This low-fat, simple dessert combines tender fruit and fragrant syrup

50g golden caster sugar
400g ripe apricot , halved and stoned
few drops rosewater
Greek yogurt , to serve
handful pistachios , roughly chopped, to serve

Steps:

  • Put the sugar into a medium pan with 150ml water. Heat gently until the sugar dissolves, then add the apricots and simmer for 15 mins until soft. Take off the heat, splash in the rosewater and leave to cool. Spoon into glasses to serve, topped with a few dollops of the yogurt and a scattering of nuts.

SHARK BITE ICE CREAM SUNDAES



Shark Bite Ice Cream Sundaes image

Show sharks who's boss -- take a bite out of these ice cream treats.

1/4 cup marshmallow creme, such as Fluff
4 sugar ice cream cones
Confectioners' sugar, for dusting
One 1-ounce piece red fruit leather
8 semisweet chocolate chips
1 stroopwafel sandwich cookie
1 pint vanilla ice cream
1/2 cup blue sprinkles

Steps:

  • Line a baking sheet with parchment.
  • For the shark body: Microwave the marshmallow creme in a medium microwave-safe bowl, stopping to stir halfway through, until soft and spreadable, about 30 seconds.
  • Starting at the open end of a cone, use a pastry brush to paint the marshmallow creme in an arch-shape about halfway up the cone and a third of the way around (this will be the white part of the shark's body). Let the marshmallow creme dry until slightly less sticky, about 5 minutes. Generously dust the arch with confectioners' sugar to coat, tapping off any excess. Repeat with the remaining cones. Set the cones open-ends down on the prepared baking sheet and let dry until that marshmallow creme has set, about 5 minutes.
  • For the shark mouth and teeth: Unroll the fruit leather and use kitchen shears to cut out four 1-by-1 1/4-inch arch-shaped pieces; cut jagged teeth around the top and bottom of each piece.
  • Stick a fruit leather mouth, arch-up, onto the marshmallow creme part of the shark's body; the flat side of the mouth should hit just above the rim of the cone. Use a toothpick to push the leather into the creme, creating the effect of puffy white teeth around the red mouth. (Make sure any excess sugar has been wiped from the fluff to help the mouth adhere.)
  • For the shark eyes: Dip the flat ends of the chocolate chips in the remaining fluff. Stick 1 chip on either side of the marshmallow creme part of the shark's body for the eyes. Repeat with the remaining chips and cones.
  • For the shark fins: Make side fins by cutting 8 thin 1 1/2-inch-long triangles from the cookie. Cut four 1-inch-wide-by-1 1/4-inch-tall triangular back fins from the remaining cookie; make one side of each triangle rounded with a pointed tip, like a shark fin.
  • Place a heaping scoop of ice cream in a bowl. Top with an upside-down ice cream cone. Spoon 2 tablespoons of the sprinkles around the ice cream for water. Stick the back fin into the ice cream so it touches the back of the shark cone. Stick a side fin on either side of the cone below the shark's eyes. Repeat with the remaining cones, fins, sprinkles and ice cream.

BACON-WRAPPED DRIED APRICOTS



Bacon-Wrapped Dried Apricots image

12 large dried apricots
12 smoked almonds
4 slices bacon, cut crosswise into thirds
1/2 tablespoon maple syrup
1 teaspoon red wine vinegar
Freshly ground black pepper
1 teaspoon chopped chives, for garnish

Steps:

  • Gently separate the two sides of each apricot and stuff with the almonds. Wrap each with a segment of the bacon. Arrange in a small nonstick skillet seam-side down. Cook on medium heat until the undersides are well-browned and crisp, 6 to 7 minutes.
  • Turn the apricots over and continue to cook until browned on the bottom, 2 to 3 minutes more. Add the maple syrup, vinegar and a few grinds of pepper and cook, shaking the skillet to coat, until the liquid has reduced and the apricots are glossy and browned all over, about 1 minute more. Transfer to a small plate and sprinkle with the chives. Serve warm or at room temperature.

3 teaspoons unflavored gelatin
4 cups heavy cream
1 cup sugar
1/2 vanilla bean, split lengthwise and scraped
16 Poached Apricot Halves

Steps:

  • Prepare an ice bath; set aside. Place 3 tablespoons cold water in a large bowl, and sprinkle with gelatin. Let stand until gelatin has softened, about 5 minutes.
  • Combine the cream and sugar in a medium saucepan over medium-high heat. Add vanilla bean and scrapings. Gently simmer mixture until bubbles form around sides of pan, about 5 minutes. Remove from heat, and let cool slightly. Discard vanilla pod.
  • Pour hot cream mixture into gelatin mixture, and whisk until combined. Set bowl in the ice bath. Let cool completely, stirring frequently. Strain the mixture through a fine sieve into a medium bowl. Divide among eight custard cups. Cover tightly with plastic wrap, and chill until set, at least 4 hours or overnight.
  • To serve, remove the custard from refrigerator, uncover, and top each portion with two poached apricot halves.

POACHED APRICOT HALVES

Poaching apricots takes little time. If you continue to simmer apricots in their poaching liquid, you'll have the start of a very easy jam; it will set without additives because of the fruit's natural pectin. Use this recipe to fill hand pies, top cheesecake, or amp up panna cotta.

1 1/2 cups sugar
3 strips (about 2 inches long) fresh lemon peel, pith removed
2 thin slices fresh ginger
7 cardamom pods, cracked
1 vanilla bean, split lengthwise and scraped
12 small ripe apricots, halved and pitted (about 1 1/2 pounds)

Steps:

  • In a 4-to-5-quart pot over medium heat, combine 4 cups water with sugar, lemon peel, ginger, cardamom, and vanilla scrapings. Bring mixture to a boil. Cook until sugar dissolves, and then reduce the heat to low. Simmer, uncovered, until the liquid has thickened slightly, about 10 minutes.
  • Add apricots to pan. Rinse a double thickness of cheesecloth under cold water, and drape it over apricots so all the fruit is covered by the cloth and submerged in liquid.
  • Continue simmering until apricots soften slightly, 2 to 4 minutes. Remove from heat, and let cool completely. Use immediately, or transfer apricots and poaching liquid to a storage container. Make sure the apricots are completely submerged in liquid. Refrigerate until ready to use, up to 4 days.

1 can (15 ounces) reduced-sugar apricot halves
1/3 cup plus 2 tablespoons orange juice, divided
1 teaspoon brown sugar
1-1/2 teaspoons cornstarch
1 teaspoon vanilla extract
2 cups fat-free sugar-free frozen vanilla yogurt

Steps:

  • Drain apricots, reserving juice. Slice apricots; set aside. In a saucepan, combine 1/3 cup orange juice, brown sugar and reserved apricot juice; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Combine cornstarch and remaining orange juice until smooth; stir into apricot juice mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in vanilla and reserved apricots. Serve over frozen yogurt.

1/2 pound of dried apricots
1/4 cup sugar
3 cardamom pods, crushed and seeded
1 teaspoon fresh lemon juice
1/2 cup drained yogurt
1/2 cup ricotta
3 tablespoons unsalted pistachio nuts, peeled and chopped

Steps:

  • Wash and then soak the dried apricots in 2 cups of water overnight.
  • Pre-heat the oven to 300 degrees.
  • Drain the apricots over a bowl. Transfer the liquid to a saucepan and add the sugar, cardamom pods, and lemon juice. Bring to a boil and add the apricots. Cover the apricots with a small sheet of parchment paper. Cover the pan and poach the apricots in a 300-degree oven for 1 1/2 hours. Then let the apricots cool in their liquid; then chill.
  • Just before serving, lift out the apricots to drain. Mix the yogurt and ricotta together, open each apricot and stuff it with the yogurt mixture. Place the stuffed apricots on a serving plate, spoon over a little syrup. Garnish with pistachios. Recommended drink: Camomile Tea, infused with cardamom, cinnamon and clove

1 1/4 pounds firm-ripe fresh apricots, halved lengthwise and pitted
For zabaglione
3 large egg yolks
1/3 cup sugar
2 tablespoons dry white wine (preferably Swiss)

Steps:

  • Poach apricots:
  • Scrape seeds from vanilla bean into a 2-quart saucepan, then add pod, water, sugar, zest, and salt. Bring to a boil, uncovered, over high heat, then boil 1 minute.
  • Carefully add apricots, then reduce heat and poach at a bare simmer, turning over once, until fruit is tender but still holds its shape and skins are still intact, 2 to 6 minutes. Transfer apricots and syrup to a large shallow bowl and cool to room temperature, about 1 1/2 hours.
  • Make zabaglione:
  • Beat together yolks, sugar, and wine in a deep 4-quart metal bowl with a handheld electric mixer at medium speed or whisk vigorously until combined well.
  • Set bowl over a 4-quart pot of barely simmering water and beat mixture until tripled in volume, 5 to 6 minutes.
  • To serve:
  • Spoon 2 or 3 apricot halves into each of 6 glasses and top with zabaglione. Serve immediately.

SIMPLE POACHED APRICOTS

1/4 cup plus 1 tablespoon agave nectar (more if desired)
4 strips organic orange peel, each about 3 inches long
6 medium-ripe apricots (about 1 pound), pitted and cut into sixths or quarters

Steps:

  • Bring water, agave nectar, and orange peel to a brisk simmer in a medium saucepan over high heat. Add apricots, pushing down to cover with liquid; reduce to a gentle simmer. Cook until apricots are just tender, 2 to 5 minutes, depending on ripeness.
  • Transfer apricots gently with a slotted spoon to a shallow bowl or dish. Pour just enough liquid over them to cover and return saucepan with remaining liquid to stove. Simmer over medium-high until reduced by half and lightly syrupy, about 10 minutes.
  • Strain syrup into dish with apricots. Refrigerate at least 1 hour and serve.

  • Transfer apricots with a slotted spoon to a bowl and boil syrup until reduced to about 1/2 cup. Pour syrup over apricots and chill 25 minutes.
