1 loaf (1 pound) frozen pizza dough, thawed
20 slices pepperoni
8 ounces part-skim mozzarella cheese, cut into 20 cubes
1/4 cup butter
2 small garlic cloves, minced
Dash salt
Marinara sauce, warmed
Optional: Crushed red pepper flakes and grated Parmesan cheese

Steps:

  • Preheat oven to 400°. Shape dough into 1-1/2-in. balls; flatten into 1/8-in. thick circles. Place 1 pepperoni slice and 1 cheese cube in center of each circle; wrap dough around pepperoni and cheese. Pinch edges to seal; shape into a ball. Repeat with remaining dough, cheese and pepperoni. Place seam side down on greased baking sheets; bake until light golden brown, 10-15 minutes. Cool slightly., Meanwhile, in a small saucepan, melt butter over low heat. Add garlic and salt, taking care not to brown butter or garlic; brush over puffs. Serve with marinara sauce; if desired, sprinkle with red pepper flakes and Parmesan., Freeze option: Cover and freeze unbaked pizza puffs on waxed paper-lined baking sheets until firm. Transfer to a freezer container; seal and return to freezer. To use, preheat oven to 325°; bake pizza puffs on greased baking sheets as directed, increasing time as necessary to heat through.

1 (10 ounce) can refrigerated biscuit dough (such as Pillsbury Grands!®)
1 pinch garlic salt, or to taste
16 slices pepperoni
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Separate biscuits and place on a work surface. Roll biscuits to double their original diameter using a rolling pin. Sprinkle garlic salt over each biscuit and top with 2 pieces pepperoni. Generously sprinkle mozzarella cheese over pepperoni layer, reserving about 2 tablespoons cheese. Fold the edges of each roll over the toppings, pinching the edges together to seal shut. Arrange biscuits on a baking sheet. Sprinkle reserved mozzarella cheese over each biscuit.
  • Bake in the preheated oven until cheese is melted and biscuits are lightly browned, about 12 minutes.

3/4 teaspoon baking powder
1 tablespoon italian seasoning
1/4 teaspoon salt
3/4 cup whole milk

1 cup pepperoni
1/2 cup pizza sauce (to serve with Pizza Puffs)

Steps:

  • Preheat the oven to 375.
  • Grease 24-cup mini-muffin pan.
  • In a large bowl, whisk together flour, baking powder, Italian seasoning, and salt.
  • Whisk in the milk and egg.
  • Stack slices of pepperoni and cut into small pieces.

PEPPERONI PIZZA PUFFS

Pizza seems like a great party food, but it can be a little messy and also gets cold fast. One year, for a birthday party for one of the cousins, my brother-in-law Joey, who's always been a creative problem solver, had the idea to make pizza puffs, putting the filling inside the dough, in a sort of mini-calzone. As with pizza, you can change the filling, replacing the pepperoni with sausage or vegetables, such as sauteed mushrooms.

Number Of Ingredients 6

One 16-ounce ball frozen pizza dough (see Chef's Note), thawed in the refrigerator for 6 hours, then left out to rise in oiled bowl, covered with plastic wrap, at room temperature for 2 hours
All-purpose flour, for dusting
1/2 cup shredded or fresh sliced mozzarella
24 thin slices pepperoni
1 jarred red pepper, drained and cut into 1 1/2-inch strips
About 2 tablespoons olive oil

Steps:

  • Position a rack in the center of the oven and preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil.
  • Cut the dough into 8 equal pieces. Using floured hands if needed, carefully stretch each piece into a thin disk (the shape doesn't have to be perfect) about 5 inches in diameter.
  • Transfer the dough balls to the prepared baking sheet and fill each with 1/2 tablespoon mozzarella on one half, leaving a 1-inch border around the edge. Line the cheese with 3 slices pepperoni, and a strip of red pepper. Starting from the smaller border, stretch the dough over the filling, then continue rolling the dough (like you would roll a carpet) to wrap the filling twice. Place on a foil-lined baking sheet, seam-side down. Pinch any holes with your fingers to patch.
  • Brush the dough with a very light coating of olive oil. Bake until golden-brown, 15 to 17 minutes, then remove from the oven and let rest for 5 minutes before serving.

1/2 tsp dried oregano
1 large egg, lightly beaten

2 Tbsp fresh basil, finely diced

  • 1. Preheat oven to 375^. Grease a 24 cup mini-muffin pan. In a large bowl, whisk together Bisquick and oregano; whisk in the milk and egg. Stir in the mozzarella and pepperoni; let stand for 10 minutes. Stir the batter and divide among the muffin cups. Bake until puffed and golden, 20-25 minutes. 12 ounces puff pastry
1 egg yolk
1/2 cup grated mozzarella cheese
8 slices bacon, cooked until just crisped, plus 4 slices fully crisped and chopped
3 -4 medium heirloom tomatoes, (res, orange and yellow), sliced into 3/4-inch rounds, plus 1 chopped
2 cups shredded romaine lettuce
1/3 cup ranch dressing
2 tablespoons chopped chives
kosher salt
ground black pepper

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper; set aside.
  • Unroll puff pastry dough and cut into 8 equal rectangles. Transfer the rectangles to the prepared baking sheet. Beat the egg yolk with 2 teaspoons water. Use a pastry brush and brush the edges of the rectangles with the egg wash. Fill the center with 1-2 tablespoons shredded cheese, then top with a slice of bacon on the diagonal. Top the bacon with another tablespoon of cheese, then a slice of tomato. Season with salt and pepper.
  • Fold in 2 corners of the rectangles towards the center. The corners should not touch, but should cover a bit of the tomato. Brush the folded corners with egg wash then transfer the baking sheet to the refrigerator to chill for 15 minutes.
  • Bake the puffs until golden and cheese is melted, about 15-20 minutes. To serve, top with shredded lettuce, chopped tomato, chopped bacon and a drizzle of ranch dressing.

I made this one up and tried it at one of our parties. They were gone pretty quick. I didn't even get to try one myself. I heard they were pretty good though. You can change the filling and use sausage, mushrooms or whatever you like.

1/2 package pepperoni, chopped (you can use more if you would like)
1 can black olives
1/2 onion, chopped
8 ounces cream cheese
1/2 green pepper

  • Mix together cream cheese, pepperoni, olives, onionn and green peppers.
  • Put a teaspoon full of mixture on wonton skins and fold, sealing edges with water or egg.

3 can(s) (10 count) grands jr. homestyle buttermilk biscuits (not flaky layers)
1 jar(s) ragu garlic parmesan cheese sauce
1 pkg (8 oz)kraft pizza shredded cheese
1 pkg hormel sliced pepperoni
1 egg, beaten
parmesan cheese
italian seasoning
marinara or pizza sauce for dipping

Steps:

  • 1. Preheat oven to 425 degrees.
  • 2. Separate biscuits and flatten each one with your fingers.
  • 3. Brush each flattened biscuit with Garlic Parmesan cheese sauce.
  • 4. Layer two pepperoni slices (slightly offset) in the center of each biscuit.
  • 5. Place a pinch of shredded cheese on top of pepperoni slices.
  • 6. Layer two more pepperoni slices (slightly offset) on top of shredded cheese.

1 (31 7/8 ounce) box cheese pizza mix
1 1/3 cups very warm water
oil (for frying)

Steps:

  • Pour crust mix and cheese packet into a bowl and stir to combine. You may add up to 1/2 cup parmesan or romano cheese, if desired.
  • Stir in water as directed in step 1 on box. Set aside.
  • Heat oil to 375 degrees.
  • While oil is heating, roll crust mix onto large greased cookie sheet and cut into 1x2 inch rectangles with pizza cutter. Makes about 80.
  • Fry dough pieces, a few at a time in oil, turning when browned.
  • Drain on paper towels and serve with heated pizza sauce.

tomato sauce
optional: presliced turkey (or meat of choice) cut into 1 cm by 3 cm strips

  • 1. Preheat oven to 400 degrees. 2. Thaw pastry puff sheets for 40 minutes or until soft and at room temperature. 3. Beat egg in bowl. 4. Mix in all cheeses, beat well and set aside. 5. Roll out pastry sheet into a 9 by 12 inch rectangle. 6. Cut into 12 rectangles, each 3 by 2 inches. 7. Put rectangles onto ungreased baking sheet. 8. Spoon 1 Tbs of tomato sauce in the middle of each rectangle. 9. Spoon 1 Tbs cheese mixture on top of tomato sauce 10. Garnish with 2 pieces of meat, if desired. 11. Place baking sheet in oven and bake for 12 minutes, or until puff is golden brown and the edges have puffed up. 12. Let cool 5 minutes before enjoying.
