A delicious low-fat chili with a kick! We make it every year for our Halloween block party. You can adjust any of the flavors to your liking and it always turns out fantastic. Top with cheese, sour cream, and cilantro. Great when made ahead to let the flavors meld. Freezes well too!

1 ½ teaspoons vegetable oil, or as needed
1 large white onion, chopped
2 cloves garlic, chopped
4 large boneless, skinless chicken breasts, cubed
2 cups picante sauce
¼ cup dry white wine
2 tablespoons ground cumin
1 tablespoon dried sage
1 bay leaf
1 (15 ounce) can black beans, undrained
1 (15 ounce) can pinto beans, undrained
6 Roma tomatoes, chopped
1 (4 ounce) can chopped green chilies

Steps:

  • Heat oil in a pot over medium-high heat. Saute onion and garlic until onion is translucent, about 5 minutes. Add chicken; cook and stir until mostly opaque, about 5 minutes. Add picante sauce, wine, cumin, sage, and bay leaf. Stir in black beans and pinto beans. Add tomatoes and chiles; simmer until flavors meld, about 10 minutes.

This is my husband's recipe, the only chili we eat. It's so good!! Easy enough for dh to make, and just spicy enough to warm us up! This freezes well.

2 lbs ground venison or 2 lbs ground beef
1 1/2 cups onions, chopped
2 garlic cloves, minced
1 (28 ounce) can diced tomatoes (1 qt.)
4 (12 ounce) cans picante V8 vegetable juice
2 (16 ounce) cans kidney beans
2 teaspoons salt
2 tablespoons chili powder
1 teaspoon black pepper
1 teaspoon cumin

Steps:

  • Brown meat with onion and garlic in canola oil, leaving the meat in large pieces; drain fat.
  • Place all ingredients in a large saucepan; simmer uncovered 45 minutes, stirring occasionally.

SPANISH TAPAS RECIPE: This recipe combines the best of the old world, the best of the new world and spices from the far east. Brined olives are available in every tapas bar.

3 garlic cloves, thinly sliced
2 tablespoons white vinegar or 2 tablespoons lemon juice
1 1/2 lbs black olives, cured (the wrinkled ones)
1/2 cup fresh parsley, minced
1 tablespoon dried red chili pepper flakes
3 teaspoons coriander seeds, crushed
2 teaspoons cumin seeds, crushed
2 cups olive oil

Steps:

  • Soak the garlic slices in the vinegar or lemon juice for 24 hours. Drain and mix in a large bowl with the olives, parsley, chili flakes, coriander and cumin.
  • Sterilize a 4 cup wide necked jar by rinsing with boiling water and drying in a warm oven (do not use a dish towel).
  • Spoon the olive mixture into the jar and pour in the olive oil. Seal and marinate in the refrigerator for 2-3 weeks before serving at room temperature. The olives will keep for a further month in the refrigerator.

1 large onion, chopped
2 tablespoons oil or butter
1 pound steak, cut into cubes
1 pound ground beef
1 (8-ounce) can tomato sauce
1 (28-ounce) can tomato
1 tablespoon chili powder
2 tablespoons chopped cilantro or parsley
1 cup hot picante sauce (or to taste)
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon oregano
1 ounce Mexican chocolate, grated (or baking chocolate with 1 teaspoon sugar and 1/2 teaspoon cinnamon)
1 - 1 1/2 cup grated Cheddar or Monterey Jack cheese (optional)

Steps:

  • Brown onion in oil or butter in large skillet until soft. Transfer to crockpot. Brown cubed steak and ground beef, a little at a time, in same skillet. Transfer to crockpot. Combine remaining ingredients and simmer until chocolate melts. Add to crockpot and mix well. Cook for 7-10 hours on LOW setting. Serve with cornbread and a green or fruit salad. Note: Transports well in the crockpot and will stay hot for several hours. Fun Fact: The Brave One is a 2007 crime-drama/psychological thriller film directed by Neil Jordan, produced by Joel Silver, and starring Jodie Foster. It was released in the United States on September 14, 2007. The film earned Foster a Golden Globe nomination for leading actress in a drama.
