OLD-FASHIONED PEANUT BUTTER COOKIES

Old-Fashioned Peanut Butter Cookies image

My mother insisted that my grandmother write down one recipe for her when Mom got married in 1942: the how to make peanut butter cookies from scratch recipe. That was a real effort because Grandma was a traditional pioneer-type cook who used a little of this or that until it felt right. This treasured recipe is the only one she ever wrote down! -Janet Hall, Clinton, Wisconsin

Time 41m

Yield 3 serving(s)

Number Of Ingredients 9

1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, slightly softened
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1/2 cup peanut butter (smooth or crunchy)

Steps:

  • Preheat oven to 350°F.
  • Sift together flour, baking soda and salt.
  • In a large bowl, cream together butter and sugars. Beat in egg. Add vanilla and peanut butter and beat well. Add in dry ingredients and beat on low speed until combined.
  • Drop by rounded spoonfuls onto parchment lined baking sheet.
  • Using a fork, mark grids on the top of each cookie, dipping the fork in water after each cookie.
  • Bake for 11-12 minutes, until just beginning to brown on the edges.
  • Cool on wire rack.
  • Note: I use natural, salted peanut butter. You get a more buttery cookie by using the natural peanut butter, since it doesn't have all that extra sugar. The cookie will also be more brittle/crumbly if you use processed peanut butter, so I would recommend adding an extra tablespoon of butter.
