SPICED WALNUT CARROT CAKE WITH PINEAPPLE

2 1/2 cups grated carrot
1 1/2 cups walnut pieces
1 cup chopped pineapple, fresh or canned
1 cup golden raisins
1 cup shredded coconut
2 cups flour
2 teaspoons cinnamon
1/2 teaspoon nutmeg
2 teaspoons baking soda
1/2 teaspoon salt
4 eggs
1 1/2 cups sugar
1 1/2 cups vegetable oil
Powdered sugar

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, toss together the carrots, walnuts, pineapple, raisins, and coconut with 1/2 cup of the flour to coat them and keep them from sinking to the bottom of the cake batter.
  • Sift together the remaining 1 1/2 cups flour, cinnamon, nutmeg, baking soda, and salt.
  • In a mixer with a whip attachment, mix the eggs and sugar until light and fluffy (the "ribbon" stage) then drizzle in the vegetable oil. Fold in the dry ingredients and pour over the carrot mixture. Fold carefully to blend, then pour the batter into a buttered, floured 10 by 3-inch cake pan containing a circle of parchment paper in the bottom. Bake until firm to the touch in the center, about 1 to 1 1/4 hours. Let cool on a rack and then turn out. Dust the top with powdered sugar and cut into wedges to serve.

This cake was actually dubbed "Mexican Wedding Cake", by a family member who used to bring it to family get togethers. I dont think that its an actual mexican recipe, but..Nevertheless it's a scrumptious one.

1 (20 ounce) can crushed pineapple (including juice)
2 cups sugar
2 cups flour
3 eggs
2 teaspoons baking soda
1 pinch salt
1 cup chopped walnuts
2 teaspoons vanilla
1/2 cup margarine (softened)
1 (8 ounce) package cream cheese
3/4 cup powdered sugar
2 teaspoons vanilla

Steps:

  • Mix all ingredients well with a mixer until smooth.
  • Bake in ungreased 9x13 pan at 350 for 35-45 minutes or until golden.
  • Let cool.
  • To make frosting mix all ingredients with a mixer 2 to 3 minutes on low.
  • Then beat on high for 3 to 4 minutes until creamy.
  • Frost.
  • Then enjoy!

250 g white spelt flour
150 g grated carrots
225 g crushed pineapple (dont use the whole tin)
170 g panella/rapadura sugar
175 ml coconut oil
4 eggs (lightly beaten)
1 1/2 tsp pumpkin pie spices
20 g shredded coconut
15 g walnut halves (chopped roughly)
20 g raisins
2 pkg cream cheese
1/3 c pineapple juice (from the canned pineapple)
1/4 c powdered sugar

Steps:

  • 1. Pre-heat oven to 350F. Grease and flour a bundt cake pan.
  • 2. Mix all ingredients (except cream cheese, pineapple juice and powdered sugar) together and gently pour into cake pan.
  • 3. Bake 45 minutes or until skewer comes out clean. Sit for 5 minutes then turn out onto cooling rack to cool completely.
  • 4. Beat the room temperature cream cheese till fluffy. Add half the powdered sugar and half the pineapple juice and beat, then add remaining and beat till smooth and runny.
  • 5. Pour frosting over cooled cake and top with crushed walnuts.

1 c walnuts, lightly chopped
1 can(s) crushed pineapple (20 oz)
1 heaping teaspoon of baking soda
FROSTING
1 bar cream cheese
1 stick butter, softened
1 c powdered sugar

Steps:

  • 1. Grease and flour a bunt pan, Preheat oven to 325.
  • 2. Mix your dry ingredients together and set aside. Add the wet ingredients to the dry.
  • 3. Pour in to well greased and floured bunt pan, and bake at 325. I never recieved a baking time from him, I just kept an eye on the cake and stuck a tooth pick in to check for doneness. .
  • 4. Let cake sit for about 10 min, remove cake from pan and let cool completely. Make frosting , cover your cake and enjoy.

2 tsp baking soda
1 tsp vanilla
1 c crumbled walnuts
8 oz cream cheese
1/2 c butter

  • 1. heat oven to 350
  • 2. slightly beat eggs - add undrained pineapple, sugar, flour, baking soda, vanilla, and walnuts.
  • 3. pour into ungreased pan and bake for 25-30 minutes.
  • 4. This cake is very moist so do not remove from pan - place in refrigerator for at least an hour before frosting.

  • 5. Bake for 35-40 minutes. This will be very moist to the touch.
