Pineapple-Glazed Chicken with Jalapeño Salsa image

Number Of Ingredients 9

1/4 cup pineapple juice
2 tablespoons (packed) brown sugar
1 tablespoon yellow mustard
3/4 cup 1/4-inch cubes fresh pineapple
3 tablespoons finely diced red bell pepper
3 tablespoons chopped fresh cilantro
1 1/2 tablespoons finely chopped red onion
1 1/2 tablespoons canned sliced jalapeño chiles, drained, coarsely chopped
4 boneless chicken breast halves with skin (1 3/4 pounds total)

Steps:

  • Preheat oven to 400°F. Bring pineapple juice, brown sugar, and mustard to boil in small saucepan, stirring to dissolve sugar. Boil until glaze has thickened slightly, about 1 minute. Season with salt and pepper.
  • Mix pineapple, red pepper, cilantro, onion, and chiles in medium bowl. Season with salt and pepper.
  • Line baking sheet with foil. Place chicken on sheet and brush with glaze. Bake 15 minutes. Brush again with glaze, then broil until cooked through and golden, watching closely to avoid burning, about 5 minutes longer. Let rest 5 minutes.
  • Spoon salsa over chicken and serve.

1 Tbsp yellow mustard
3/4 c fresh pineapple, cubed 1/4-inch dice
3 Tbsp finely diced red bell pepper
3 Tbsp chopped fresh cilantro
1 1/2 Tbsp finely chopped red onion
1 1/2 Tbsp canned sliced jalapeno chiles, drained, coarsely chopped
4 boneless chicken breast halves with skin (1 3/4 pounds total)

2 unpeeled fresh pineapple slices, 1/2 inch thick
2 large fresh jalapeño peppers
1 large orange bell pepper
2 Tbsp. KRAFT Zesty Lime Vinaigrette Dressing
1 Tbsp. chopped fresh cilantro

Steps:

  • Heat greased grill to medium heat.
  • Grill pineapple and peppers 7 to 8 min. or until pineapple is lightly browned and peppers are charred on all sides, turning occasionally.
  • Place peppers in bowl; cover with plastic wrap. Let stand 20 min.
  • Remove and discard charred skins from peppers. Cut peppers in half; remove and discard seeds. Cut peels and cores from pineapple slices; discard. Finely chop peppers and pineapple; place in medium bowl.
  • Add dressing and cilantro to pepper mixture; mix well.

1 small ripe pineapple
1/4 cup scallion, minced
3 tablespoons cilantro, chopped fresh
3 tablespoons lime juice
2 tablespoons jalapeno peppers, minced fresh (about 1 large)
1 tablespoon canola oil
1/4 teaspoon salt
fresh ground pepper
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper, to taste
1 lb tilapia fillet, cut into 4 portions (haddock or other white fish fillets)
1 tablespoon olive oil, extra-virgin

Steps:

  • To prepare salsa: Cut the top and skin off pineapple, remove the eyes and core. Finely dice the pineapple (you will have about 4 cups diced pineapple) and place in a medium bowl. Add scallions, cilantro, lime juice, jalapeno and oil. Toss to mix. Season with 1/4 teaspoon salt and pepper. Serve immediately or cover and refrigerate for about 1 hour to allow flavors to blend.
  • To prepare fish: Combine flour, 1/2 teaspoon salt and 1/4 teaspoon pepper in a shallow dish; thoroughly dredge fillets (discard any leftover flour).
