Piri-piri chicken is a spicy dish with roots in both Africa and Portugal. The dish was created in Angola and Mozambique when Portuguese settlers arrived with chile peppers (known as piri-piri in Swahili). Timing note: The chicken needs to marinate for at least four hours before being grilled.

Glaze:
3 tablespoons butter
3 tablespoons chopped fresh cilantro
2 garlic cloves, minced
2 tablespoons piri-piri sauce or other hot pepper sauce
2 tablespoons fresh lemon juice
Chicken:
1/4 cup chopped fresh cilantro
1 2-inch piece fresh ginger, peeled, thinly sliced
1 large shallot, peeled, quartered
3 garlic cloves, peeled
1/2 cup piri-piri sauce or other hot pepper sauce
1/4 cup extra-virgin olive oil plus additional for brushing
1/4 cup fresh lemon juice
1 teaspoon coarse kosher salt
1 teaspoon freshly ground black pepper
1 3 1/2- to 4-pound chicken, backbone removed, opened flat
1 11 3/4 x 8 1/2 x 1 1/4-inch disposable aluminum baking pan (to catch drips)
Ingredient info: Bottled piri-piri sauce is available at specialty foods stores and online from africantradingco.com. Choose the heat level that suits you, keeping in mind that the mild version still has a nice kick to it

Steps:

  • For glaze:
  • Melt butter in small saucepan over medium-high heat. Add cilantro and garlic; cook until garlic begins to brown, about 2 minutes. Add piri-piri sauce and lemon juice. Reduce heat to medium-low; simmer 2 minutes. DO AHEAD: Glaze can be made up to 1 day ahead. Cover and chill. Rewarm before using.
  • For chicken:
  • Finely chop cilantro, ginger, shallot, and garlic in processor. Add piri-piri sauce, 1/4 cup oil, lemon juice, coarse salt, and pepper; process marinade to blend.
  • Place chicken, skin side up, on work surface. Using palm of hand, press on breastbone to flatten chicken. Tuck wing tips under. Pour half of marinade into 11x7x2-inch glass baking dish. Open chicken like book; place skin side down in single layer in dish. Pour remaining marinade over. Cover; chill at least 4 hours or overnight, turning chicken occasionally.
  • Remove top rack from barbecue. Prepare barbecue (medium heat). If using 2-burner gas grill, light 1 burner. If using 3-burner gas grill, do not light center burner. If using charcoal grill, light briquettes in chimney and pour onto 1 side of lower grill rack. Place disposable aluminum pan on unlit part of grill. Place upper grill rack on barbecue; brush with oil.
  • Remove chicken from marinade. Arrange skin side up on grill rack above drip pan. Cover barbecue; grill until skin is browned and instant-read thermometer inserted into thickest part of thigh registers 165°F, turning often, about 40 minutes. Transfer to platter. Pour warm glaze over.

10 African bird's eye chile peppers
1 bunch cilantro
2 cloves garlic, minced
2 tablespoons vegetable oil
2 teaspoons white vinegar
2 limes, juiced
1 teaspoon salt, or to taste
1 teaspoon fresh ground black pepper, or to taste
1 chicken breast, cut in half
2 chicken leg quarters with skin

Steps:

  • Use rubber gloves to mince the chiles and place into a mixing bowl. Add cilantro, garlic, vegetable oil, vinegar, lime juice, salt, and black pepper. Mix piri piri sauce well.
  • Place chicken breasts and legs into a resealable plastic bag. Pour in piri piri sauce, seal the bag, and shake gently to completely cover chicken. Put the bag in the refrigerator to marinate at least 4 hours.
  • Remove bag from the refrigerator about 30 minutes before cooking to allow chicken to come to room temperature.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove chicken from the bag; discard bag and cilantro. Cook chicken on the preheated grill, rotating as necessary to cook evenly, until juices run clear and an instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C), about 25 minutes.

I love churrasqueira chicken and have been looking for a recipe to make it myself. I found this on Breakfast Television Toronto's web site. They got the recipe from Roasty Chicken Churrasqueira which is in the town of Maple just north of Toronto. A friend told me that she's used this sauce for fish and shrimp, too. I've tried it on shrimp and it's wonderful. Simply marinate the shrimp for an hour and then drain the shrimp, discard the sauce and grill the shrimp on the barbie.

1/4 cup vinegar (balsamic gives an excellent flavour)

SPATCHCOCK PIRI-PIRI CHICKEN

1 chicken (about 1.5kg/3lb 5oz)
4 red chillies , chopped (deseeded if you don't like it too spicy)
3 garlic cloves , crushed
2 tsp sweet paprika
2 tbsp red wine vinegar
2 tbsp chopped parsley
2 tbsp olive oil
lemon wedges and Tabasco sauce (optional), to serve

Steps:

  • To spatchcock the chicken, flip it over so the backbone is facing you. Using a sturdy pair of kitchen scissors or poultry scissors, cut down either side of the backbone, then discard. Turn the chicken over and push down firmly on the breastbone to flatten out the bird. Make a few slashes in each leg joint. You can watch a video showing how to spatchcock a chicken in the How To Cook section of the website).
  • Put the chillies and garlic in a food processor with a good pinch of salt, or use a pestle and mortar. Blend to a paste, then add the paprika, vinegar, parsley and olive oil. Mix well, then smear over the chicken. Leave to marinate for at least 1 hr or overnight if possible. Can be frozen at this stage.
  • Fire up the barbecue. When the flames have died down, place the chicken on the centre of the barbecue, skin-side down, and cook for 15-20 mins until nicely charred. Flip the chicken over and continue cooking for another 5-15 mins until cooked through. Check that the juices run clear, as the heat of every barbecue will vary. To cook in the oven, heat to 200C/180C fan/gas 6 and cook for 35-40 mins on a baking tray. To char the skin, grill for a further 5-10 mins. Serve with lemon wedges, and Tabasco if you like it hot.

1 chicken , about 2kg
2 dried hot chillies
100ml red wine vinegar
6 red chillies
6 garlic cloves
2 tsp smoked paprika
1 tsp dried oregano
1 tsp dried thyme
1 tsp golden caster sugar
2 lemons , juiced

Steps:

  • To make the marinade, tip the dried chillies and the vinegar into a pan and bring to the boil. Remove from the heat and leave the chillies to soak until the vinegar is cold. Put the red chillies, garlic, soaked dried chillies and vinegar in a food processor and blitz. Add the smoked paprika, oregano, thyme, sugar, a pinch of salt and the lemon juice. Blitz again to a paste and set aside.
  • Sit the chicken in a shallow dish and use a small knife to score all over with cuts 1cm deep. Make sure you do the legs and the underside. Tip the marinade over the chicken and massage into the cuts. Cover and chill for at least 4 hrs, but overnight would be better.
  • When you're ready to cook, heat oven to 180C/160C fan/gas 4. Roast the chicken for 1 hr, then turn the heat up to 220C/200C fan/gas 7 and cook for a further 30-35 mins until a crust has formed on the outside of the chicken.
  • Remove from the oven and leave to rest for 30 mins. Serve with homemade wedges or jacket potatoes, coleslaw, some buttered corn cobs and chilli & mint peas.

  • In large glass bowl, combine all ingredients except chicken; mix well.

1/8 cup Olive Oil
¼ cup Pimenta Moida Chili Paste*.
1/8 cup White wine
½ tsp sea salt
¼ tsp black pepper
1 tsp sweet paprika (ideally Spanish smoked paprika)
2 Garlic cloves - minced
3 Bay leaves
1/4 tsp Piri-piri hot sauce or crushed red chilis
"Pimenta moida" is a Portuguese fermented pepper paste that is available in the international section of many grocery stores. Ferma brand- available in Canada or Gonsalves in USA. If neither available an Asian chili paste will work. It can also be ordered on-line via Portuguese specialty shops.

Steps:

  • In large glass bowl, combine all Marinade ingredients; mix well. Add to chicken, turning to coat. Cover and refrigerate for 4 hours, turning occasionally; can be refrigerated for up to 24 hours if you want to make it ahead. Reserving marinade, place chicken, skin side down, on a greased grill over medium heat; close lid and cook for 10 minutes. Turn and brush with marinade; cook for 30 to 40 minutes or until juices run clear when chicken is pierced. Enjoy with a nice glass of Vinho Verde. Saúde!

This recipe is very similar to the Nando's chicken and if used the way I direct it will turn out to be a fraction of the price. I'm no expert chef but I can tell you that if done right, these babies will come out heavenly. I searched for this recipe on this site to see if a similar one had been posted but obviously not so here I am with the awesome recipe. This chicken comes out sweet with Chilly and ripe with the tang of lemon.

1 roasting chicken
8 garlic cloves, crushed
1 pinch salt
2 lemons, juice of
1 teaspoon bay leaf powder
2 teaspoons paprika
2 tablespoons very soft butter
1 pinch salt
4 tablespoons ground piri-piri pepper
100 ml olive oil
1/2 lemon, juice of

Steps:

  • Mix all ingredients for the marinade together. If you find it annoying crushing up the garlic you can buy it pre crushed from the shops.
  • Use a sharp knife cut chicken into six pieces so that you have the breast and lower part of the chicken as well as the 4 drumsticks and wings, (visualize the look of the chicken at Nando's). Cut off any excess fat but leave most of the skin as it will add to the flavor.
  • Make several small incisions into the chicken to later help it absorb the marinade.
  • Bask the chicken well in the marinade and allow it to marinate in the fridge for at least 1 hour.
  • Meanwhile mix the Piri Piri seasoning with the lemon juice and the oil. You can find Piri Piri seasoning easily from the shops and it saves you having to chop if 10-12 red chillies and chop up a bay leaf and such, just makes the process a lot simpler. Also add a pinch of salt.
  • Pre heat the grill and insert the chicken. Bask the chicken frequently with any excess marinade.Turn the chicken frequently and make sure it doesn't burn.Cook for approximately 30 minutes.
  • Remove the chicken from the grill/BBQ and allow it to cool before lathering it in the Piri Piri sauce. Serve with potatoes and what ever else you desire.
  • Charcoal grill or BBQ preferred but gas grill works almost as well.

about 4 skin-on chicken thighs and 4 drumsticks- buy a mixed pack
6 tbsp piri-piri marinade (you can buy mild, medium or hot)
1 tbsp sunflower oil
2 peppers , any colour, deseeded and finely chopped
½ bunch spring onions , sliced, white and green parts separated
4 tbsp tomato purée
1 tbsp sweet smoked paprika
250g cooked rice
vegetables or salad , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Slash each piece of chicken 3 times, so the marinade can really flavour the meat. Pour over the sauce and leave in the fridge to marinate, if you have time. If not, mix well and arrange, skin-side up, in a roasting tin. Cook for 30 mins, then increase heat to 220C/200C fan/gas 7 and cook for about 15 mins more until the skin is crispy and golden.
  • When the chicken is almost ready, heat the oil in a frying pan. Cook the peppers and white parts of the spring onions for 5 mins. Tip in the purée and paprika, stir, then add the rice, breaking up with a wooden spoon so all the grains are coated well. Use a high heat and scrape any that sticks off the bottom so you get some soft and some crispy parts. Heat until piping hot. Scatter the green parts of the spring onion on top and serve with the chicken, and some vegetables or salad, if you like.

This is a classic Portuguese dish, popular wherever Portuguese people are to be found. The name comes from the chiles and traditional spice mixture of Angola, a former Portuguese colony. 3 tablespoons olive oil
4 -6 chicken breast halves, skinless if desired
salt & freshly ground black pepper
1 onion, thinly sliced
2 carrots, cut into thin strips
2 parsnips, cut into thin strips
1 red bell pepper, cored, seeded, and cut into thin strips
1 green bell pepper, cored, seeded, and cut into thin strips
4 cups chicken or 4 cups vegetable stock
3 -4 tomatoes, cored and quartered
1 tablespoon tomato paste
1 cinnamon stick
2 bay leaves
1 sprig fresh thyme
piri-piri, sauce (or other hot sauce)
1 1/2 cups long-grain rice
1 tablespoon lime (or lemon juice)

Steps:

  • Heat the oil in a large skillet over moderate heat. Season the chicken generously with salt and pepper and brown on all sides. Add the onion and saute for about 3 minutes. Add the remaining vegetables and saute until tender but not brown, about 5 minutes.
  • Add the stock, tomatoes, tomato paste, cinnamon stick, bay leaves, thyme, and piri-piri sauce and bring to a boil. Ladle about 1 1/2 cups of the cooking liquid into a small pot and set aside. Place the rice in the bottom of a large baking dish. Transfer the chicken and vegetables to the baking dish and add the liquid from the skillet.
  • Bake tightly covered in a preheated 350F oven until the rice is cooked, about 30 minutes. Meanwhile, heat the reserved liquid and add the lime juice and additional piri-piri sauce to taste. Serve the chicken and vegetables on top of the rice, and serve the additional sauce separately.

5 lemons, zested and juiced, plus 2 lemons sliced into wedges, for garnish
1 head garlic cloves, peeled
4 red peppers, seeded and roughly chopped
10 chili peppers like Fresno or serrano
4 cups fresh parsley leaves
3 tablespoons paprika
1 cup red wine vinegar
2 cups olive oil
Salt and freshly ground black pepper
7 whole chickens, each cut into 6 pieces

Steps:

  • To a food processor add lemon zest, lemon juice, garlic, red pepper, chiles, parsley, paprika, red wine vinegar and oil. Process until it becomes a paste. Season with salt and pepper. Reserve 1 cup of the sauce as set aside for garnishing cooked chicken later.
  • Divide chicken pieces into 2 large resealable plastic bags. Divide the marinade into both bags and seal. Turn the chicken around in the bags to distribute the marinade. Place chicken in the refrigerator and let it marinate for at least 1 hour and up to 1 day.
  • Preheat grill to medium-high heat.
  • Remove chicken from bags with tongs and drain well. Season with salt and pepper. Place on grill, skin side down first, and grill for about 15 minutes on each side turning occasionally until cooked through. (You might need to do it in batches if grill is not big enough.) Serve with lemon wedges and the reserved piri piri sauce.

300g tub coleslaw
4 pitta breads

Steps:

  • Chop the chicken into 2cm cubes and toss in the piri-piri sauce. Heat the grill to high, push the chicken onto four skewers and grill on all sides for 10-12 mins in total or until cooked through and a little charred. Meanwhile, warm the pittas in a toaster.
  • Slice the pittas in half, stuff with the coleslaw, then slide the chicken from the skewers and add to the pittas.

This was posted in response to a request. I'm going to make it for my grandson who is part portuguese - a "half chop"!! The timing doesn't include overnight marinating.

1/4 cup fresh lime juice
2 tablespoons cider vinegar
1/2 teaspoon paprika
1/4 teaspoon Angostura bitters
1 teaspoon hot pepper sauce, to taste
1 dried hot red chili pepper
1 fresh chili pepper (such as jalapeno)
2 cloves garlic
2 lbs whole chicken breasts, with skin and bone

Steps:

  • Combine the lime juice, vinegar, paprika, bitters and hot pepper sauce in a glass baking dish.
  • Wearing kitchen gloves, split the dried chili with a sharp paring knife and remove the seeds.
  • Do the same with the jalapeno pepper.
  • Mash the peppers with the garlic into a smooth paste using a mortar or an electric spice grinder.
  • Add the paste to the lime mixture in the baking dish and combine.
  • Toss the chicken pieces and swish them in the marinade until they are completely coated.
  • Cover and let marinate overnight in the refrigerator.
  • Remove the chicken from the marinade and grill or broil until cooked through and burnished, about 20 minutes on each side.
  • Baste frequently with the marinade.
  • If the chicken looks like it is beginning to burn, move it farther away from the heat source.
  • Serve hot with chilled orange sections and plenty of napkins.

PIRI PIRI CHICKEN (QUICK STIR FRY VERSION)



Piri Piri Chicken (Quick Stir Fry Version) image

A Portugese influenced dish, traditionally made with African Birds Eye Chili (Piri Piri) but this version is spiced using red chilli flakes and fresh green chillies. I like to cook different dishes all the time, but I tend to adapt them a little bit, so as to use everyday ingredients without compromising on the flavours. This is by no means an authentic recipe, it just allows for new flavours in every day cooking.

4 large boneless skinless chicken breasts or 4 large chicken thighs, would be best for flavour
1 red pepper, thinly sliced
1 yellow pepper, thinly sliced
red onion, finely chopped
4 garlic cloves
1 -2 fresh red chili pepper (if not available, can replace with 1 tbsp red chilli flakes)
1 tablespoon sweet paprika
1 lemon, juice and zest of
1/2 cup white wine
1 tablespoon Worcestershire sauce
fresh basil
salt
fresh ground black pepper
extra virgin olive oil

Steps:

  • Preheat oven to 375°F.
  • 1. Make a couple of slits on the thickest part of the chicken.
  • 2. Stuff the garlic clove in the slit on the chicken, season with salt and rum some smoked paprika on the chicken. Set aside.
  • 3. Heat a griddle pan - sear the chicken on both sides on a hot griddle.
  • 4. The garlic should be a little softened by this, so remove it from the slit in the chicken. Add the garlic to the remaining sauce ingredients and blitz in a blender until you have a thick sauce.
  • 5. Cook the peppers on the same griddle pan slightly, simply to soften them a bit.
  • 6. Take a rectangular pan, spread the peppers on the bottom followed by the chicken and pour the sauce on top. Cook in a preheated hot oven for 25-30 minutes.
  • SLOW COOKER METHOD:.
  • This is a perfect dish for the slow cooker.
  • Combine the sauce ingredients and the peppers, onions in the crockpot and place the chicken pieces on top. Let them cook on high for 2 hours and then reduce to medium for a further 4-5 hours. It would not be necessary to blitz the ingredients for the sauce as it will all be nice and soft, with lots of flavours. I would add a little bit more white wine in there - say 1/2 cup and also add 1/2 cup of chicken stock which helps keep things moist in the crockpot.
  • STIR FRY VERSION (shown in pic above):.
  • Due to lack of time, I had to make a stir fry version at the class, as shown in the pic above. I didn't make a separate sauce, I just cooked everything together in one pan and it came out lovely. I felt it needed the sauce, to get the real flavour, but we didn't have enough time to make the sauce.
  • VARIATION:.
  • If stuck for time and need to make this in a hurry, cut the chicken into 1 inch cubes. Saute the onions and chicken in a pan, when the onions have softened a bit and the chicken starts to change colour, add the peppers and garlic (mince first). Stir in all the sauce ingredients, cover and let it simmer for 20-25 minutes on low heat. Serve on a bed of rice or cous cous salad. (For guilty pleasure, roast potatoes make this the ultimate comfort food in the winter months!).

MOLHO DE PIRI PIRI GRILLED CHICKEN

An dish with origins in Africa. Flare-ups, of course, are inevitable. To avoid charring your food beyond recognition, move it to a cooler corner of the grill or adjust the flame. Recipe loosely adapted from the Urban Griller. Time not included for the advance making of the Piri Piri sauce.

3/4 cup molho de piri-piri (see recipe below)
1 teaspoon paprika
2 garlic cloves, minced
1/2 teaspoon salt
1 orange, cut into small segments, rind and pithy strings removed
1 fryer
2 -3 fresh hot chili peppers, chopped (bird's eye or other red chili)
4 tablespoons lemon juice or 4 tablespoons lime juice
5 tablespoons oil
1/2 cup red wine vinegar
1 tablespoon cayenne pepper or 1 tablespoon dried chili pepper flakes
1 tablespoon minced fresh garlic
1 tablespoon paprika (preferably smoked paprika)
1 teaspoon salt
1 teaspoon dried oregano or 1 tablespoon fresh oregano

Steps:

  • In a blender, mix together the first 5 ingredients, then set aside.
  • Place the chicken breast side down. Using poultry shears, cut along one side of the backbone, then the other. Discard the bone or use it for stock. Turn the chicken breast side up, open and press down firmly with the palm of your hand to flatten. Then using a mallet, pound the chicken to flatten further. Place chicken in a flat dish (or resealable food-safe plastic bag) and coat with marinade. Cover and marinate for several hours or overnight in the refrigerator. Remove the chicken from the refrigerator and let it return to room temperature.
  • Meanwhile, heat a gas BBQ or charcoal grill to a medium heat. Getting your grill hot prior to placing the chicken is important. Baste the chicken with some of the reserved marinade then place it breast side down on the grill and cook until the skin is a deep brown and shows grill marks, about approximately 15-20 minutes Flip and repeat, for about another 15-20 minutes. Brush liberally additional sauce onto the Piri Piri chicken in the last 15 minutes of cooking and serve with remaining sauce .
  • To Make Molho de Piri Piri: Remove the stems from the chilis. Place all the ingredients (including the seeds) in a food processor and purée. Pour the mixture into a small glass jar and let steep for at least 24 hours, preferably 1 week, in the refrigerator. The Sauce will keep for 1 month. Shake well before using.

CREAMY PIRI PIRI CHICKEN PASTA

Steps:

  • Cut the chicken into small bitesize pieces, season with salt and pepper and set aside. Heat 1 tbsp of the oil in a wok, or wide frying pan, and fry the onion for 3-4 minutes. Stir in the garlic and fry for an additional 1 minute. As the onion is cooking bring a saucepan of water to the boil with salt and 1/2 tbsp of olive oil. This will help stop the tagliatelle from sticking together.
  • Add the chicken and stir fry on a high heat for 3-5 minutes to brown chicken. Once chicken is slightly browned stir in the Piri Piri sauce and reduce heat to simmer for 2 minutes to reduce slightly.
  • Once the sauce has reduced stir in the double cream and reduce heat to low for about 5 minutes and simmer, stirring occasionally. Now you have 2 options for the spinach. You can either quickly chop into strips to make it easier to wilt and add to the sauce or (if like me) you can gradually add the whole spinach leaves to the pan so you have big chunky bits to wrap around the chicken and pasta. Add to the sauce then once ready add to your drained pasta and stir through then serve.

PIRI-PIRI CHICKEN WITH SMASHED SWEET POTATOES & BROCCOLI

Serve up an easy one-pan traybake of piri-piri chicken with sweet potatoes and broccoli. As well as being simple to make, it delivers three of your 5-a-day

3 large sweet potatoes (about 900g), peeled and cut into large chunks
oil , for drizzling
6-8 chicken thighs, skin left on
2 red onions , cut into wedges
25g sachet piri-piri spice mix (or a mild version, if you like)
300g long-stem broccoli

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Toss the sweet potatoes with a generous drizzle of oil and some seasoning, and tip into a very large roasting tin. Push the potatoes to one end of the tin, then, in the other end, toss the chicken with the onions, spice mix, a drizzle of oil and some seasoning. Roast for 40 mins, stirring everything halfway through. Add the broccoli to the tin, drizzle with a little oil and season, then roast for 10-15 mins more.
  • Remove the chicken, onions and broccoli from the tin. Roughly mash the potatoes using a fork, making sure you incorporate all the chicken juices and spices from the pan. Spread the mash over the base of the tin, then top with the broccoli, chicken and onions and serve from the tin in the middle of the table.
