Number Of Ingredients 15

4 large eggs, room temperature
1-2/3 cups sugar
1 cup canola oil
1 can (15 ounces) pumpkin
2 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
ICING:
6 ounces cream cheese, softened
2 cups confectioners' sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
1 to 2 tablespoons 2% milk

Steps:

  • In a bowl, beat the eggs, sugar, oil and pumpkin until well blended. Combine the flour, cinnamon, baking powder, baking soda and salt; gradually add to pumpkin mixture and mix well. Pour into an ungreased 15x10x1-in. baking pan. Bake at 350° for 25-30 minutes or until set. Cool completely. , For icing, beat the cream cheese, confectioners' sugar, butter and vanilla in a small bowl. Add enough milk to achieve spreading consistency. Spread icing over bars. Store in the refrigerator.

These easy to make pumpkin bars have the perfect combination of pumpkin and spices. Slather on the cream cheese frosting that also has pumpkin pie spice flavor and you have a hit!

Number Of Ingredients 15

2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
4 large eggs, room temperature
1 ⅔ cups granulated sugar
1 cup oil, vegetable or canola
1 can (15oz) pumpkin (not pumpkin pie filling)
Cream Cheese Frosting
1 (8oz) package of cream cheese, softened
¼ cup unsalted butter, softened
3-4 cups powdered sugar
1 teaspoon pumpkin pie spice, optional
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees
  • In a medium bowl, whisk flour, baking powder, cinnamon, salt and baking soda together. Set aside.
  • In a large bowl, beat the eggs, sugar, oil and pumpkin until light and fluffy.
  • Slowly add the dry ingredients into the wet ingredients, mixing well after each addition.
  • Spread pumpkin pie bars batter into a greased 15x10x1 baking pan
  • Bake at 350 degrees for 25-30 minutes or until a toothpick inserted comes out clean.
  • Remove from oven to a wire rack and cool completely.
  • To Make The Cream Cheese Frosting, cream together butter and cream cheese until smooth and fluffy.
  • Gradually add the powdered sugar, beating until mixture is smooth.
  • Add vanilla and pumpkin pie spice. Continue beating until smooth.
  • Frost bars with an offset spatula. Cut into squares.

1 (15-ounce) can pumpkin
2 eggs
1 (12-ounce) can evaporated milk
1 cup sugar
dash pumpkin pie spice
dash nutmeg
1 (18 1/4-ounce) box white or yellow cake mix
1/2 cup butter, melted

Steps:

  • Mix together first six ingredients. Pour into an ungreased 9"x 13" cake pan or a 10" Dutch oven. Sprinkle cake mix over mixture then sprinkle with butter. Bake at 400°F for 40 to 45 minutes, or until you can smell it. Chill for 1 to 2 hours. Cut into squares and top with whipped cream if desired. Tip: in the Dutch oven, line with tin foil or use a spring form pan to make removing the bars easier

2 cups canned pumpkin
1 cup vegetable oil
4 eggs
2 cups white sugar
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F. Grease two 9 x 13-inch pans.
  • Combine the flour, baking powder, baking soda, salt, and cinnamon and set aside. In a separate bowl, mix the pumpkin, vegetable oil, eggs, and sugar. Add the flour mixture and stir just until combined. Mix in the walnuts.
  • Spread the batter into the prepared pan and bake in the preheated oven until a toothpick inserted in the center comes out clean, about 25 minutes. Cool on wire rack and frost bars with Cream Cheese Frosting.
