- Preheat oven to 375°. In a small bowl, combine sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss to coat. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Beat egg white until foamy; brush over crust. Sprinkle with sugar. Cover edge loosely with foil. , Bake 25 minutes. Remove foil; bake until crust is golden brown and filling is bubbly, 20-25 minutes longer. Cool on a wire rack.

- Pelar y cortar finamente, pero no pure. Colocar en sartén con mantequilla, azúcar y pasas. Cocinar hasta que esté blando. Dejar enfriar Extender sobre la masa, enrollar y con cepillo pintar con yema de huevos. Colocar en el horno hasta dorar la masa.

Steps:
- Preheat oven to 400.
- Peel, core and slice apples.
- Roll out puff pastry on a floured surface and place in a 9-inch pie pan. Trim any pastry that hangs over the edges.
- Arrange apple slices in pastry shell; pour lemon juice over apples.
- Place tart in its pan on a cookie sheet and place on middle oven rack.
- Bake for about 30 minutes, covering pastry edges with foil if browning too quickly.
- Remove from oven and sprinkle with cinnamon. Cool for 10 minutes.
- Spread apricot jam over tart to glaze (have jam at room temperature or warm it slightly - this will make it easier to spread).
