Adopted recipe. Please note that this is not a sweet BBQ sauce at all. If you are looking for a "Memphis" or "Kansas City" style sauce, with tomatoes and molasses or brown sugar, please look elsewhere or you will be disappointed. Eastern North Carolina is where you would find the original inspiration for this. Traditionally, a whole hog is cooked and this style of sauce is used both for the mop and on the side. I really like this stuff, it's a nice change from sweet sauces and makes a dynamite mop, as well. Keeps in a covered container in the fridge almost indefinitely.

1 teaspoon salt, to taste
1/2 teaspoon ground cayenne pepper

1 (18 ounce) box yellow cake mix
4 eggs
3/4 cup salad oil
11 ounces mandarin oranges, undrained
16 ounces crushed pineapple, slightly drained
16 ounces Cool Whip
3 ounces instant vanilla pudding
coconut
maraschino cherry, if desired

Steps:

  • Mix cake mix, eggs, oil and oranges.
  • Pour into 3 or 4 greased layer cake pans.
  • Bake at 350 degrees for 15 minutes, cool on racks.
  • Mix pineapple, cool whip and pudding.
  • Fill and frost.
  • Decorate with coconut and cherries, or not.

This Southern style bar-b-que sauce is perfect for a hog roast or just to have around the kitchen. A sweet, vinegar based sauce - mix with pulled pork in large containers. Tastes great on chicken too.

4 cups cider vinegar
4 cups white vinegar
3 cups white sugar
1 cup ketchup
½ cup crushed red pepper
2 tablespoons black pepper
2 tablespoons paprika
1 tablespoon onion powder
1 tablespoon bottled minced garlic
1 tablespoon salt
cayenne pepper to taste

Steps:

  • In a 1 gallon container with a lid, mix cider vinegar, white vinegar, and sugar until sugar has dissolved. Mix in ketchup, crushed red pepper, black pepper, paprika, onion powder, garlic, salt, and cayenne pepper. Cover, and chill in the refrigerator.

This cake is another recipe I learned from my grandmother. It is so moist, delicious, and simple I just can't get enough.

1 (18 1/4 ounce) box yellow cake mix
1 (11 ounce) can mandarin oranges in juice
4 eggs
3/4 cup vegetable oil
1 (20 ounce) can crushed pineapple
1 (9 ounce) container whipped topping (thawed)
1 (6 ounce) box instant vanilla pudding

Steps:

  • Pre-heat oven to 350°F.
  • Grease and flour lightly one 13x9-inch pan.
  • Place all ingredients for cake in mixer bowl and beat with electric mixer until well combined( about 2 minutes).
  • Bake at 350°F for 25-30 minutes( until toothpick inserted in center of cake comes out clean).
  • Allow cake to completely cool in pan.
  • Drain crushed pineapple and reserve juice.
  • In separate bowl combine crushed pineapple and dry pudding mix.
  • Fold in whipped topping until well blended.
  • Poke holes in cooled cake.
  • Pour 3/4 cup of reserved pineapple juice over cake.
  • Spread frosting over cake.
  • Refrigerate for at least 2 hours.
  • Enjoy!

2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons unsalted butter, cold, cut into small pieces
1/2 cup grated cheddar cheese
3/4 cup buttermilk
18 miniature hot dogs

Steps:

  • Heat the oven to 400ºF. Grease a large baking sheet. Sift the dry ingredients (flour through salt) into a mixing bowl (or dump them in one at a time, whatever).
  • Rub the butter pieces into the dry ingredients until mixture is crumbly. Stir in cheese until evenly distributed.
  • Make a well in the dry ingredients and add the buttermilk. Stir well with a wooden spoon. Let the dough sit for 3 minutes.
  • Sprinkle the dough with flour and stir once or twice then turn out onto a well floured counter.
  • With floured hands, pat the dough into a 15 by 7 inch rectangle, trimming the sides if necessary to get a true rectangle. (Handle the dough as little as possible for tenderness, yeah right).
  • Using a pizza cutter, slice the rectangle into thirds horizontally then slice each third into thirds vertically, this will give you 9 small rectangles. Slice each rectangle diagonally into two thin triangles.
  • One at a time, roll up the sausages in the triangles. Place pointy side down on greased cookie sheet.
  • Bake for 12 to 13 minutes, until golden brown. Cool on the sheet for 3 minutes then tranfer to a wire rack.
