3/4 cup butter, divided
2/3 cup packed brown sugar
1 jar (6 ounces) maraschino cherries, drained
1/2 cup chopped pecans, toasted
1 can (20 ounces) unsweetened pineapple tidbits or crushed pineapple, undrained
1 package yellow cake mix (regular size)
Vanilla ice cream, optional

Steps:

  • In a microwave, melt 1/2 cup butter; stir in brown sugar. Spread evenly onto bottom of a greased 5-qt. slow cooker. Sprinkle with cherries and pecans; top with pineapple. Sprinkle evenly with dry cake mix. Melt remaining butter; drizzle over top., Cook, covered, on high until fruit mixture is bubbly, about 2 hours. (To avoid scorching, rotate slow-cooker insert a half turn midway through cooking, lifting carefully with oven mitts.), Turn off slow cooker; let stand, uncovered, 30 minutes before serving. If desired, serve with ice cream.

2/3 cup packed brown sugar
9 slices pineapple in juice (from 20-oz can), drained
9 maraschino cherries without stems, if desired
1 1/3 cups Gold Medal™ all-purpose flour
1 cup granulated sugar
1/3 cup shortening
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 egg

Steps:

  • Heat oven to 350°F. In 9-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in center of each pineapple slice.
  • In medium bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm. Store cake loosely covered.

1 can (20 oz) pineapple slices in juice, drained, juice reserved
1 jar (6 oz) maraschino cherries without stems, drained

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). In 13x9-inch pan, melt butter in oven. Sprinkle brown sugar evenly over butter. Arrange pineapple slices on brown sugar. Tho mom never made it this way it brought back memories and is one that I keep saying I'm going to try as this sounds very good. 1 teaspoon(s) vanilla
20 ounce(s) can crushed pineapple, divided
2 1/4 cup(s) all purpose flour
1 1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1/2 cup(s) finely chopped walnuts
GLAZE
1/3 cup(s) evaporated milk
3/4 cup(s) confectioners' sugar
1/2 cup(s) butter or margarine

Steps:

  • Preheat oven to 350 degrees. Beat eggs w/an electric mixer;gradually add sugar and vanilla. Continue beating mixture until it is a lemon color. Change speed to low and alternately add half the pineapple (undrained) and dry ingredients.
  • Spread batter on a lightly greased 15x10x3/4" jelly roll pan. Sprinkle walnuts over top. Bake 18-20 or until top is golden brown. Pour remaining pineapple (slightly drained) over cake.

1 1/2 cups all-purpose flour, (spooned and leveled)
2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons unsalted butter, room temperature, plus 3 tablespoons (cut into small pieces) for preparing the top
1 cup sugar, plus 2/3 cup for preparing the top
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
7 thin rounds cored pineapple

Steps:

  • Preheat oven to 350 degrees. In a large bowl, combine flour, baking powder, and salt; set aside.
  • With an electric mixer, cream 6 tablespoons butter and 1 cup sugar until light and fluffy. Add eggs and vanilla; beat until combined. Add flour mixture in 3 additions alternately with the milk in 2, beginning and ending with the flour. Mix just until combined
  • In a 10-inch cast-iron (or ovenproof nonstick) skillet over low, add remaining sugar and butter and cook, stirring, until the mixture is a light caramel color. Remove from heat and top with pineapple rounds.
  • Carefully spoon batter over pineapples in skillet. Bake until a toothpick inserted in the center comes out clean, about 45 minutes.
  • Let cake cool in pan 5 minutes. Run a knife around edge of cake, then carefully invert onto a platter. Serve warm or at room temperature.
