate in half. Save one half for another use. Cup the pomegranate half in your hand, hold over a large bowl and beat it with the back of a spoon to expel the seeds. The bowl should catch the seeds and any juice.
  • Add the lemon zest and juice, 1 teaspoon kosher salt and sugar to the bowl and whisk in the olive oil.
  • When ready to serve, add the arugula (and radish tops if using) to the bowl with the dressing and toss gently to combine. Season to taste with salt and pepper. Add the shaved radishes and cauliflower and gently mix. Scatter the cheese over the top of the salad and serve immediately.

1 tablespoon sherry vinegar

Steps:

  • Preheat oven to 375 degrees. Spread hazelnuts on a baking sheet; toast, stirring once, until fragrant and lightly browned, 8 to 10 minutes. Let cool; coarsely chop nuts, and toss with 1 teaspoon hazelnut oil and salt.
  • In a small bowl, combine chopped shallots, pomegranate juice, sherry and rice vinegars, and salt; let stand 5 minutes. Whisk in olive oil and remaining 1 tablespoon hazelnut oil.

anjou pear, halved and sliced
pomegranate, seeds removed
3/4 c red wine vinegar
1/2 c olive oil
2 tsp chopped shallots
1 tsp dried oregano
1 tsp salt
fresh cracked pepper

Steps:

  • 1. I definitely recommend making the vinaigrette a day or two before, it allows the flavors to really meld. I love making vinaigrettes in mason jars or the like, its just really easy. So go head and pour in the red wine vinegar, olive oil, chopped shallot, dried oregano, salt and a little pepper. Refrigerate.
  • 2. To plate I used a shallow bowl, piled on a few big handfuls of the baby arugula, half a pears worth for each plate and a good sprinkling of the pomegranate seeds. Are the colors gorgeous together or what?!?!
  • 3. Give the vinaigrette a good shaking to combine everything before serving and drizzle just a bit over top. Finish with fresh cracked pepper.

3 tablespoons extra-virgin olive oil
2 small Fuyu persimmons, thinly sliced
1/2 lemon, for juicing
1/2 pound arugula
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375°F.
  • Spread the hazelnuts on a baking sheet, and toast 8 to 10 minutes, stirring once or twice, until they smell nutty and are lightly browned. When the nuts have cooled, chop them coarsely and toss them with 1 teaspoon hazelnut oil and a generous pinch of salt.
  • Place the diced shallot, pomegranate juice, both vinegars, and 1/2 teaspoon salt in a bowl, and let sit 5 minutes. Whisk in the olive oil and the remaining 1 tablespoon hazelnut oil. Taste for balance and seasoning.
  • In a large salad bowl, toss the persimmons, sliced shallots, and pomegranate seeds with the dressing, and season with salt, pepper, and a squeeze of lemon. Gently toss in the arugula and taste for seasoning. Arrange the salad on a platter, and scatter the hazelnuts over the top.

• 1 tablespoon sherry vinegar
• 2 teaspoons rice vinegar

2 Tbls. fresh lime juice
2 tbls. fresh pomegrenate
juice
1 tea. sugar
3/4 tea. ground cumin
1 small garlic clove, minced
1 tea. olive oil
2 cups arugula leaves
1 1/2 cups (3-inch) julienne
cut peeled jicama
1/2 cup vertically sliced
red onion
1/2 cup diced peeled avocado
2 tbls. chopped fresh
cilantro
1/4 cup fresh pomegranate
seeds
4 tea. pine nuts, toasted

Steps:

  • - Combine first 6 ingredients in a large bowl. Add olive oil, and stir with a whisk. Add arugula and the next 4 ingredients (through cilantro), and toss gently. Place 1 cup salad on each of 4 salad plates. top each with 1 tablespoon seeds and 1 teaspoon pine nuts. - Serve immediately. - Yield: 4 servings
