1 package white cake mix (regular size)
1 package (3.4 ounces) instant pistachio pudding mix
4 large eggs, room temperature
1 cup sour cream
1/4 cup water
1/4 cup canola oil
1/3 cup sugar
3/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine cake and dry pudding mixes. Add the eggs, sour cream, water and oil; beat until blended (batter will be thick). , Combine sugar and cinnamon. Spoon half of the batter into 2 greased 8x4-in. loaf pans; sprinkle each with 2 tablespoons cinnamon sugar. Spread with remaining batter; sprinkle with remaining cinnamon sugar. , Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1 pound linguine
1 pound large shrimp, peeled and deveined
Freshly ground black pepper
1/4 cup olive oil, plus more for drizzling
3 garlic cloves, thinly sliced
1/2 teaspoon red-pepper flakes
1 cup chicken stock
4 tablespoons unsalted butter
1/2 cup roughly chopped Italian parsley
1/2 lemon, for serving
Flaky salt, for serving (optional)
1 tablespoon olive oil
1/3 cup panko bread crumbs
2 tablespoons raw pistachios, finely chopped
1 teaspoon lemon zest, from 1 lemon
3 tablespoons finely chopped mint or Italian parsley

Steps:

  • Bring a large pot of well-salted water (2 heaping tablespoons kosher salt to about 7 quarts water) to a boil. Add pasta, and cook until it is just short of al dente, according to package directions. Reserve 1 cup of the pasta cooking water, and drain.
  • Meanwhile, prepare the bread crumbs: Heat 1 tablespoon oil in a 12-inch skillet with sides over medium-low heat, add the panko bread crumbs, and toast, stirring frequently, until golden, about 2 to 4 minutes. Transfer the crumbs to a small bowl and toss together with the pistachios, lemon zest and mint and season with flaky salt. Set aside. Wipe out the skillet with a paper towel.

Remove with a slotted spoon and set aside. Stir in the garlic and red-pepper flakes and cook for 1 more minute, making sure the garlic doesn't burn.
  • Add the chicken stock, raise the heat to medium-high and bring to a simmer. Scrape up any brown bits that have formed at the bottom of the pan and cook until reduced by half, about 3 to 4 minutes. Stir in the butter and cook until it's melted and the sauce becomes emulsified.
  • Turn the heat to low, add the pasta, shrimp and parsley to the skillet and toss until glossy with sauce. Add some of the reserved pasta water, if needed, to loosen up the sauce. Top with half the bread crumbs and a good squeeze of lemon. Serve in bowls and pass the remaining bread crumbs at the table. Drizzle with additional olive oil and season with flaky salt, if desired.

1 3/4 cups whole shelled unsalted pistachios
1/4 cup poppy seeds
2 teaspoons baking powder
1/2 teaspoon salt, plus pinch sea salt
1/2 cup sugar
1 egg
3/4 cup whole milk
1/2 orange, zested
Creamed honey, for serving

Steps:

  • Special equipment: stand mixer, 8 1/2 by 4 1/2-inch glass loaf pan
  • Preheat the oven to 350 degrees F.
  • Butter and lightly flour the loaf pan.
  • In a food processor, add 1 1/2 cups of the pistachios and pulse until finely ground. Remove them to a large bowl and mix in the flour, poppy seeds, baking powder and 1/2 teaspoon of salt.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream the 3 tablespoons of butter and the sugar on medium speed for 2 minutes. Add the egg and continue to beat until the mixture turns pale yellow and ribbons form. Mix in the milk and the zest until incorporated. Gently stir the mixture into the dry ingredients to combine.
  • Pour into the loaf pan and smooth the top. Dot with the remaining 1/4 cup of whole pistachios and sprinkle with a pinch of sea salt.   • Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan. Cool completely, about 1 hour 30 minutes.
  • In small bowl, mix powdered sugar and enough of the 2 to 3 teaspoons cider for desired glaze consistency. Spread over top of bread. Sprinkle with 2 tablespoons pistachios.

This is an easy bread using mixes to make it even quicker, and is also very moist. I like to make it for Christmas to have out for guests but it is wonderful anytime.

1 (18 1/2 ounce) package yellow cake mix
4 eggs
1/4 cup vegetable oil
2 tablespoons water
1 (3 ounce) package instant pistachio pudding mix
1 cup sour cream
1/2 cup maraschino cherry
1/2 teaspoon green food coloring
1/2 teaspoon ground cinnamon
2 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour two 9 x 5" loaf pans.
  • Mix together cake mix, eggs, oil, water, pudding mix, sour cream, cherries, and food coloring.
  • Pour into prepared pans.
  • In a small bowl, stir together cinnamon and sugar.
  • Sprinkle tops of loaves with mixture.
  • Bake for 45 minutes.

POMEGRANATE, BANANA AND PISTACHIO BREAD



Pomegranate, Banana and Pistachio Bread image

We love banana bread, so I'm always on the lookout for new and different recipes. Although I haven't tried this one yet, this bread recipe from the Pom Wonderful website looks so good I just had to share it! NOTE: You can save time and work by using packaged pomegranate seeds, available in some grocery stores (such as Trader Joe's) in the refrigerated produce section.

1 cup pomegranate seeds
2 cups all-purpose flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup mashed banana (2-3 bananas)
1/3 cup vegetable oil
1/3 cup milk
1 egg, lightly beaten
1/2 cup shelled pistachios or 1/2 cup slivered almonds, chopped
pomegranate seeds (for garnish) (optional)
shelled pistachios (for garnish) (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Grease one 9 x 5 x 3-inch loaf pan and set aside.
  • Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the seed sacs. The seeds will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the seeds in a separate bowl. Measure out 1/2 cup of the seeds and set aside. (Refrigerate or freeze remaining seeds for another use.).
  • In a large bowl, stir together flour, sugar, baking powder and salt.
  • In a small bowl, stir together bananas, oil, milk and egg; stir into flour mixture with pomegranate seeds and the chopped pistachios just until moistened. Do not over-mix!
  • Spoon batter into prepared pan. If desired, sprinkle a few whole shelled pistachios and a few additional pomegranate seeds over the batter for garnish.
  • Bake for 50 to 60 minutes until wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove loaf from pan and cool on wire rack. Store bread tightly covered, or wrap tightly in foil and freeze for up to 1 month.

3/4 cup milk
1 egg
1 1/2 cups all-purpose flour
1 cup chopped pistachio nut
1/2 cup semi-sweet chocolate chips
1/3 cup baking cocoa
2 teaspoons baking powder
1/4 teaspoon salt
decorating sugar (for topping) (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Grease bottom and sides of a 9x5x3 loaf pan with shortening.
  • Mix sugar, butter, milk and egg in a large bowl until well blended.
  • Stir in remaining ingredients, except decorating sugar.
  • Pour batter into loaf pan.
  • Sprinkle with decorating sugar, if desired.

Of course, I had to try other flavors and come up with other names (yes, go ahead and groan)...Like this became Grinch Bread, and I also chose Reindeer Poop Bread, and Dirty Snow Bread. 18 1/2 oz yellow cake mix
3.4 oz pistachio instant pudding
4 eggs, beaten
1/2 c oil
1/4 c water
8 oz sour cream (1 cup)
1/4 c sugar (i omit, it is sweet enough without it)
1 tsp cinnamon (i omit, it is sweet enough without it)

Steps:

  • 1. Combine ingredients, mix well. Pour into two greased 9x5 loaf pans. Bake at 350 degrees 40 min. Toothpick test.
  • 2. Note: it took 60 min for toothpick to come out clean. I also tried it with other pudding flavors...and named it other things with the other puddings. Butterscotch (not a favorite) became Reindeer Poop Bread Coconut Cream (which is fantastic, and a definite favorite) became Dirty Snow Bread and this Pistachio Bread became Grinch Bread!
