I got this recipe at a Vegan baking class recently. (I've made a few modifications, so it's not exactly the same.) These cookies are melt-in-your mouth sweet and salty and crunchy--I love them! **Update: I've recently discovered that these are also stellar if you substitute chopped dried mango for the cranberry.**

1 1/4 cups Earth Balance margarine
1 cup powdered sugar, sifted
2 1/2 cups flour
3/4 cup dried cranberries, chopped finely
1/2 cup roasted pistachios, chopped finely (if using unsalted nuts, add 1/2 tsp. salt to the recipe)
1 lime, juice and zest of

Steps:

  • Preheat oven to 350°F.
  • Line baking sheets with parchment paper.
  • Using a mixer, cream margarine and sugar. Add flour till dough forms.
  • Stir in cranberries, pistachios, zest, and juice.
  • Let dough rest in fridge for a few minutes. To form cookies, roll 1 tablespoons dough into a ball, then flatten. Place on cookie sheet.
  • Bake cookies for 11 minutes or till the bottoms are just turning golden and the tops look dry-ish. Cool on wire racks.

1/2 teaspoon fine salt
2 1/3 cups all-purpose flour (spooned and leveled)

1/3 cup strawberry jam

Steps:

  • In a food processor, process butter, confectioners' sugar, and salt until smooth. Add flour and pulse until a dough forms. Stir in pistachios. Shape dough into two 8-inch-long logs, tightly wrap in plastic, and freeze until firm, 30 minutes (or up to 1 month).
  • Preheat oven to 350 degrees, with racks in upper and lower thirds. Cut dough into 1/4-inch slices and transfer to parchment-lined baking sheets. Bake until cookies are set and barely golden at edges, 10 to 15 minutes, rotating sheets halfway through. Let cool completely on sheets on wire racks.
  • Spread 1/2 teaspoon jam on bottoms of half the cookies, then sandwich with remaining cookies. Store in airtight containers, up to 1 week.

This is not a traditional Scottish shortbread cookie dough, but a versatile, crunchy sweet cookie that can be flavored with a variety of natural oils and your favorite combination of mix -ins. 2 cups unbleached all-purpose flour
1/2 teaspoon kosher salt
5/8 cup unsalted butter
2/3 cup sugar
1 egg
2 -4 tablespoons chopped dried cranberries (to taste)
2 -4 tablespoons coarsely chopped pistachios (to taste)

Steps:

  • In a small bowl, combine the flour and salt and stir together with a fork until blended. Set aside.
  • Using an electric mixer, combine the butter and sugar, and beat until just blended, 1-2 minutes. Add the egg and beat until blended about 1 minute more.
  • Add the flour mixture, and on low-speed, beat until the mixture just begins to form a sticky dough, about 1 minute more. Turn out onto a floured surface, and gently pat together to form a dense ball of dough. Add cranberries and pistachios and knead gently until evenly combined, and shape into a flat round disk. Wrap tightly with plastic wrap and chill for at least 2 hours.
  • Position rack in the center of the oven and preheat to 325°F.
  • On a lightly floured surface, roll cookies out to about 1/8 " thick, and cut to desired shape. Transfer to a heavy - duty cookie sheet and bake until just golden around the edges, 15-18 minutes.

1 1/2 cups all-purpose flour, spooned and leveled
1/2 cup cornstarch
1/4 teaspoon kosher salt
14 tablespoons (1 3/4 sticks) unsalted butter, at room temperature
2 1/2 cups confectioners' sugar
1/4 cup shelled pistachios, finely chopped
1 teaspoon grated lemon zest (from 1 lemon)
3 tablespoons freshly squeezed lemon juice (from 1 lemon)

Steps:

  • Preheat the oven to 350°F. Line 2 baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cornstarch, and salt.
  • Working with a stand mixer, preferably fitted with the paddle attachment, or with a hand mixer with a large bowl, beat the butter and 1 cup of the confectioners' sugar on medium speed until smooth. With the mixer on low speed, gradually mix in the flour mixture until just combined and it holds together when squeezed (it will be slightly crumbly). Stir in the pistachios.
  • Gather the dough into a disk. On a lightly floured surface, roll the dough out to a generous 1/4 inch thick. 2 1/2 Sticks Unsalted Butter, softened
1/3 cup granualted sugar
1/3 cup light brown sugar
3 1/4 cups all-purpose flour
2 teaspoons orange zest
1 teaspoon pure orange oil
8 ounces good quality semisweet chocolate, chopped
1 1/2 cups unsalted shelled dry roasted pistachios, chopped finely
2 cookie sheets, each covered with a silicone mat

Steps:

  • Set racks in the upper and lower thirds of an oven, and preheat to 325 degrees. In the bowl of a standing mixer, fitted with a paddle attachement, beat the butter and sugars on medium speed for about ten minutes, or until the mixture is light in color, and very soft and fluffy. Stir in the orange oil and zest. In a separate bowl, measure out and then sift the flour. Fold the flour into the batter by hand, taking caution not to overmix. Place a handful of the dough at a time on a lightly floured work surface. With a lightly floured hand, pat each piece down to 3/8-inch thick. Connect each piece to the next, making a rough rectangular shape. If the dough sticks, loosen it with a small paddle knife or spatula. Try to use the flour sparingly. Cut the dough, using a round metal cutter, about 2 inches in diameter. Transfer the cut pieces onto the prepared pans, spacing about 1 1/2 inches between each. Press remaining scraps together and continue cutting until there are no scraps left. Bake the shortbreads for 15-20 minutes, rotating the cookie sheets from bottom to top shelves half-way through the cooking process. The cookies will be pale golden in color when they are done. Allow to cool for two minutes on the cookie sheets, then transfer to a cooling rack. Melt the chocolate over a double boiler. Meanwhile, spread chopped pistachios out upon a large plate. Clear a space next to the plate of pistachios for the bowl of melted chocolate, and on the other side, for parchment paper to set the finished cookies on. Once the cookies are completely cool, dip the bottoms (about one third of the way up) in the melted chocolate. Immediately dip melted chocolate portion of the cookie in the pistachios. Set the finished cookies on a piece of parchment, and allow the chocolate to harden. Store in a tightly-covered container.

VEGAN PISTACHIO SHORTBREAD COOKIES

Pistachios are by far my favorite nut. They've got that aromatic aftertaste that keeps you coming back for more. You pair that with rose water, and the taste is reminiscent of baklavas. Most gluten-free and vegan shortbread recipes, I have found to be complete fails. This one is surprisingly just like the original version.

¼ cup water
½ teaspoon agar-agar powder
½ cup vegan butter, at room temperature
½ cup solid coconut oil
¾ cup powdered sugar
1 ½ cups brown rice flour
½ cup finely ground pistachios
1 ½ teaspoons vanilla extract
¼ teaspoon salt
3 tablespoons aquafaba (chickpea water)
1 ½ cups powdered sugar
1 tablespoon rose water
1 cup finely chopped pistachios

Steps:

  • Bring water and agar-agar powder to a boil over medium heat. Reduce heat and simmer until thickened, about 5 minutes. Remove from the heat and refrigerate until set, 20 to 30 minutes.
  • Cream vegan butter and coconut oil with an electric mixer on medium speed for about 2 minutes. Sift in powdered sugar, 1 tablespoon at a time, mixing after each addition to combine. Sift in flour and ground pistachios; stir to combine. Stir in vanilla and salt until incorporated, scraping the bowl as necessary. Stir in the prepared agar-agar; your dough will become wet but don't worry, it will harden in the refrigerator. Cover the bowl with plastic wrap and refrigerate, 8 hours to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a work surface with parchment paper. Line a baking sheet with parchment paper.
  • Remove dough from the refrigerator and divide in half. Cover one half with plastic wrap and return to the refrigerator. Cover the remaining half with plastic wrap and roll on the prepared surface until it's 1/4-inch thick, working it into your hands to warm it up if it's too thick.
  • Cut out cookies with cookie cutter shape of choice. Rinsing off the cookie cutters with hot water between cuts will help remove any stuck-on cookie dough. Place cookies on the prepared baking sheet.
  • Bake in the preheated oven until the edges turn golden brown, 10 to 20 minutes, depending on the size. Cool on the baking sheet briefly before removing to a wire rack to cool, about 10 minutes.
  • Whisk aquafaba with an electric mixer until foamy. Whisk in powdered sugar, 1 tablespoon at a time, until fully incorporated and thick. Stir in rose water.
  • Dip cooled cookies into the icing and place back on the baking sheet. Sprinkle with chopped pistachios.

TOPPING:
1/4 cup finely chopped pistachio nuts
1/4 cup granulated sugar

Steps:

  • Preheat oven to 300°F. Line baking sheets with parchment paper. Combine finely chopped pistachio nuts and sugar in a small bowl. Set aside. Shortbread: Cream butter in a large bowl or an electric mixer on medium-high speed until very light in texture, about 5 minutes. Add sugar and continue beating until sugar is completely combined, about 2 to 3 minutes. Combine flour and corn starch in a separate medium bowl. Add to butter mixture on low speed until well combined. Beat in chopping pistachio nuts. Roll ball of dough by heaping tbsp into pistachio topping mixture. Place on prepared baking sheets 2" apart. Press down with a fork. Bake in preheated oven 20 to 25 minutes or until bottoms are lightly golden. Remove cookies from baking sheet and cool on wire racks.

2 Tbsp all purpose flour
10 Tbsp pistachios (dry roasted/unsalted)(divided)
2/3 c sugar
2 c all purpose flour
zest of 1/2 lemon (fine)
1 large egg yolk (beaten)
1/2 tsp salt
5 drops, green food color
2 stick unsalted butter (softened)

Steps:

  • 1. In a clean coffee grinder, pulse the 2 Tbsp flour with 4 Tbsp of the dry roasted unsalted pistachios until it makes a fine meal (almost a flour). Roughly chop the remaining 6 Tbsp of nuts. Place both in a large bowl.
  • 2. Add the remaining ingredients and mix well.
  • 3. Using your hands, mix additionally with your hands until quite smooth.
  • 4. Make 1 1/4 inch balls of dough and place up to 20 on an ungreased cookie sheet. Flatten each cookie with the back of a fork.
  • 5. Bake in a 325 degree oven for 18 minutes.
  • 6. Remove from sheet to cool completely on a rack.
  • 7. Store airtight. Makes 38 cookies.
