CHICKEN AGUASCALIENTES

A great country style chicken with its origins based in Mexico. Pan fried potatoes the perfect side for sopping up the pan sauce that comes from the chicken and tomatoes. This is a favorite in our household. We serve with shredded lettuce, jalapenos and fried potatoes. (The ingredients in country recipes tend to be rough chopped)

3 lbs chicken, bone in and cut up
salt and pepper
2 tablespoons oil
1 onion, thinly sliced
1 garlic clove, minced
3 medium fresh tomatoes, peeled, seeded, and rough chopped (Caned tomatoes do not work well with this recipe)
1 tablespoon lemon juice
1 teaspoon sugar
1 teaspoon salt
1 teaspoon oregano, dried, crushed
1/8 teaspoon cinnamon, ground
1/8 teaspoon clove, ground
2 teaspoons cornstarch

Steps:

  • Sprinkle chicken with salt and pepper.
  • In 12 inch skillet brown chicken in cooking oil about 15 minutes.
  • Add onion and garlic; cook 5 minutes more.
  • Add tomatoes, lemon juice, sugar, salt, oregano, cinnamon, cloves, and 1/2 cup water. Cover; simmer 30 to 35 minutes or till chicken is tender.
  • Remove chicken to platter, keep warm.
  • Measure pan juices; add water to make 2 cups. Return to skillet.
  • Combine cornstarch and 2 tablespoons cold water; add to skillet. Cook and stir till thickened and bubbly.
  • Spoon some sauce over chicken; pass remainding sauce.

1 21/2 lb chicken cut up
2 Tbsp cooking oil
1 small onion thinly, sliced
1 clove garlic, minced
3 medium tomatoes, peeled, chopped
1 Tbsp lemon juice
1 tsp sugar
1 tsp salt
1 tsp dried oregano
1/8 tsp ground cinnamon
1/8 tsp crushed cloves

Steps:

  • 1. Sprinkle chicken with salt and pepper. In 12-inch skillet brown chicken in cooking oil about 5 minutes. Add onion and garlic. Cook 5 minutes more.
  • 2. Combine remaining ingredients in mixing bowl.
  • 3. Place chicken, onion and garlic in bottom of crock-pot. Top with tomato mixture. Cook on high for 4 hours.
  • 4. Serve with corn tortillas, sour cream and sliced avocados.

Tangy, flavor-packed chicken in a rich cream sauce. Great with farfalle (bow tie) pasta (though I like to serve it with the unlikely partner of a hearty brown rice because I'm a rice nut). Killer Artichokes (from this site) and a glass of chardonnay make outstanding partners.

2 tablespoons olive oil
12 chicken tenders, sliced into strips
3 cloves garlic, minced
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon Italian seasoning
¼ cup sun-dried tomatoes packed in oil, drained and chopped
2 tablespoons sliced green olives
½ cup dry white wine
2 tablespoons chopped fresh parsley
½ cup sour cream
1 cup milk
½ teaspoon salt
1 ½ teaspoons cornstarch
¼ cup water

Steps:

  • Heat olive oil in a skillet over medium-high heat. Place chicken and garlic in the pan. Season with 1/2 teaspoon of salt, pepper, and Italian seasoning. Stir in the tomatoes, olives, wine, and parsley. Reduce heat to low and continue cooking until the chicken is no longer pink in the center. Remove chicken and place on a plate, leaving the sauce in the pan. Stir sour cream, milk, and 1/2 teaspoon of salt into the remaining sauce.
  • Whisk cornstarch and water together in a small bowl. Increase heat to medium and whisk in the cornstarch mixture. Continue stirring until the sauce has thickened. Serve the sauce with the chicken.

A delicious and easy Spanish chicken stew, or pollo guisado. Great for entertaining and makes for great leftovers. Serve over white rice.

Number Of Ingredients 14

2 tablespoons olive oil
1 whole chicken, cut up
salt and ground black pepper to taste
1 medium onion, chopped
4 cloves garlic, minced
½ cup sofrito
2 potatoes, peeled and cubed
2 cups chicken broth
1 (8 ounce) can tomato sauce
1 (1.41 ounce) package sazon seasoning
½ teaspoon ground cumin
1 bay leaf
2 tablespoons cold water
1 tablespoon cornstarch

Steps:

  • Heat olive oil over medium-high heat in a Dutch oven. Season chicken with salt and pepper and add to the hot pot to brown, 6 to 7 minutes per side. Transfer chicken a bowl and cover with an aluminum foil tent.
  • Reduce heat to medium; add onion to the pot and saute until translucent, about 5 minutes. Add garlic and cook for 1 minute. Stir in sofrito and cook for 2 to 3 minutes. Add potatoes, chicken broth, tomato sauce, sazon, cumin, and bay leaf; bring to a boil. Return chicken to the pot. Cover and cook for 1 hour. Remove chicken.
  • Mix water and cornstarch together in a small bowl; stir into simmering mixture until nicely thickened. Place chicken back into the pot and continue to cook about 10 minutes more.
