1 can (20 ounces) pineapple tidbits
1/2 cup sugar
1 tablespoon cornstarch
2 teaspoons butter
1 teaspoon white vinegar
Pinch salt
Vanilla ice cream
Chopped walnuts

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a saucepan, combine sugar and cornstarch; stir in pineapple juice until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened and bubbly., Remove from the heat; stir in the butter, vinegar, salt and pineapple. Serve over ice cream; sprinkle with walnuts.

A very versatile dessert topping. It's good on pound cake, angel food cake, ice cream, or by itself. Easy to make and fancy enough for company--especially if you're in a hurry.

1 good sized fresh pineapple (peeled, cored, and cut into cubes)
1 cup brown sugar (packed)
1/4 cup butter

Steps:

  • Melt butter in skillet (I use an electric one because it's easier to control the heat).
  • Add brown sugar and stir till sugar and butter are combined.
  • Add pineapple and bring to a boil.
  • Turn heat to medium (300°) and continue to cook till syrupy and thickened. This could take up to 30 minutes depending on ripeness of the pineapple.
  • Serve warm over whatever you like.

1/2 cup crushed pineapple
6 tablespoons pineapple juice
1/4 cup sugar
2 tablespoons light corn syrup
1 dash Angostura bitters
1 tablespoon candied ginger, chopped

Steps:

  • In a saucepan, combine all ingredients.
  • Bring to a boil over high heat; reduce heat to med-high, stirring until reduced to about 1 cup (about 3-5 minutes).
  • Place in container with lid and allow to chill in refrigerator.
