PIG PICKING CAKE III
This is my daughters favorite. It is an easy mandarin orange cake with pineapple, nuts, pudding and whipped topping. Whip one up and it's pig-out time!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 3 - 8 inch pans.
- Prepare cake mix according to package directions with the addition of mandarin oranges and nuts. Pour into 3 - 8 inch pans. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
- To make the filling: In a large bowl, combine crushed pineapple with juice and pudding mix. Fold in the whipped topping. Spread between cooled cake layers. Chill in refrigerator

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour 3 - 9 inch round baking pans.
- In a large bowl, combine cake mix, margarine, eggs and mandarin oranges with juice. beat for 3 minutes with an electric mixer.
- Pour into 3 - 9 inch round cake pans. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool.

PIG EATING CAKE OR PIG PICKING CAKE (BECAUSE YOU CAN'T STOP EATING) RECIPE

- Spray a 9 x 13 inch baking pan with baking spray (or just grease and flour it the way our grandmothers always did it.) Preheat oven to 350 degrees. For the cake, combine cake mix, margarine, 1/2 cup juice from the mandarin oranges, eggs. Beat for four minutes on medium-high. Add drained oranges and beat again until pieces are broken up and small. Pour batter into greased and floured 9 x 13 inch baking pan and bake for 25 to 30 minutes, or until golden brown and set. Remove from oven and cool completely. If desired, turn out cake onto a large platter. Once cake is cool, blend juice from drained pineapples with the vanilla pudding mix. then mix in whipped topping. Stir in drained pineapple. Spread on cooled cake and refrigerate.. To serve, cut cake into squares and top each square with a mandarin orange slice.
