SUNNY'S EASY SHRIMP AND RICE PINEAPPLE BOATS



Sunny's Easy Shrimp and Rice Pineapple Boats image

1 pineapple
1 cup your favorite BBQ sauce
Kosher salt and freshly ground black pepper
1 pound 16/20 shrimp, peeled and deveined
One 10-ounce tray microwaveable basmati or jasmine rice, prepared according to package
1/4 cup chopped fresh cilantro
2 scallions, finely chopped
Zest of 1 lime
Kosher salt and freshly ground black pepper
1/4 cup lightly packed fresh cilantro leaves
Lime wedges, for spritzing

Steps:

  • For the shrimp: Preheat the grill or the oven to 350 degrees F.
  • Prepare the pineapple and sauce. Slice the pineapple in half. Slice the core out of the center and discard. Cut out the flesh, leaving a 1-inch border all the way around. Finely chop two-thirds of the pineapple flesh and set aside in a bowl. Add the remaining pineapple flesh to a blender along with the BBQ sauce. Season with a pinch of salt and a few grinds of pepper, then blend until smooth.
  • Prepare the shrimp. Add the shrimp to an aluminum foil pouch (or create a pouch with aluminum foil), then sprinkle with salt and pepper and pour the pineapple BBQ sauce over the top. Close the pouch and place over the direct heat of the grill, or on the bottom rack of the oven. Cook until a quick peek inside reveals opaque shrimp, 10 to 12 minutes.
  • For the rice: In the bowl with the reserved chopped pineapple, add the rice, cilantro, scallions, zest and salt and pepper to taste. Stir to combine.
  • To serve: Divide and fill both halves of the pineapple with the rice. Remove the shrimp from the pouch and top both pineapple halves equally. Pour the juices from the pouch over everything. Top with the cilantro and serve with lime wedges for spritzing.

PINEAPPLE SWEET POTATO BOATS

Crushed pineapple adds a tasty twist to these twice-baked sweet potatoes. Mini-marshmallows can be used in place of the pineapple if you prefer.

8 medium sweet potatoes
2 cans (8 ounces each) unsweetened crushed pineapple, drained
1/2 cup butter, melted
1 teaspoon salt
1/2 teaspoon each ground cinnamon, ginger and allspice
1/4 teaspoon ground nutmeg
TOPPING:
2 cans (14 ounces each) unsweetened pineapple tidbits, drained
6 tablespoons brown sugar

Steps:

  • Scrub and pierce sweet potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 12-14 minutes or until tender, turning once. , When cool enough to handle, cut a thin slice off the top of each potato and discard. Scoop out pulp, leaving a thin shell. In a large bowl, mash the pulp. Add the crushed pineapple, butter, salt, cinnamon, ginger, allspice and nutmeg; mix well. Spoon into sweet potato shells., Place on a baking sheet. Sprinkle with pineapple tidbits and brown sugar. Bake, uncovered, at 325° for 30-35 minutes or until heated through.

  • Quarter a pineapple lengthwise, leaving the green top on each piece. Slice out the core and discard. Score the flesh down to the skin. If you don't have time to carve out pineapple boats, you can subsitute an 8 1/4 ounce can of crushed pineapple, (drained well) and serve on top of salad greens. Fresh pineapple is much, much better though. There is no actual cook time - it is chilling time.

2 fresh pineapple, halved,cored
2 cups cooked chicken breasts, diced
3/4 cup mayonnaise (must be full fat)
3 tablespoons Amaretto, to taste (almond flavor liqueur)
1 teaspoon salt, to taste
2 tablespoons toasted slivered almonds, plus
more toasted slivered almonds, for garnish
1/2 cup chopped celery

Steps:

  • Hollow out the pineapple halves, leaving behind 4 pineapple boats.
  • Crush enough of the pineapple flesh to make 1 1/4 cups (use a potato masher or pulse briefly in a food processor)- it should be the consistency of canned crushed pinepple; if there is any extra pienapple flesh, reserve for another use.
  • Drain crushed pineapple well over a bowl- save juice for another use.
  • Combine chicken with just 1/4 cup of the mayo, the drained crushed pineapple, 1 Tbsp of the amaretto, the salt, nuts, and celery.
  • Combine remaining 1/2 cup mayo and 2 Tbsp amaretto (or to taste) in a separate small container; cover and chill overnight.
  • Fill pineapple boats evenly with chicken salad mixture, then cover and chill overnight (or at least 6 hours).
  • Before serving, pour dressing over each pineapple boat and sprinkle with additional nuts, if desired.

I love making this for summer lunches. It is so refreshing and light, and truly is simple to prepare. I used to work at a restaurant where this was the favorite lunch item, so I decided to start making it at home, and thanks to the chef who so kindly shared the recipe with me!

2/3 cup pineapple juice
1/2 cup apple juice
1/4 cup orange juice
10 ounces boneless skinless chicken breasts
1 medium pineapple
1 cup strawberry, halved
1 small apple, cored and diced
1/2 cup orange section (no sugar added)
1 tablespoon balsamic vinegar
2 teaspoons grenadine or 2 teaspoons honey
1/4 teaspoon ground allspice

Steps:

  • In a medium saucepan, combine pineapple juice, apple juice, and orange juice; bring to a boil.
  • Add chicken; reduce heat to low and simmer, covered, 10-15 minutes, until chicken is cooked through.
  • Remove from heat; set aside to cool.
  • Reserve cooking liquid.
  • While chicken is cooling, cup pineapple in half lengthwise; remove and discard core.
  • Scoop out pulp, leaving shells intact.
  • Cover shells with plastic wrap; refrigerate until ready to use.
  • Weigh 9 ounces pineapple pulp; reserve remaining pineapple pulp for use at another time.
  • Cut pineapple pulp into chunks.
  • In a large bowl, combine pineapple chunks, strawberries, apple and orange sections, tossing lightly.
  • Cut cooled chicken into chunks or strips; add to pineapple mixture.
  • Strain cooking liquid into small saucepan; add vinegar, grenadine syrup and allspice.
  • Bring liquid to a boil; cook until liquid is reduced to about 1/2 cup.
  • Pour vinegar mixture over chicken mixture; toss well to combine.
  • Refrigerate, covered, at least 1 hour, tossing several times to blend flavors.
  • To serve, fill each pineapple shell with 1/2 the chicken mixture.

1 can canned fruit or 2 cups fresh fruit (peaches, strawberries, pears, etc.)
egg white
sugar
ice cream, as required
coconut, freshly grated or desiccated or fresh cream, as required
slivered almonds
slivered almonds

Steps:

  • Take 4 pineapples and cut each in half, lengthwise making sure that equal stalk and leaves remain in either half.
  • Scoop out centers, leaving only a thin wall inside skins.
  • Dice the scooped out pineapple.
  • Add a tin of canned fruit or fres fruits.
  • Mix fruits liberally with coconut and silvered almonds or pieces of other nuts.
  • Pile this mixture of fruits and nuts into the pineapple boats.
  • Cover with thick slices of left-over sponge cake.
  • Top with a meringue made from egg whites and sugar.
  • Bake in a moderate oven till meringue is crisp and a beautiful rich golden colour.
  • Serve with ice cream or fresh cream!

1 large ripe fresh pineapple, with leaves attached
1 large ripe mango, peeled and cut into bite-size pieces
2 oranges, peeled and cut into bite-size pieces
2 ripe bananas, peeled and cut into bite-size pieces
1 kiwi fruit, , peeled and cut into bite size pieces (optional)
1/2 cup , red or green seedless grape
sprig fresh mint
lime wedges

Steps:

  • 1. Cut the pineapple in half lengthwise keeping the leaves attached. Carefully cut out the fruit as close to the rind as possible, taking care to keep the outside shells intact. Reserve the shells. Cut the pineapple into bite size pieces and put them in a large bowl. 2. Add the mango, oranges, bananas, kiwi, and grapes to the bowl. Mix gently and mound the fruits in the reserved shells. Place the pineapple boats on a large serving platter. Decorate with mint sprigs and garnish with lime wedges.
