Seasoned hamburger and a slice of pineapple are slapped together, and wrapped in bacon. It's that easy, and adds a wonderful flavor to a regular burger! This recipe was one of my grandmother's favorites. We would make these special for her when she would come up to see us.

2 pounds lean ground beef
½ cup prepared barbecue sauce
1 (8 ounce) can sliced pineapple
8 slices bacon

Steps:

  • Prepare grill for indirect cooking.
  • In a large bowl, mix together hamburger meat and barbecue sauce. Season with salt and pepper.
  • Shape mixture into 4 large patties. Place a slice of pineapple on top of each. Crisscross 2 bacon strips around each burger, and secure with toothpicks.
  • Brush oil on grate. Place burgers on grill over medium low heat. Cook, covered, until the burger is cooked through. Turn often to avoid burning the bacon.

Next time you want to impress your friends, try making these outrageous burgers. They're stuffed mounds of cheddar cheese, wrapped in bacon, and brushed with tangy BBQ sauce. To top it all off, they're served with grilled pineapple for an extra layer of sweetness. Yum!

2 lb ground beef, 85/15
kosher salt, to taste
freshly ground black pepper, to taste
1 cup barbecue sauce, plus more for basting
8 slices bacon
4 oz cheddar cheese, diced
4 pineapple rounds, cored
nonstick cooking spray, for greasing
4 hamburger rolls
4 pieces lettuce

Steps:

  • Preheat the grill to 375°F (190°C).
  • In a large bowl, season the ground beef with salt and pepper. Add the barbecue sauce and mix with your hands until well incorporated.
  • Divide the meat into 4 baseball-sized portions. Roll into balls and place on a baking sheet.
  • Using a clean, empty soda or beer can, press into the center of a beef ball to form a crater, shaping the beef up around the sides of the can. Smooth out any cracks in the meat. Wrap 2 strips of bacon around the outside, using toothpicks to secure. Remove the can and fill the crater with 1 ounce of diced cheddar. 5. Repeat with the remaining burgers.
  • Transfer the burger bowls to the grill over indirect heat and cook for 25-30 minutes for medium doneness, basting with more barbecue sauce every 10-15 minutes.
  • While the burgers are cooking, pat the pineapple rounds dry with a paper towel. Spray lightly with nonstick spray. Add to the grill over direct heat and cook for 1-2 minutes per side, until grill marks appear.
  • Toast the buns on the grill for 1-2 minutes, until golden brown.
  • To assemble, place a piece of lettuce on a bottom bun and top with a burger and a grilled pineapple round. Finish with the top bun.

1/3 cup plus 1 tablespoon well drained crushed pineapple, with 1 tablespoon pineapple juice reserved
1/4 cup mayonnaise
1 tablespoon plus 1/2 teaspoon McCormick® Grill Mates® Molasses Bacon Seasoning
1 pound ground turkey
4 hamburger rolls

Steps:

  • For the Pineapple Aioli, mix 1 tablespoon crushed pineapple, reserved 1 tablespoon pineapple juice, mayonnaise and 1/2 teaspoon Seasoning. Refrigerate until ready to serve.
  • Mix ground turkey, 1/3 cup crushed pineapple and 1 tablespoon Seasoning in medium bowl until well blended. Shape into 4 patties.
  • Grill over medium heat 4 to 6 minutes per side or until burgers are cooked through (internal temperature of 165 degrees F). Serve burgers on rolls with Pineapple Aioli.

BACON PINEAPPLE BURGERS WITH SWEET CHILI MAYO



Bacon Pineapple Burgers with Sweet Chili Mayo image

This is like a burger on drugs. It has four components which I will argue to the death are incredibly important for this burger to be all OMG and you-must-eat-right-now or life will end. In between these two toasted buns (which I totally slathered with melted butter before toasting, because LIFE) is a fontina smothered burger... topped with bacon... topped with caramelized pineapple... topped with candied jalapenos... and finished off with a spread of sweet chili mayo. It's all my dreams come true. Like I just want to tell it to shut up. I can't handle how delicious it is.

4 - jalapeño peppers, sliced
1/2 cup(s) apple cider vinegar
1 3/4 cup(s) sugar
1 teaspoon(s) garlic powder
4 - pineapple rings
2 tablespoon(s) unsalted butter
1 pound(s) ground beef
1 teaspoon(s) salt
1 teaspoon(s) pepper
2 clove(s) garlic, minced
6 ounce(s) fontina cheese, sliced
8 slice(s) thick cut apple wood smoked bacon, cooked crisp
1/2 cup(s) mayonaise
3 tablespoon(s) sweet chili sauce
4 - kaiser rolls, toasted and brushed with melted butter

Steps:

  • To make the candied jalapeños: Add the vinegar, sugar and garlic powder to a small saucepan over medium heat and whisk until the sugar dissolves.
  • Allow the mixture to boil for 2 to 3 minutes.
  • Add in the peppers and stir with a wooden spoon, making sure all of the slices are submerged.
  • Cook for 3 to 4 minutes.
  • Remove the peppers with a slotted spoon and place them in a jar or a bowl.
  • Continue to cook the liquid for another 5 minutes until it has reduced by half, then pour it over the jalapeños.
  • Allow the peppers to cool completely - you can do this a day ahead of time too.
  • To make the caramelized pineapple: Heat a large skillet over medium heat and add butter.
  • Add the pineapple rings and cook until they are golden and caramelized, about 5 minutes per side.
  • To make the burgers: Mix the ground beef with the salt, pepper and minced garlic until combined.
  • Form the burgers into 4 equal patties.
  • You can grill the burgers but if I'm photographing, it's easier for me to cook them in a skillet.
  • I usually add a tablespoon of butter and cook on medium high heat until the burgers reach medium-well doneness. About 4 minutes per side.
  • In the last minute, I add the cheese on top and cover the burgers, allowing it to melt.
  • To make the sweet chili mayo: Whisk together the mayonnaise and chili sauce in a bowl until combined.
  • To assemble the burgers: Add the burgers to the bun and top it with the bacon, the pineapple and the candied jalapeños.
  • Spread the sweet chili mayo on top of the bun and serve immediately!
