1/2 cup unsalted butter, softened (1 stick)
1 cup all-purpose flour
1/2 cup granulated sugar
pinch salt, optional and to taste
1 large egg
1/2 cup granulated sugar
1/3 cup sour cream (plain or vanilla Greek yogurt may be substituted)
1 1/2 teaspoons McCormick Pure Vanilla Extract
1/4 cup all-purpose flour
one 20-ounce can pineapple chunks, drained (fresh or frozen could likely be substituted)

Steps:

  • Preheat oven to 350F and line an 8×8-inch pan with aluminum foil, spray with cooking spray; set aside.
  • To a large bowl, add the butter, 1 cup flour, 1/2 cup sugar, and optional salt. Using two forks or a pastry cutter, cut butter into dry ingredients until a sandy mixture with peas-sized buttery bits forms.
  • Reserve 3/4 cup of this mixture; set aside.
  • Transfer remaining mixture into prepared pan and using your fingertips or the back of a spatula, lightly press crumbs evenly into pan to form a crust.
  • Bake for 10 minutes. While crust bakes, make the filling.
  • In a large bowl (same one used to make the crust mixture is fine) add the egg, 1/2 cup sugar, sour cream, vanilla extract, 1/4 cup flour, and whisk until smooth; set aside.
  • Remove crust from oven and top evenly with pineapple chunks. About 90% of the surface area will be covered with pineapple; chunks will be very close to each other but not quite touching.
  • Carefully and evenly pour the sour cream mixture over the pineapple, making sure to get it into the corners.
  • Evenly sprinkle the reserved crust mixture over the top to create the crumble topping.
  • Bake for about 35 minutes, or until edges and top are set.
  • Place pan on top of a wire rack and allow bars to cool for at least 1 hour before slicing and serving.

3 cups chopped fresh or frozen rhubarb (about 3/4 pound)
1 cup coarsely chopped fresh pineapple
1/2 cup packed brown sugar
4 tablespoons water, divided
1 teaspoon lemon juice
2 tablespoons cornstarch
1/2 teaspoon coconut extract, optional
CRUST AND TOPPING:
2 cups old-fashioned oats
1-1/2 cups all-purpose flour
1 cup sweetened shredded coconut
1/2 cup packed brown sugar
1/2 teaspoon salt
1 cup butter, melted

Steps:

  • Preheat oven to 350°. In a large saucepan, combine rhubarb, pineapple, brown sugar, 1 tablespoon water and lemon juice; bring to a boil. Reduce heat; simmer, uncovered, until rhubarb is tender, 4-5 minutes., In a small bowl, mix cornstarch and remaining water until smooth; stir into rhubarb mixture. Return to a boil; cook and stir until thickened, 1-2 minutes. Remove from heat; if desired, stir in extract., In a large bowl, mix oats, flour, coconut, brown sugar and salt; stir in melted butter until crumbly. Press 3 cups crumb mixture onto bottom of a greased 13x9-in. baking dish. Spread with rhubarb mixture. Sprinkle with remaining crumb mixture., Bake until golden brown, 40-45 minutes. Cool in pan on a wire rack. Cut into bars.

1 cup crushed pineapple in juice
1 cup white sugar
2 1/2 tablespoons cornstarch
1 tablespoon butter
1 cup water
3/4 cup shortening
1 cup packed brown sugar
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups rolled oats

Steps:

  • Pineapple Filling:
  • Mix 1 cup crushed pineapple and juice (8 1/4-ounce can), 1 cup sugar, 2 1/2 Tablespoons cornstarch, 1 Tablespoon butter, and 1 cup water in saucepan.
  • Cook until thickened, cool.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Cream together shortening and sugar thoroughly.
  • Stir in flour, baking soda and salt.
  • Mix in rolled oats.
  • Press and flatten half of the mixture over bottom of a 13 x 9 1/2 x 2 inch greased pan.
  • Spread with cooled filling.
  • Top with remaining crumb mixture, patting lightly.
  • Bake 25 to 30 minutes, or until lightly browned.
  • While warm cut into bars and remove from pan.

This is more a heavily modified recipe from Ina Garten (The Barefoot Contessa). She made Raspberry crumble bars. But for the SECOND TIME. Her very same shortbread recipe stuck to my pan...And even the dough was near tasteless. So I just added too it, and changed the filling! I made these for my friends parents, and snuck them...

2 stick unsalted butter (room temp)
3/4 c sugar
1 tsp vanilla
2 1/3 c flour
1/2 tsp salt
10 -12 oz pineapple jam or preserves
CRUMBLE TOPPING
1/3 dough (refer to recipe)
2/3 fruitless granola (usually found in the bulk section)

Steps:

  • 1. Cream the butter and sugar together until thoroughly combined.
  • 2. Sift the flour and salt together and mix. Then add to the butter mixture, mixing until it almost comes together in a ball. Turn the dough out on a board. Lightly pat two-thirds (Reserving 1/3 of the dough) of the dough evenly on the bottom of a 9-inch square baking pan. Spread with the jam. Then, Mix the granola into the remaining dough with your hands. Break the dough into small bits and distribute it on top of the jam, covering most of the surface.
  • 3. Bake bars for about 45 mins at 350. or until lightly browned.
  • 4. Cool for about 2 hours, then cut into 6 bars (or smaller if preferred. And enjoy!! :)

1 (18 ounce) box yellow cake mix
1/2 cup butter, softened, divided
1 1/2 cups quick oats, divided
1 large egg
1 (20 ounce) can pineapple pie filling
1/3 cup brown sugar, packed

Steps:

  • Preheat oven to 350. With mixer or pastry blender, beat cake mix, 5 tablespoons of the butter, and 1 cup of the oats. Mix until crumbly and then set aside 1 cup of this mixture for the topping.
  • Combine egg and the remaining mixture and stir well. Press into 9 x 13" pan that has been greased and floured. Spread the pineapple pie filling evenly over the crust.
  • In the same bowl, combine the reserved crumb mixture, the remaining oats, 3 tablespoons butter and the brown sugar and blend well. Sprinkle over the pineapple filling and bake for about 35 minutes or until light brown on top.

1/2 cup sugar
4 tablespoons cornstarch
1 (20 ounce) can crushed pineapple, well drained
2 teaspoons lemon juice
1/3 cup sliced almonds

  • Heat oven to 350 degrees.
  • In medium bowl combine all crust ingredients.
  • Beat at low speed until mixture is crumbly (2 to 3 minutes). Reserve 1 cup.
  • Press remaining crumb mixture on bottom of greased 13 x 9-inch baking pan.
  • Bake for 14 minutes.
  • Meanwhile, in 2 quart saucepan stir together sugar and cornstarch.
  • Add pineapple and lemon juice. Cook over medium heat, stirring constantly, until thickened (4 to 5 minutes). (Mixture will be very thick.) Spoon filling over baked crust; sprinkle with reserved crumbs.
  • Top with almonds.
  • Bake for 20 to 25 minutes.
