HEARTY BRISKET TACOS WITH PINK PICKLED ONIONS



Hearty Brisket Tacos with Pink Pickled Onions image

3 tablespoons canola or vegetable oil
One 3- to 4-pound piece brisket
Kosher salt and freshly ground black pepper
3 tablespoons canola or vegetable oil, for searing
1 large onion, sliced
2 large carrots, large dice
2 ribs celery, large dice
4 cloves garlic, minced
2 cups beef broth
1/2 orange, juiced
1/2 cup red wine
2 bay leaves
One 26.46-ounce package crushed tomatoes, such as Pomi
Tortillas, warmed if desired, for serving
Pink Pickled Onions, recipe follows
Queso fresco, lime wedges, cilantro leaves, hot sauce, salsa, sour cream, shredded purple cabbage tossed with a splash of vinegar, lettuce and any other fixings you'd like, for serving
1 cup warm water
1/2 cup apple cider vinegar
1 1/2 tablespoons sugar
Kosher salt
1 large red onion, thinly sliced
Hot sauce, for seasoning

Steps:

  • Preheat the oven to 325 degrees F.
  • Season the brisket on both sides with salt and pepper. Heat an oven-safe Dutch oven over medium-high heat and coat the bottom with canola oil. Sear the brisket until browned on each side, 4 to 6 minutes. Remove and set aside. Add the onion, celery and carrots to the pot and cook until soft, 5 to 7 minutes. Add the garlic and cook, stirring, for 2 more minutes. Return the brisket to the Dutch oven, fat-side up. Add the broth, orange juice, wine, bay leaves and tomatoes. Cover and place in the oven until fork-tender, 3 to 4 hours.
  • Remove the brisket from the pot and place it on a cutting board. Slice thinly and then shred using two forks. Remove the bay leaves and discard. Return the shredded brisket to the pot and simmer until ready to serve, about 10 minutes.
  • Assemble your tacos with the tortillas, brisket and Pink Pickled Onions. Add all your favorite toppings and enjoy!
  • Whisk together the water, vinegar, sugar and 1 teaspoon salt. Add the onion, cover, and let sit at room temperature for 1 hour or in the refrigerator overnight. add tabasco sauce to taste.

2 lbs red onions, thinly sliced,separated into rings
6 sprigs fresh rosemary (4-inch)
2 cups champagne vinegar or 2 cups white wine vinegar
1 1/2 cups water
1 cup sugar
1 1/2 tablespoons whole mixed pickling spices
2 teaspoons kosher salt

Steps:

  • Place 1/3 of onions in large (at least 2-quart) jar with tight-fitting lid.
  • Add 2 rosemary sprigs.
  • Repeat layering twice more with remaining onions and rosemary.
  • Bring vinegar, 1 1/2 cups water, sugar, pickling spice, and salt to boil in medium saucepan over high heat, stirring until sugar dissolves.
  • Reduce heat and simmer 2 minutes, stirring often.
  • Pour hot liquid over onions, pushing onions down into liquid.
  • If necessary, add just enough cold water to cover onions.
  • Cool.
  • Place lid on jar; refrigerate at least 1 day.
  • (Can be made 2 weeks ahead; keep chilled.).

1/2 lemon
2 bay leaves
1 cup white wine
6 cups water
10 black peppercorns
Salt
4 pounds Floridian red snapper fillets, trimmed and portioned into 8 servings
Key Lime Sauce, recipe follows
Pickled Pink Onions, recipe follows
Purple Potatoes, recipe follows
8 medium sized purple Peruvian purple potatoes, sliced into 1/4-inch rings
Salt and white pepper
3 tablespoons butter
1 tablespoon diced shallots
1/2 pound tatsoi, spinach, mizuna, pea tendrils, or any other leafy green
2 tablespoons canola oil
1 red onion, sliced
1/2 tablespoon sugar
1/4 cup orange juice
1 teaspoon orange zest
4 tablespoons red wine vinegar
Salt and white pepper
1/2 cup light rum
4 Key limes, quartered
1 shallot, sliced
4 cloves garlic, smashed
1/2 cup white wine
1/2 teaspoon turmeric
1 teaspoon annatto seeds
1 tablespoon sriracha sauce
2 cups heavy cream
Salt
Cornstarch, if needed to thicken sauce

Steps:

  • In a shallow pan, over high heat, combine all the ingredients for the court bouillon and bring to a simmer. Season generously with salt.
  • Place 4 of the snapper fillets into the court bouillon, making sure that they are fully submerged. The liquid should remain just below a simmer. Cook the fish for about 8 minutes until cooked through and remove to a plate. Repeat this with the rest of the fillets. Serve with the purple potatoes, pickled pink onions and the key lime sauce.
  • Place the potatoes in a medium pot and fill with cold water to cover. Season the water with salt and bring to a boil. Cook until the potatoes are tender but not falling apart, about 15 minutes. Drain the potatoes and toss lightly with 2 tablespoons butter.
  • Meanwhile, bring another pot of water to a boil and season with salt.
  • In a medium saute pan, over medium heat, add 1 tablespoon of butter and shallots. Cook the shallots until soft but not brown. Season with pepper.
  • Place the tatsoi or other leafy green into the boiling water and cook for about 20 seconds. Drain well. Add the tatsoi to the shallots and butter and toss.
  • In a saute pan, over medium heat, add the oil. Add the onions and toss to coat with oil. Reduce heat to medium and cook for 2 minutes. Add the sugar and cook for 2 more minutes. Add the orange juice, zest, and red wine vinegar and cook until nearly all the liquid has reduced. Season with salt and white pepper. Set aside until ready to serve.
  • In a small saucepan, away from the heat, add rum, limes, shallots, and garlic. Place the saucepan over medium heat and allow the rum to flame until it self extinguishes. Add the wine and reduce by half. Add the turmeric, annatto seeds, sriracha and cream and simmer to reduce, about 5 minutes. Season with salt. Strain the sauce and keep warm. If the sauce is too thin, it can be thickened with a little cornstarch before straining.

3 large garlic cloves, minced
⅓ cup fresh lime juice
Salt and pepper, to taste
6 tablespoons extra-virgin olive oil
1 tablespoon ground cumin
2 pounds (1 to 1 1/4-inch-thick) New York strip or leanest rib-eye steaks
1 red bell pepper, seeded and quartered
1 yellow bell pepper, seeded and quartered
½ large red onion, thinly sliced
2 tablespoons rice wine vinegar
12 cups arugula or other prewashed baby greens
½ cup light sour cream

Steps:

  • Mix garlic and lime juice; set aside 3 Tbs. of mixture for a post-grill marinade. For dressing, add a generous pinch of salt and pepper to the remaining lime juice mixture and slowly whisk in oil; set aside.
  • Mix cumin, salt and pepper in a small dish. Rub steaks on both sides with oil, and season with cumin mixture. Brush peppers with oil, then season with salt and pepper. In a small bowl, combine onion with vinegar and a pinch of salt. Set all aside.
  • Build a fire on only one side of grill (to conserve charcoal). When coals are covered with white ash, place steak and peppers on rack over direct heat, cover and grill until steaks are well seared, 3 to 4 minutes per side for medium to medium-rare meat.
  • Transfer steaks to plate and immediately drizzle with reserved lime mixture. Transfer peppers to a cutting board, and cut each quarter in thirds to get 24 pieces of pepper. Let sit 5 minutes or up to 1 hour. Thinly slice steak across grain. Toss greens with dressing. Arrange in six shallow bowls. Top with steak, peppers, pickled onions and a dollop of sour cream.

6 4-inch fresh rosemary sprigs
2 cups Champagne vinegar or white wine vinegar
1 1/2 cups water
1 cup sugar
1 heaping tablespoon mixed pickling spice
2 teaspoons coarse kosher salt

Steps:

  • Place 1/3 of onions in large (at least 2-quart) jar with tight-fitting lid. Add 2 rosemary sprigs. Repeat layering twice more with remaining onions and rosemary.
  • Bring vinegar, 1 1/2 cups water, sugar, pickling spice, and salt to boil in medium saucepan over high heat, stirring until sugar dissolves. Reduce heat and simmer 2 minutes, stirring often. Pour hot liquid over onions, pushing onions down into liquid. If necessary, add just enough cold water to cover onions. Cool. Place lid on jar; refrigerate at least 1 day. WILDLY PINK PICKLED RED ONIONS

Wildly pink onions... these sound like just the thing to top a salad, a sandwich or even a creamy winter potaot soup with (diced of course LOL). Chef Tory McPhail of Commander's Palace shared the recipe for these wildly pink onions in The Times-Picayune. I think I'll be canning into pint jars for us though. Love the grnadine idea - that'll turn 'em pink for sure.

3 quarts water
1 quart vinegar
1/2 cup salt
2 1/2 cups sugar
2 tablespoons pickling spices, wrapped in cheesecloth
3 red onions, shaved (large ones)
2 ounces grenadine (optional)

Steps:

  • Sterilize a 1-quart Mason jar. Bring first 5 ingredients to a boil. Add onion and return to a boil. Turn off heat. Add grenadine.
  • Transfer hot onions to jar. Top up jar with liquid, leaving ½-inch head space. Place top and band on jar. Place jar in boiling water to cover for 45 minutes.
  • Remove jar and let cool at room temperature. Tighten lid all the way.

Smoked Salmon and Chive Mascarpone Mousse with Pink Pickled Onions image

1 teaspoon unflavored gelatin
2 tablespoons fresh lemon juice
1 1/2 cups mascarpone cheese* (about 3/4 pound)
3/4 cup sour cream
2 hard-cooked large eggs
1 tablespoon drained bottled horseradish, or to taste
3/4 pound sliced smoked salmon*
1/2 cup chopped fresh chives
about 2 cups pink pickled onions (recipe follows)
For the pickled onions:
2 medium red onions, chopped
1/2 cup cider vinegar
1 1/2 teaspoons salt
Garnish: chive blossoms
Accompaniment: Melba toasts and/or sesame flatbread
*available at specialty foods shops and some supermarkets

Steps:

  • To prepare the salmon:
  • In a small saucepan sprinkle gelatin over lemon juice and soften 10 minutes. In a bowl with an electric mixer beat together mascarpone and 1/2 cup sour cream until combined well. Quarter eggs and with back of a spoon force through a coarse sieve into mascarpone mixture. Add horseradish and stir well.
  • Add remaining 1/4 cup sour cream to gelatin mixture and heat over moderately low heat, stirring, just until gelatin is dissolved. Add gelatin mixture to mascarpone mixture and stir well.
  • Cut about one third salmon into strips and arrange 1 in every other ridge of a 3-cup brioche or other mold, letting ends hang over edge. Chop remaining salmon into 1/2-inch pieces and fold with chives into mascarpone mixture. Spoon mousse into mold and fold ends of salmon strips over top. Chill mousse, covered, at least 2 hours, or until firm, and up to 2 days. Run a thin knife along inside of each ridge of mold and dip mold into a bowl of hot water a few seconds. Invert a plate over mold and invert mousse onto it.
  • With a slotted spoon arrange pickled onions decoratively on and around mousse touching each other, and keeping covered with plastic wrap.
  • Brush mushroom rolls all over with melted butter and rearrange, seam sides down and barely touching, in pan. Chill mushroom rolls, covered, at least 1 hour and up to 1 day.
  • Preheat oven to 425°F.
  • Bake mushroom rolls in upper third of oven 15 minutes, or until golden. Halve rolls crosswise and tie a chive around each half.
  • To make the pink pickled onions:
  • In a saucepan barely cover onions with cold water. Bring water to a boil and simmer 1 minute. Drain onions in a colander and return to pan with vinegar, salt, and cold water to just cover. Bring liquid to a boil and simmer 3 minutes. Remove pan from heat and cool onions in liquid. Pickled onions may be made 1 week ahead and chilled in liquid, covered. Makes about 2 cups.

1 medium red onion
1 medium sweet white onion
12 limes
1 tablespoon white sugar
1 tablespoon sea salt

Steps:

  • 1. Mix the sugar and salt together.
  • 2. Slice the onions thin and place them in a glass bowl, add the sugar/salt mixture and toss to coat. Let sit on the counter for 15 minutes tossing occasionally.
  • 3. Juice the limes and pour over the onions. Let sit about 1 hour on the counter. Mixing every 15 minutes or so.
  • 4. Then cover and place in the refrigerator. You'll want to mix or toss the onion, lime juice mixture oh about every few hours the first couple of days.
  • 5. Once you see the red onions start to bleed out some color & start to turn rosy you can leave them in the lime juice " no more than a couple of days " till you are ready to use them.
  • 6. When you are ready to use them, drain them from the lime juice, " do not discard the juice " freeze it for another use.
  • 7. These should last for several weeks in the refrigerator.

2 large red onions, thinly sliced
4 c water
4 Tbsp vinegar, divided
2 Tbsp vegetable oil
1 tsp mustard seeds
1/2 tsp cumin seeds

Steps:

  • 1. In a 2 to 3 quart saucepan over high heat, bring the water and 3 Tablespoons of the vinegar to a boil. Add the sliced onions, and push them down into the liquid.
  • 2. Return to a boil and cook, uncovered for 2 to 3 minutes. Drain well and let cool. --- In a large bowl combine onions with remaining ingredients, salting to taste. Stir to coat evenly.
  • 3. Cover loosely with foil and refrigerate until well chilled- even overnight.

350g Jersey Royal potatoes
1 mint sprig
4 eggs
handful wild garlic leaves (or 2 garlic cloves, crushed)
100g watercress
50ml double cream
250g ricotta , drained using a sieve
1 lemon , zested
120g wensleydale or cheddar, grated
pinch nutmeg
1 tbsp rose harissa
200g plain flour
120g cold butter , cut into cubes
2 tsp vodka
1 red onion , sliced
125ml rice wine or cider vinegar
25g sugar
½ tsp sea salt
½ tsp yellow mustard seeds

Steps:

  • First, make the pickled onions. Put the onion in a bowl, then bring the vinegar, sugar, salt, mustard seeds and 50ml water to a boil in a saucepan. Stir, on a medium heat, to dissolve the sugar. Once dissolved, remove from the heat and pour over the onions. Set aside for at least 30 mins.
  • Meanwhile, make the pastry. Mix the flour with a pinch of sea salt in a bowl. Add the butter and use your fingers to lightly bring it together to a breadcrumb texture. Don't worry if there are some big chunks, this will help make it light and flaky. Stir in the vodka, then pour over 2 tbsp ice cold water and use a butter knife to bring the dough together. Use your hands to form into a ball. If it needs more liquid, add a dash more iced water. Turn out onto a floured worksurface and knead briefly, until smooth and pliable. Squash it into a disc, then wrap in baking parchment and chill for 30 mins.
  • Heat the oven to 200C/180C fan/gas 6. Put the potatoes and mint in a saucepan and cover with cold water. Add a big pinch of salt and bring to the boil, then simmer for 10 mins until tender. Turn off the heat and allow the potatoes to cool in the water.
  • Roll the pastry out until about 5mm in thickness, then transfer to a loose-bottomed 20cm tart tin. Trim the edges with a knife, then chill for 10 mins until firm. Prick the base with a fork, line with crumpled baking parchment and fill with baking beans or rice. Bake for 20 mins.
  • Remove the baking beans and parchment. Whisk one of the eggs in a bowl, then brush all over the pastry. Bake for 10 mins more, then remove from the oven.
  • Blitz the remaining eggs and egg wash, the wild garlic, watercress and cream to a purée in a food processor. Transfer to a bowl and stir in the drained ricotta and lemon zest. Add most of the cheese, nutmeg and a pinch of salt. Slice the potatoes into bite-sized pieces and arrange half of them in the tart case. Using a teaspoon, dot in the harissa. Pour over the green egg mixture and nestle in the remaining potatoes. Scatter over the rest of the cheese.
  • Bake for 35-40 mins. Allow to rest for at least 20 mins before you remove it from the tin and slice. Serve with a watercress salad, if you like, and the pink pickled onions.
