These are delicious little nibbles. I love their simplicity--they are quick to put together and can easily be made on the spur of the moment for an impromptu gathering, but can also be prepared up to a day ahead. The recipe is adapted from one published in "In Style" magazine. Prep time includes 15 minutes refrigeration time.

1/4 cup shelled salted pistachios (I used double this amount)
6 ounces goat cheese, softened
2 ounces cream cheese, at room temperature

Steps:

  • Toast nuts in small skillet over medium heat until fragrant, about 3 minutes; chop finely.
  • Combine goat cheese and cream cheese in a medium bowl. Drop mixture by heaping teaspoons onto a parchment-lined baking sheet; refrigerate 15 minutes.
  • Roll into balls, then roll in chopped nuts.
  • Refrigerate, tightly covered, up to 1 day.

This pistachio goat cheese bites recipe is the perfect no-cook holiday appetizer. A unique twist on the classic cheese ball with cherries and lemon for a burst of flavour, rolled in pistachios for a bite-sized crunchy treat.

2 tbsp Butter / beurre
0.25 cup Minced shallot
0.75 cup Chopped dried cherries
0.5 cup Chicken broth / bouillon de poulet
1 tbsp Fresh lemon juice / jus de citron fraîchement pressé
1 tbsp Finely chopped fresh parsely
1 300-g pkg Goat cheese / fromage de chèvre
0.5 cup Pistachios / pistaches

Steps:

  • Heat a frying pan over medium. Add butter, then shallot. Cook until softened, about 5 minutes. ##Stir in dried cherries and broth and cook until most of the liquid has been absorbed, about 5 minutes. Transfer to a bowl and let cool. ##Add lemon juice and parsley to cherry mixture. Stir in goat cheese and mix until evenly combined. ##Divide mixture using two teaspoons or a melon baller, and roll into 12 balls. Place pistachios in a small bowl. Roll cheese balls in pistachios, pressing gently to coat. Transfer to a plate, cover and refrigerate until ready to serve.

three 3.5-ounce logs of mild soft goat cheese such as Montrachet
1 stick (1/2 cup) unsalted butter, softened
1 large garlic clove, minced and mashed to a paste with 1 teaspoon salt
1/4 cup chopped pistachio nuts, toasted lightly and cooled
1/4 cup thinly sliced chives plus chive blades for garnish
1 loaf of French bread, cut into 1/4-inch-thick slices and toasted lightly

Steps:

  • In a bowl with an electric mixer beat together the goat cheese, the butter, the garlic paste, the pistachio nuts, the sliced chives, and salt and pepper to taste until the mixture is combined well, spoon the spread into a serving dish, and chill it, its surface covered with plastic wrap, overnight. The spread may be made 2 days in advance and kept covered and chilled. Garnish the spread with the chive blades and serve it with the toasts.
