150ml amaretto
50ml pomegranate cordial or 100ml juice
2 dashes of angostura bitters
120ml lemon juice (about 3-4 lemons)
1 egg white
ice
pomegranate seeds, to serve

Steps:

  • Chill four cocktail glasses one hour ahead of time. Tip all the ingredients except the ice and pomegranate seeds into a cocktail shaker and shake for at least a minute. Add some ice and shake for another 10 seconds. Strain into your glasses, spooning some of the foam on top and finish with some pomegranate seeds.
