1 cup water
0.5 cup sugar
0.667 cup thinly sliced unpeeled fresh ginger (about 4 ounces)
2.5 cup unsweetened pineapple juice, chilled
3 tablespoon lemon juice
3 tablespoon lime juice
1 1 bottle club soda, chilled
Ice cubes
Lime slices and/or pineapple wedges

Steps:

  • In a small saucepan combine the water, sugar, and ginger. Bring to boiling, stirring until sugar is dissolved; reduce heat. Simmer, uncovered, for 10 minutes. Cool ginger mixture to room temperature. Strain ginger mixture through a fine-mesh sieve into a bowl.* If desired, add rum. Cover with plastic wrap; chill for at least 2 hours.
  • In a large punch bowl or pitcher combine the chilled ginger mixture, pineapple juice, lemon juice, and lime juice. Stir in club soda. Add ice cubes and lime slices and/or pineapple wedges.

750ml pineapple juice
1 lime, juiced
small bunch of mint, woody stalks removed
ice
750ml ginger beer
6-8 mint sprigs
6-8 whole star anise (optional)

Steps:

  • Pour the pineapple juice and lime juice into a blender. Add the mint and a couple of handfuls of ice, then blitz until the ice is crushed. Pour into tumblers filled with more ice, then top up with the ginger beer.
  • Garnish each glass with mint and star anise.

1/4 cup fresh lemon juice (3 to 5 lemons)
1/4 cup fresh lime juice (4 to 6 limes)
3 cups sparkling water, chilled
4 cups ice cubes
Garnish: lemon and lime slices

Steps:

  • Make ginger syrup:
  • Bring water, sugar, and ginger to a boil in a 1- to 1 1/2-quart saucepan, stirring until sugar is dissolved. Simmer, uncovered, stirring occasionally, 10 minutes, then remove from heat and steep, uncovered, 15 minutes. Pour syrup through a sieve into a bowl, discarding ginger. Chill, covered, until cold, about 2 hours.
  • Make punch:
  • Stir together ginger syrup and fruit juices in a punch bowl or pitcher. Stir in sparkling water and ice.

2 cups fresh orange juice
2 cups unsweetened pineapple juice
1 tablespoon fresh ginger, grated
1 liter ginger ale, chilled
thinly sliced orange
lime, quartered
lemon, quartered
orange, cut into eighths

Steps:

  • CITRUS ICE CUBES: Fill each compartment of an ice cube tray with 1 piece of cut up fruit. Fill with water and freeze until solid.
  • PUNCH: In a large pitcher combine the punch ingredients except for the ginger ale and sliced oranges. Cover and chill for at least 2 hours but up to 24 hours.
  • Strain and discard ginger and the pulp.
  • Slowly stir in the ginger ale. Serve the punch over citrus ice cubes in chilled glasses.
  • Garnish with scewered orange slices.
  • Each serving approximately 3/4 cup.

Steps:

  • While fruit is still frozen, dice into small pieces. Work carefully yet quickly to keep fruit in a frozen state.

1 (46 ounce) can pineapple juice
2 -3 cups sugar (to taste)
2 (2 1/3 ounce) packages kool-aid unsweetened lemonade mix
3 quarts water
1 (12 ounce) can frozen orange juice concentrate, thawed and undiluted
1/3 cup lemon juice
1 quart ginger ale, chilled

Steps:

  • In a very large container, add the pineapple juice, sugar, and unsweetened lemonade Kool-Aid; stir until the sugar dissolves.
  • Add in 3 quarts of water, orange juice concentrate, and lemon juice; stir to combine.
  • Chill for 4 hours.
  • Right before ready to serve, add in the ginger ale and stir.
  • To make an ice ring--reserve 4 cups of punch before you chill it.
  • Place assorted fruit in the bottom of a 6-cup ring mold.
  • Pour 4 cups of punch into mold and freeze for 8 hours.
