1 head green cabbage, cored and separated into 12 leaves
2 tablespoons olive oil
1 cup chopped onion
1/2 cup chopped green pepper
2 cloves garlic, chopped
8 ounces ground round
1 teaspoon thyme
salt & pepper
2 cups crushed tomatoes
1 1/2 cups cooked white rice
1/2 cup chicken stock
3 tablespoons chopped parsley

Steps:

  • In a pot of salted boiling water, cook the cabbage leave for about 2 minutes. Drain on paper towels and allow to cool.
  • Heat oil in a large skillet and cook onions until tender. Stir in green pepper and garlic and cook for three minutes. Stir in crumbled ground round and cook until meat is browned. Add thyme and season to taste. Stir in 1 cup crushed tomatoes and simmer gently for 2 minutes. Stir in cooked white rice and toss to coat. In a small bowl, mix together 1 cup crushed tomatoes and chicken stock and spread out in bottom of baking dish.
  • Preheat oven to 350 degrees. Lay each cabbage leaf out flat ad place about 3/4 cup of rice mixture in center of leaf. Fold in sides of leaf and roll up. Place seam side down in baking dish. Cover dish with foil and bake for 20-30 minutes. Serve each cabbage roll up with a little sauce and garnish with chopped parsley

I made this recipe up on a whim... it was cold outside and I wanted to make a new casserole that my husband and kids would love. I have a 2.5 year old that is very picky and she ate 3 of her normal portions of this... AMAZING! This truly is a yummy dish that your whole family will enjoy. You can modify it a little to make it slightly healthier, but this is definately one of those recipes to make on you "cheat day" and enjoy!!

Number Of Ingredients 10

6 russet potatoes (peeled and chopped)
2 stalks celery, chopped
1 cup carrot, chopped
1 large onion, chopped
1 green bell pepper, chopped
1 -2 package smoked Polish sausage (i use turkey version)
6 slices bacon (i use low sodium)
1/2 cup ranch dressing
1 cup salsa
2 cups shredded cheddar cheese

Steps:

  • Pre heat oven to 350, spray 9 x 13 with cooking spray and set aside.
  • Bring all vegetable to boil and boil for 10 minute.
  • In large skillet cook the bacon until crispy then set bacon aside, but leave grease in skillet.
  • In the skillet, add the ranch, salsa, chopped up sausage and crumble the bacon over top. Mix together and cook til mix simmers.
  • Drain vegetables and spead them into 9 x 13 in even layer.
  • Pour the sausage mix down middle of vegetable mix length wise of dish. Cover the rest of the exposed vegetables on either side of sausage mix with the shredded chesse.
  • Bake casserole for 15 to 20 min and enjoy!

1 -2 lb cooked pork, cut in cubes
2 celery ribs, diced
1/2 onion, diced
3 garlic cloves, minced
3 tablespoons butter
1 bell pepper, diced
2 tablespoons flour
1 (16 ounce) can tomatoes, stewed
10 ounces beef consomme
1 tablespoon Worcestershire sauce
1 beef bouillon cube
1 teaspoon caraway seed
fresh ground pepper
celery salt
1 cup sour cream
buttered egg noodles

Steps:

  • Melt butter in large sauce pan, add celery onion, garlic and bell pepper saute until just tender crisp, or until your liking stir in flour. add beef consomme, beef bouillon and stewed tomato's, worcestershire sauce , caraway seed and cook 30 minutes adding more liquid as needed, 10 minutes before serving add pork, black pepper and celery salt as needed, stir in sour cream heat and serve over buttered egg noodles.

CHRISTMAS PIGS IN BLANKETS CASSEROLE

Use up leftover pigs in blankets from Christmas, along with carrots and parsnips, to make this easy casserole. It's a great way to avoid festive food waste

2 medium carrots (about 100g), cut into thick slices
2 small parsnips (about 80g), peeled, woody cores removed and cut into chunks
1 red onion, cut into wedges
2 tsp olive oil
16 chipolata-sized pigs in blankets or 8 larger ones
2 tsp wine or cider vinegar
2-3 tbsp cream or crème fraîche (optional)
2 tbsp chopped soft herbs, such as basil or parsley
mashed potato or leftover roasties (see tip), to serve

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Put the carrots, parsnips and onion in a deep baking dish or casserole, and toss in the oil. Season well and roast for 20 mins. Add the pigs in blankets and roast for a further 10-15 mins or until the bacon begins to crisp a little.
  • Reduce the oven to 200C/180C fan/gas 6. Add the vinegar to the baking dish. Cook for another 40 mins. Taste and adjust the seasoning if needed. Swirl through the cream, if using, and scatter over the chopped herbs. Serve with mashed potatoes or leftover roasties.

8 slices American processed cheese
1 (10 ounce) package refrigerated biscuit dough

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Wrap cheese around each frankfurter then the biscuit around that. Put on cookie sheet with the overlap of biscuit faced down, so you don't have to use tooth picks.

1 pound reduced-fat bulk pork sausage
2 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large egg, room temperature, lightly beaten
2 cups fat-free milk
2 tablespoons canola oil
2 tablespoons honey
Maple syrup, optional

Steps:

  • Preheat oven to 350°. Coat 48 mini muffin cups with cooking spray., Shape sausage into forty-eight 3/4-in. balls. Place meatballs on a rack coated with cooking spray in a shallow baking pan. Bake until cooked through, 15-20 minutes. Drain on paper towels., In a large bowl, whisk flour, sugar, baking powder, salt and spices. In another bowl, whisk egg, milk, oil and honey until blended. Add to flour mixture; stir just until moistened., Place a sausage ball in each mini muffin cup; cover with batter. Bake until lightly browned, 20-25 minutes. SOUTHERN STYLE PIG TAILS

A lot of ethnic recipes use pig tails. They are great as a meat dish with turnip greens, black-eyed peas, or boiled cabbage. My recipe cooks the tails, twice and the result is a crispy crackling covering the tail, that you can eat or save for crackling in cornbread. The crushed red pepper can be used liberally for a spicy taste. Be sure to buy pig tails that have a lot of meat around the upper part.

8 pig tails, rinsed
6 cloves garlic, halved
1 onion, coarsely chopped
1 teaspoon red pepper flakes, or to taste
1 teaspoon salt

Steps:

  • Place the pig tails in a large stock pot, and fill with enough water to cover. Cover the pot, and bring to a boil. Boil for 10 to 15 minutes. Drain, and clean the pot of any debris, then return the tails to the pot and cover with cold water. Bring to a boil again, and season with onion, red pepper flakes and salt. Boil for about 2 hours, or until the tails are almost falling apart.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a roasting pan with aluminum foil.
  • Drain the pig tails, and place them on the roasting pan. The stock from the tails may be used to cook turnip greens, cabbage or black-eye peas.
  • Roast the tails for 30 to 40 minutes, until the tails pop and sizzle and the skin browns. Take care when opening the oven door. Allow the tails to cool, and serve with your favorite side dishes.

2 pounds eggplant, peeled
5 teaspoons salt, divided
1/4 cup olive oil
2 medium onions, finely chopped
2 medium zucchini, sliced 1/2 inch thick
2 garlic cloves, minced
5 medium tomatoes, peeled and chopped
2 celery ribs, sliced
1/4 cup minced fresh parsley
1/4 cup minced fresh basil or 1 tablespoon dried basil
1/2 teaspoon pepper
1/2 cup grated Romano cheese
1 cup seasoned bread crumbs
2 tablespoons butter, melted
1 cup shredded part-skim mozzarella cheese

Steps:

  • Cut eggplant into 1/2-in. thick slices; sprinkle both sides with 3 teaspoons salt. Place in a deep dish; cover and let stand for 30 minutes. Rinse with cold water; drain and dry on paper towels., Cut eggplant into 1/2-in. cubes. Transfer to a large skillet; saute in oil until lightly browned. Add onions and zucchini; cook 3 minutes. Add garlic; cook 1 minute longer. Add the tomatoes, celery, parsley, basil, pepper and remaining salt; bring to boil. Reduce heat; cover and simmer for 10 minutes. Remove from the heat; stir in Romano cheese. , Pour into a greased 13x9-in. baking dish. Combine crumbs and butter; sprinkle on top. Bake, uncovered, at 375° for 15 minutes. Sprinkle with mozzarella cheese. Bake 5 minutes longer or until cheese is melted.
