HOMEMADE CHICKEN AND NOODLES



Homemade Chicken and Noodles image

This thick and hearty chicken noodle soup recipe rivals the thinner, brothier versions from your childhood. It's so perfectly yummy and soul-pleasing.

Number Of Ingredients 11

1 whole cut-up fryer chicken
2 whole carrots, diced
2 stalks celery, diced
1/2 whole medium onion, diced (optional)
1 tsp. salt
1/2 tsp. turmeric
1/4 tsp. white pepper (more to taste)
1/4 tsp. ground thyme
2 tsp. parsley flakes
16 oz. frozen "homemade" egg noodles
3 tbsp. all-purpose flour

Steps:

  • Cover chicken in 4 quarts water. Bring to a boil, then reduce heat to low. Simmer for 30 minutes.
  • Remove chicken from pot with a slotted spoon. With two forks, remove as much meat from the bones as you can, slightly shredding meat in the process. Return bones to broth and simmer on low, covered, for 45 minutes.
  • Remove bones from broth with a slotted spoon, making sure to get any small bones that might have detached.
  • Add the carrots and celery (and onions, if using) to the pot, followed by the herbs and spices. Stir to combine and simmer for ten minutes to meld flavors.
  • Increase heat and add frozen egg noodles and chicken. Cook for 8 to 10 minutes.
  • Mix flour and a little water. Stir until smooth. Pour into soup, stir to combine, and simmer for another 5 minutes, or until broth thickens a bit. Test and adjust seasonings as needed.

1 whole Chicken
1 whole Bay Leaf
64 oz. fluid Unsalted (or Low Sodium) Chicken Broth (you May Use Half Broth And Half Water If Desired.)
1 whole Large Onion, Chopped
3 whole Ribs Of Celery, Sliced
3 whole Carrots, Peeled And Chopped
3 whole Parsnips, Peeled And Chopped
1/2 tsp. Salt
Ground Black Pepper

Steps:

  • Place all ingredients but the pepper into a pot. Bring to a boil, then reduce to a simmer. Cover and simmer for 1 1/2 to 2 hours, or until chicken is done, vegetables are tender, and soup flavor is divine. Taste and adjust seasonings as needed. Serve in a bowl, then sprinkle black pepper over the top. *Note: Adjust broth levels and/or vegetable amounts as needed.

8 thick slices sourdough bread
2 tablespoons olive oil, plus more for toasting bread
2 tablespoons salted butter
3 boneless, skinless chicken thighs, diced
1 small onion, diced
2 cloves garlic, minced
2 tablespoons tomato paste
One 14-ounce can diced tomatoes
One 28-ounce can tomato puree
4 cups low-sodium chicken broth
One 15-ounce can cannellini beans
1 to 2 tablespoons honey
2 teaspoons chopped fresh oregano, plus whole sprigs, for garnish
Kosher salt and freshly ground black pepper
One 6.52-ounce jar marinated artichoke hearts, drained
4 small burrata balls

Steps:

  • Preheat the oven to 425 degrees F.
  • Lightly coat the bread with oil on both sides and place on a baking sheet. Bake until toasted and browned, about 10 minutes.
  • Heat the butter and olive oil in a soup pot over a medium-high heat. When the butter has melted and the oil is hot, add the chicken, onion and garlic and cook until the onion starts to brown and the chicken is almost cooked through, about 5 minutes.
  • Add the tomato paste and stir until everything is well coated. Add the canned tomatoes, tomato puree, chicken broth, beans, honey and oregano. Season with salt and pepper, then stir well and bring to a simmer. Simmer until the flavors are combined, about 10 minutes.
  • Tear the toasted bread into large chunks and place in the bottom of 8 soup bowls. Add the marinated artichoke hearts to the soup and stir to combine. Ladle the soup over the bread. Top each bowl with half a ball of burrata, an oregano sprig and a drizzle of olive oil.

1 1/2 teaspoons ground cumin
About 1 1/4 teaspoons chilli powder
1/2 teaspoon garlic powder
1/2 teaspoon salt, plus more to taste
2 boneless, skinless chicken breasts
2 tablespoons olive oil
1 cup diced onion
1/4 cup diced green bell pepper
1/4 cup diced red bell pepper
3 cloves garlic, minced
One 10-ounce can diced tomatoes and green chiles, such as Rotel
4 cups low-sodium chicken broth
4 cups hot water
3 tablespoons tomato paste
Two 15-ounce cans black beans, drained
3 tablespoons cornmeal
5 small corn tortillas
Diced avocado
Diced red onion
Sour cream
Chopped fresh cilantro
Other suggested toppings: Grated Monterey Jack cheese, pico de gallo

Steps:

  • Preheat the oven to 375 degrees F.
  • Start by mixing together the cumin, 1 teaspoon of the chilli powder, the garlic powder and salt. Drizzle the chicken breasts with 1 tablespoon of the olive oil. Then sprinkle with 1 teaspoon of the spice mixture. Set the rest of the spice mixture aside. Bake until the chicken is cooked all the way through, 15 to 20 minutes. Remove it from the oven. Cut the chicken into cubes and set aside.
  • Next, heat the remaining 1 tablespoon olive oil in a large pot over medium-high heat. Throw in the onions, green and red bell peppers and garlic. Throw in a tablespoon of the spice mixture used to season the chicken. Add a little extra chilli powder (about 1/4 teaspoon) for heat. Stir to cook the vegetables until they begin to turn golden brown, about 5 minutes. Add the cubed chicken and diced tomatoes, juice and all. Add the chicken broth, hot water and tomato paste. Stir to combine and bring the mixture to a boil. Reduce the heat to low. Add the drained black beans. Next, mix together the cornmeal with 1/2 cup water. Add the mixture to the pot, and then simmer the soup for 10 to 15 minutes. Give it a taste and add salt or seasonings as needed; be sure to not under salt it!
  • Cut the tortillas into uniform 2- to 3-inch strips. Stir most of them into the soup just before serving. This is what makes tortilla soup tortilla soup! Turn off the heat and get ready to serve it up. Ladle the soup into a bowl, then add avocado, red onion, sour cream, cilantro and extra tortilla strips to the top. The more toppings on tortilla soup, the merrier.

6 cups low-sodium chicken broth
Half a 12-ounce bag broccoli slaw mix (with broccoli, carrots and red cabbage)
2 to 3 tablespoons soy sauce
1 tablespoon minced ginger
4 scallions, white and green parts separated, thinly sliced
2 cloves garlic, minced
1 small red pepper, seeded and thinly sliced
One 14- to 16-ounce bag frozen pork dumplings

Steps:

  • Combine the broth, slaw mix, soy sauce, ginger, scallion whites, garlic and red pepper slices in a large saucepan, then bring to a simmer. Add the dumplings and return to a simmer. Simmer until the veggies are tender and the dumplings are cooked, about 10 minutes. Garnish with the scallion greens.

Olive oil, for frying
2 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
2 carrots, peeled, halved and sliced crosswise
2 stalks celery, thinly sliced
1 medium onion, finely diced
1 clove garlic, grated
3/4 teaspoon ground thyme
2 cups low-sodium chicken broth
2 chicken bouillon cubes
4 cups cooked egg noodles
2 to 3 tablespoons finely minced fresh parsley

Steps:

  • Drizzle some olive oil in a heavy pot over medium-high heat. Season the chicken breasts with salt and pepper. Fry the chicken on both sides until fully cooked through, about 4 minutes per side. Set aside.
  • Add the carrots, celery, onion and garlic to the pot and cook, stirring. Sprinkle over the thyme and 1/2 teaspoon black pepper. Reduce the heat to low and cook the veggies slowly, 3 to 4 minutes.
  • Dice the chicken into very small pieces, then add them to the pot. Add the broth, bouillon cubes and 2 cups water and raise the heat to bring it to a gentle boil. Simmer for 10 minutes. Turn off the heat and stir in the noodles.
  • Serve piping hot with a sprinkling of parsley over each bowl.
