This recipe is from A Texas Hill Country Cookbook. It's so much more flavorful than plain old chicken and rice and gets a little crispy on top which I love. I use skinless boneless chicken breasts.

6 chicken breasts, skinned
salt, for dredging
pepper, for dredging
flour, for dredging
1/2 cup butter or 1/2 cup margarine
1 cup chopped onion
2 cloves garlic, crushed
1/2 cup diced green pepper
1/3 cup pimentos
1 1/2 cups uncooked long grain rice
2 cups chicken broth
1/4 teaspoon chili powder
1 teaspoon cumin seed
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Roll chicken in seasoned flour.
  • Brown in skillet with butter.
  • Preheat oven to 350.
  • Remove chicken and saute onions, garlic and green pepper.
  • Add pimento and uncooked rice.
  • Stir over heat 2 minutes.
  • Add chicken broth, chili powder, comino seed, salt and pepper.
  • Put rice mixture into greased casserole dish and arrange chicken breasts over top.
  • Bake uncovered for 1 1/2 hours.

I've made this several times and had people rave about the chicken, we love it and I have had the book it came from for many years. Elena's secrets of Mexican cooking by Elena Zelayeta get it if you can find it!

6-8 chicken thighs, chicken breasts, legs
oil about 1c in skillet
flour enough to dredge chicken in, seasoned with salt, pepper and paprika
4-6 slice bacon cur in small pieces
3-4 slice sliced carrots
1 can(s) peeled green chiles, cut in strips
1 small bay leaf
1 small sprig of thyme
2 lemons thinly sliced
2 1/2 c v8 juice

Steps:

  • 1. Dredge each piece of chicken thoroughly with seasoned flour, fry in hot oil until golden.
  • 2. Remove chicken to large casserole or baking dish. Add bacon, carrots, bay leaf, chiles, thyme and any left over seasoned flour.
  • 3. Place lemon slices on top of chicken and pour V8 over everything. Cover casserole and bake at 350 for 1 hour. Will freeze well. I serve with steamed rice.

oh soooo yummmeeee, I've made this for friends and family, it always disappears! This recipe comes from the book Elena's secrets of Mexican cooking, there are some great recipes in it. This is pretty quick and easy to do, I've added my own touches but will place her recipe with my touches last. Hope you enjoy this, we do!!

6 -8 pieces frying chicken
1 1/2 cups flour
1 teaspoon salt
1 teaspoon pepper
4 slices bacon, cut in small pieces
2 -3 carrots, sliced
1 (8 ounce) can peeled green chilies, cut in strips
1 tablespoon finely chopped parsley
1 bay leaf
1 sprig thyme
1 lemon, thinly sliced
2 cups tomato juice

Steps:

  • Dredge each piece of chicken thoroughly with seasoned flour. Fry in hot oil until golden brown. Remove browned chicken to a large baking dish (8x12). Add bacon, carrots, chiles, parsley, bay leaf, thyme, and any remaining seasoned flour. Place lemon slices on top of chicken and pour tomato juice over all. Cover and bake in preheated 350 degree oven til chicken is tender, about an hour. Will freeze ok.
  • I have changed the tomato juice to V-8 and add lots more bacon, and about 5 carrots. The lemon slices are very good to eat along with the chicken, so I add 2 lemons.
  • We serve this with steamed rice, yummilicious!

This is the authentic way to make Pollo Fricassee in Puerto Rico. You can either make in on the stove or in your slow cooker. It is delicious and very easy to make! Serve with white rice, tostones, and a nice salad. This tastes even better when you prepare the night before; just take it out of the refrigerator the next morning set it to cook.

1 pound chicken drumsticks
1 tablespoon adobo seasoning
½ (.18 ounce) packet sazon seasoning
½ teaspoon salt
5 large red potatoes, peeled and thickly sliced
1 large red bell pepper, seeded and chopped
1 large green bell pepper, seeded and chopped
1 large onion, chopped
5 cloves garlic, minced
1 bunch fresh cilantro, chopped
2 tablespoons olive oil
½ cup dry red wine
1 teaspoon ground cumin
1 teaspoon dried oregano
2 fresh or dried bay leaves

Steps:

  • Wash the chicken and pat dry; place into a large bowl. Season with adobo seasoning, sazon seasoning, and salt. Place the legs into a slow cooker, and cover with the potato slices.
  • Puree the red pepper, green pepper, onion, garlic, cilantro, olive oil, wine, cumin, and oregano in a blender. Pour over the chicken and add the bay leaves.
  • Cook on Low for 6 to 8 hours, until the chicken is easily removed from the bone.
