These are easily the best homemade oatmeal cookie bars we've ever had, and that's really saying something! This recipe is simple to make and has all the essentials - chopped nuts, chocolate chips, high quality Gold Medal™ flour, and whole-grain oats. We love the ease of making oatmeal cookie bars because they have the chewy texture and flavor of an oatmeal cookie, but they take only 10 minutes to prep and use only one pan in the oven. Add extra indulgence by drizzling a little melted chocolate over these once they are cool and before you cut out the bars.

1 1/2 cups packed brown sugar
1 cup butter or margarine, softened
2 tablespoons molasses
2 teaspoons vanilla
2 eggs
3 cups quick-cooking oats
1 cup Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup chopped nuts
1 bag (12 oz) semisweet chocolate chips (2 cups)

Steps:

  • Heat oven to 350°F. Grease 15x10x1-inch pan. In large bowl, beat brown sugar and butter with electric mixer on medium speed until light and fluffy. Beat in molasses, vanilla and eggs. Stir in oats, flour, baking soda and salt. Stir in nuts and chocolate chips. Spread in pan.
  • Bake 20 to 30 minutes or until light golden brown and center is set. Cool completely, about 1 hour. For bars, cut into 8 rows by 6 rows.

2 tablespoons butter
1/4 cup honey
1/2 cup light brown sugar
1 egg white
1/3 cup applesauce
2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups old-fashioned oats
1/3 cup dried apricots, finely chopped
8 ounces low-fat cream cheese, softened
1/4 cup frozen apple juice concentrate, thawed
2 tablespoons grated lemon zest
4 kiwis, peeled and sliced
1/2 cup canned sliced peaches packed in light syrup, strained
1/2 cup strawberries, cut in 1/2 lengthwise
1 medium banana, cut into 1/4-inch slices

Steps:

  • Preheat oven to 350 degrees F.
  • To make the cookie crust: Cream the butter, honey, and brown sugar together in a mixing bowl.
  • Add the egg white and combine. Mix in the applesauce and vanilla.
  • Sift the flour, baking soda, salt, and cinnamon together. Add to the sugar mixture, stirring just to combine. Gently stir in the oats and apricots, just to combine.
  • Spread the batter on a 12-inch nonstick pizza pan or line a baking sheet with parchment paper into a 12-inch circle. Bake until lightly browned, 30 to 35 minutes. Let cool in the pan for 5 minutes, then carefully transfer to a wire rack and let cool completely.
  • To make the topping: In a mixing bowl, whip the cream cheese with the apple juice concentrate and lemon zest until light and creamy.
  • Spread the cream cheese mixture over the cookie, leaving a 1/2-inch border around the rim. Arrange the fruit over the top. Slice into wedges with a pizza cutter and serve.

¾ cup all-purpose flour
¾ cup rolled oats
½ teaspoon baking powder
¼ teaspoon baking soda
⅓ cup butter
⅓ cup white sugar
⅓ cup packed brown sugar
1 egg
1 teaspoon vanilla extract

Steps:

  • Combine dry ingredients. Mix remaining ingredients until well blended, then gradually add dry mixture. Stir until well blended. Press out on a lightly greased and floured pizza pan. (if you want to add chocolate chips, raisins, or nuts, press them into the dough once it is spread on the pan.)
  • Bake at 375 degrees F (190 degrees C) for 12-15 minutes until lightly browned. Cool 10-15 minutes in the pan on a rack, then loosen carefully with a spatula. You may leave the cookie in the pan, but if you plan to serve it whole (like a birthday cake), slide it out of the pan at this point and continue to cool on a rack.

1 large egg
1/2 teaspoon vanilla extract

2/3 cup M&M's minis

Steps:

  • In a bowl, cream butter and brown sugar. Beat in egg and vanilla. Combine the flour, oats, baking soda and salt; gradually add to creamed mixture. Stir in chocolate chips. Spread onto a greased 12-in. pizza pan. Bake at 350° for 14-16 minutes or until golden brown. Cool on a wire rack., Spread frosting over cookie. Sprinkle with M&M's, candy coating and gumdrops. For "pepperoni", cut circles in strawberry fruit roll; arrange on pizza. Cut into wedges.
