Nonstick baking spray, for the pan
One 18.25-ounce box yellow cake mix
8 tablespoons (1 stick) salted butter, softened
1 teaspoon vanilla extract
4 large eggs
One 23.5-ounce jar mandarin oranges, drained and 1/2 cup juice reserved
4 ounces cream cheese, softened
1/2 cup confectioners' sugar
1 1/2 cups chilled heavy cream
2 teaspoons vanilla extract
One 20-ounce can crushed pineapple, drained

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch cake pan with baking spray.
  • Combine the cake mix, butter, vanilla, eggs and 1/2 cup reserved mandarin juice in the bowl of an electric mixer and beat for 4 minutes on medium-high speed. Add 1 1/2 cups of the drained orange slices and beat again until the oranges have broken into small pieces, about 1 minute. Transfer the batter to the prepared cake pan and bake until golden brown and set, 25 to 27 minutes. Allow to cool completely, then turn out onto a large platter.
  • For the topping: Cream together the cream cheese and confectioners' sugar in the bowl of a stand mixer fitted with a paddle attachment, 1 to 2 minutes. Remove the mixture to a small bowl. Add the cream and vanilla to the stand mixer bowl and switch to the whisk attachment, then whip until soft peaks form, about 2 minutes. Add the cream cheese mixture, distributing it evenly around the bowl. Whip until stiff peaks form, 3 to 4 minutes. Fold in the pineapple.
  • Spread the frosting evenly over the cooled cake and refrigerate for at least 2 hours. Garnish with the remaining mandarin orange slices.

1 (18 ounce) box butter recipe cake mix
1 (8 ounce) can mandarin oranges, including juice
1/4 cup oil
4 eggs
1 (15 ounce) can crushed pineapple, including juice
1 (3 1/2 ounce) box instant vanilla pudding
1 (8 ounce) container non-dairy whipped topping

Steps:

  • Blend all cake ingredients and beat three minutes.
  • Bake in greased 9" X 13" pan at 350 for 25 - 30 minutes.
  • Cool throughly.
  • Mix dry pudding with pineapple and juice.
  • Stir in whipped topping.
  • Spread over cake and refrigerate.

My two grown girls love this cake. My wife occasionally asks me to make it only to give it away to someone special. I enjoy making this cake and just baking everything. I included the note about cooling the cake completely because the 1st time I made this cake (I added to the recipe) because I did not wait long enough for the cake to cool and the frosting ran off the cake and around the platter. LOL

TOPPING
1 large bowl cool whip
2 package(s) vanilla pudding (instant)
1 large can crushed pineapple with juice

Steps:

  • Mix ingredients. Pour into either three 8" round cake pans, 2 round pans or 1 loaf pan.
  • Bake 30 to 35 minutes.
  • While cake is baking, mix frosting and refrigerate. Mix Cool Whip, dry pudding mix, and un-drained pineapples.

1 can(s) pineapples crushed
1 small tub of whiped cream

  • 1. Spray a 9x13 in. pan with bakers secret. Mix cake mix with oil. eggs, and mandarin oranges. Pour into pan. Bake at 350 for 30min. or until toothpick comes out clean. Let cool.
  • 2. In a separate bowl mix pudding with crushed pineapples until smooth. Fold in whiped cream. Spread on cake. Refrigerate until icing is firm then serve.

1 pkg yellow cake mix
1 can(s) mandarin oranges, undrained (11 oz)
1 stick butter, melted
1/4 c vegetable oil
4 large eggs
1 can(s) crushed pineapple (20 oz., juice used to pour over cake and pineapple used for frosting)
FROSTING
12 oz whipped topping, thawed
3.4 oz box of instant French Vanilla or pistachio pudding (I use the French vanilla)
pineapple from can of crushed pineapple
1 - 1 1/2 c shredded coconut

Steps:

  • 1. PREHEAT oven to 350; grease and flour pans.
  • 2. Mix all cake ingredients except pineapple juice on medium for about 3 minutes. This will cause the oranges to break up.
  • 3. Pour into 2 - 9" round cake pans. Bake about 25 minutes or until the knife inserted comes out clean. Cool for 10 minutes.
  • 4. While the cake is still warm, poke holes all over and drizzle with reserved pineapple juice.
  • 5. Mix frosting ingredients well, making sure they are well combined and the pudding mix has dissolved.
  • 6. Frost cake after it has completely cooled.
