1 lb penne pasta, cooked aldente
2 tablespoons extra virgin olive oil
1 onion, finely chopped
4 garlic cloves, crushed and chopped
2 (28 ounce) cans crushed tomatoes
1 pinch hot pepper flakes
3/4 cup vodka (top shelf)
salt and pepper
2 tablespoons fresh parsley, chopped
3/4 cup heavy cream
parmigiano-reggiano cheese

Steps:

  • Put the olive oil into the pan and add the onions and garlic.
  • Turn on the heat to medium-low and gently cook for a few minutes.
  • Add the red pepper flakes cook 1 minute add crushed tomatoes.
  • Raise the heat to medium and bring the mixture to a boil.
  • Add the vodka and a pinch of salt and pepper simmer uncovered for about 8 minutes over medium-low heat.
  • Add the cream and lower the heat, add drained pasta and toss in parsley.
  • Stir to coat well and grate a generous amount of parmesan into the pasta using our microplane grater.
  • Serve immediately sprinkled with more parmesan, and red pepper flakes.

This is one that I adopted from Emeril. It's actually a recipe I've been making for years and then found his. I always use a great quality hot turkey or hot chicken italian sausage for this and find that it's just as good as the real deal, however, the true recipe calls for real hot italian sausage. I make it a bit spicier and usually serve this with penne or farfalle. If I don't spice it up too much, even my 2 and 4 year old love this one.

1 lb spaghetti
2 tablespoons olive oil
1 lb hot Italian turkey sausage, casing removed and crumbled
1 cup yellow onion, chopped
1/2 teaspoon salt
1 pinch crushed red pepper flakes
6 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
6 tablespoons vodka
6 tablespoons heavy cream
3 tablespoons fresh basil, minced
1/2 cup parmigiano-reggiano cheese, freshly grated
1 sprig fresh basil, for garnish

Steps:

  • Bring a medium saucepan of salted water to a boil. Add the pasta and cook until just al dente, 5 to 6 minutes. Drain in a colander and return to the saucepan.
  • Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the sausage and cook, stirring, until browned and all pink has disappeared, 3 to 4 minutes. Add the onions, salt, and red pepper flakes and cook, stirring, until the onions are soft and golden, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the tomatoes and cook, stirring, until thick, about 2 minutes. Add the vodka and cook until the sauce reduced by half, 3 to 4 minutes. Stir in the cream and cook until the sauce thickens, about 2 minutes. Stir in the basil and remove from the heat.
  • Toss the sauce with the pasta to coat evenly and transfer to a pasta bowl for serving. Top with cheese and sprig of basil and serve immediately.

6 tablespoons butter (1/3 cup)
1/3 cup unflavored vodka
1 (24 ounce) jar Classico tomato and basil pasta sauce
1 (8 ounce) container heavy cream
1 (16 ounce) package penne or 1 (16 ounce) package ziti pasta, cooked al dente according to package instructions

Steps:

  • In a medium saucepan, combine the butter and vodka. Cook over medium heat just until you can't smell the vodka, about 5 minutes. Add the pasta sauce and cream, stirring until combined, and cook until heated.
  • Serve over cooked pasta.

1 lb penne pasta
1 can(s) (28 oz) of san marzano tomatoes (be sure to look for a label in the can dop certified)
1/2 medium onion
1 clove minced garlic
4 - 5 leaves fresh basil
1 tsp oregano, dried
1/2 c vodka
1/2 c parmesan cheese
1/2 c heavy cream
olive oil

Steps:

  • 1. In a large skillet over high add olive oil, allow to heat, turn heat to medium then add garlic and onions. Cook till translucent. Add tomatoes, basil and oregano allow to simmer for 10 minutes
  • 2. Place pasta pot on stove and bring to boil. While stirring the sauce. When pasta water begins to boil add a good amount of salt to the water, wait for a rolling boil and add pasta. Cook according to directions on package (about 8 mins)
  • 3. While pasta is boiling add vodka allow to cook off (about 2 min) add cream and cheese. Stir and reduce over medium high heat.
  • 4. When pasta is done, drain and add to skillet with the sauce. Stir to coat pasta. Plate and add a few leaves of fresh basil.

4 tablespoons unsalted butter
4 shallots, sliced thin
2 tablespoons fresh thyme, chopped
2 tablespoons fresh basil, chopped
1 1/2 cups heavy whipping cream
1/2 cup vodka
1 tablespoon tomato paste
1/2 cup grated parmesan cheese
1/4 cup combination black and pimento stuffed green olive, sliced
1/4 cup grated parmesan cheese
fresh ground black pepper, to taste
salt
1 lb pasta, cooked and drained

Steps:

  • Melt butter in a skillet over medium heat, add the shallots and saute till tender and starting to colour (approx. 10 minutes).
  • Add the thyme& basil, saute another minute.
  • Add the whipping cream and vodka, stirring to mix.
  • Simmer until the sauce starts to thicken (approx. 10 minutes).
  • Add the tomato paste, 1/2 Cup grated cheese and sliced olives mix, stir to combine.
  • Add mixture to cooked/ drained pasta.
  • Sprinkle the remaining 1/4 Cup grated cheese and pepper on top of the pasta when ready to serve.

1 pound meat ot cheese tortellini
3 tablespoons vodka
1/2 cup heavy cream
1/8 teaspoon red pepper flakes
1 cup bottled marinara sauce
1/4 cup grated parmesan cheese

  • In a large pot of lightly salted boiling water cook tortellini about 12 minutes until tender but still firm, drain and keep warm. While the pasta cooks combine vodka cream and red pepper flakes in a large skillet. Bring to boiling, lower heat simmer 5 minutes until reduced to about half. Stir in marinara sauce heat until barely simmering. Toss torteilli with sauce and half of cheese on serving dish. Top with remaining cheese

2 Tbsp olive oil (not extra virgin)
3 clove garlic, minced
1 onion, diced small
1/2 lb procciutto, sliced thin and then chopped into 1/2-1 inch pieces
1 c vodka
1 Tbsp italian herbs
2 c heavy cream
2 can(s) (28oz) tomato puree
1 Tbsp sugar
1 c romano cheese, grated

Steps:

  • 1. Saute onion and garlic in olive oil until translucent. Add prociutto and saute until it's caramelized and crisp, about 10min.
  • 2. Add vodka and scrape the pan until the pan looks clean underneath and the liquid is a uniform brown. Simmer for about 5min or until it no longer has a boozy smell.
  • 3. Add seasoning and stir. Add cream and tomatoes and incorporate well. Add sugar and stir. Simmer for about 20min on low heat.
  • 4. Add cheese and stir well to avoid cheese clumping at the bottom. Simmer for another 20min or so.
  • 5. Serve mixed with any kind of pasta, but tube-like pastas like rigatoni and penne work best. They seem to hold the sauce better.
  • 6. OPTIONAL: If you have fresh basil, add it with the 3rd step. Don't add it before, as I've found the higher heat seems to give it a bitter flavor, whereas simmering it with the tomatoes and cream at a lower heat brings out the lovely oils!
