This is a Filipino dessert that has been my favorite since I was a child. Crispy, sugary shells with soft and warm plantains inside. They are a breeze to make when you have everything set up in advance. They can be frozen in bulk and fried without any defrosting.

1 cup white sugar
¼ cup water
20 spring roll wrappers
5 plantains, peeled and quartered
⅓ cup brown sugar
1 ½ cups vegetable oil

Steps:

  • Put sugar and water in separate bowls. Separate spring roll wrappers; stack. Peel plantains; cut in half and then half again lengthwise.
  • Place 1 wrapper on a clean work surface with 1 corner facing you. Coat 1 plantain piece in sugar; place 1 inch from the near corner of the wrapper. Fold corner over the plantain; roll up halfway. Fold in 2 side corners; continue rolling until near the top. Moisten top corner with wet fingers; finish rolling. Repeat with remaining wrappers.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Place egg rolls in a single layer; fry until golden brown on the bottom, 2 to 3 minutes. Flip; sprinkle with brown sugar. Fry 2 to 3 minutes more. Transfer egg rolls to a plate.

Turon is a fried banana roll that is a popular snack or dessert in the Philippines. It can be enjoyed year-round and is served hot, so it pairs well with ice cream!

canola oil, for frying
1 ripe plantain
1 cup brown sugar, plus more for serving
square spring roll wrapper, thawed
1 canned jackfruit, drained and sliced (optional)
beaten egg white or water, for sealing
ice cream, for serving (optional)

Steps:

  • Fill a medium pot halfway with canola oil. Heat over medium heat until the temperature reaches 375°F (190°C).
  • Peel the plantain and cut lengthwise into 3 pieces.
  • Dip the plantain pieces in the brown sugar to coat evenly on all sides.
  • Set a spring roll wrapper on a clean surface in a diamond orientation. Place a plantain strip horizontally across the center of the wrapper and top with a few slices of jackfruit, if using. Fold the bottom corner of the wrapper up and over the plantain, then fold in the sides. Brush the exposed edge with egg white, then roll to seal. Repeat with the remaining wrappers and plantains.
  • Add the wrapped plantains to the hot oil and fry, flipping once, until the wrappers turn golden brown, 1-2 minutes total.
  • Serve the turon hot with more brown sugar sprinkled on top and/or a scoop of ice cream, if desired.
