½ cup basil leaves
1 clove garlic
1 tablespoon olive oil
½ teaspoon balsamic vinegar
½ teaspoon soy sauce

Steps:

  • Combine the garbanzo beans, basil, and garlic in a food processor; pulse several times. Use a spatula to push mixture from sides of processor bowl. Pulse the mixture again while drizzling in the olive oil. Add the vinegar and soy sauce; pulse until combined. Season with salt and pepper.

¼ teaspoon salt
1 clove garlic
½ teaspoon ground cumin
½ cup basil pesto
1 tablespoon lemon juice
2 tablespoons water

Steps:

  • Pour the rinsed chickpeas onto half the area of a kitchen towel. Fold the other half of the towel on top of the beans, and rub them so that the skins start to come off.
  • Place all of the peeled beans in the bowl of a food processor, along with the salt, cumin, garlic, and pesto. Turn the processor on to break up the mixture.
  • With the food processor running, pour in the lemon juice and water, and let the processor run until the mixture is smooth.
  • Serve with your choice of dipping chips or veggies.
  • Enjoy!

1 (15-ounce) can no-salt-added chickpeas (garbanzo beans), drained
6 tablespoons store-bought or homemade sun-dried tomato pesto, recipe follows
1/3 cup fat-free or low-fat plain Greek yogurt
Juice of 1 small lemon (2 tablespoons)
1 large garlic clove, chopped, or to taste
1/4 teaspoon sea salt, or to taste
1/8 teaspoon ground cayenne (optional)
2 tablespoons chopped fresh flat-leaf parsley or basil
Add the chickpeas, pesto, yogurt, lemon juice, garlic, salt, and cayenne (if using) to a food processor or blender. Cover and puree. Adjust seasoning.
Spoon into a serving bowl and sprinkle with the parsley. Chill until ready to serve.
12 sun-dried tomato halves (not oil-packed), rehydrated
1/4 cup pine nuts, toasted
5 large garlic cloves
4 ounces soft tofu, drained
1/4 cup low-sodium vegetable broth

As a finishing touch, swirl together the vibrant green and red pesto hummus to create a gorgeous yin and yang design.

1/4 cup oil-packed sun-dried tomatoes (2 ounces)
6 tablespoons olive oil, plus more for serving
1/4 cup grated Parmesan
2 tablespoons pine nuts
2 small cloves garlic
1 cup prepared hummus
Kosher salt and freshly ground black pepper
1 cup fresh basil leaves
Flaky sea salt, such as Maldon, for serving
Pita chips, for serving

Steps:

  • Add the sun-dried tomatoes, 3 tablespoons of the olive oil, 2 tablespoons of the Parmesan, 1 tablespoon of the pine nuts and 1 of the garlic cloves to a food processor. Blend, scraping down the sides and base of the bowl with a rubber spatula as necessary, until a smooth paste forms, about 1 minute. Season with kosher salt and pepper. Add 1/2 cup of the hummus and blend until evenly combined and smooth. Transfer the red pesto hummus to a small bowl. Clean the bowl and blade of the food processor.
  • Add the basil leaves and the remaining 3 tablespoons olive oil, 2 tablespoons Parmesan, 1 tablespoon pine nuts and 1 garlic clove to the food processor. Blend, scraping down the sides and base of the bowl as necessary, until a smooth paste forms. Season with salt and pepper. Add the remaining 1/2 cup hummus and blend until evenly combined and smooth. Transfer the green pesto hummus to a separate bowl.
  • To serve, carefully spoon the red pesto hummus into half of a serving bowl and the green pesto hummus into the other half. Smooth the tops of each with the back of a spoon, then gently swoop the green pesto hummus into the red pesto hummus. Drizzle with more olive oil and top with some sea salt and pepper. Serve alongside pita chips.

2 15oz cans of Garbanzo Beans with juice
4 or 5 cloves garlic (or more to taste)
1/4 cup lemon juice
1/4 cup fresh chopped parsley
1 tsp salt
1 tsp white pepper
1/3 cup Tahini
water as needed
1/2 cup chopped greek black olives
1 large tomato, seeded and diced
5 to 8 green onions, sliced thinly
1/2 a large red onion, diced small
1/4 cup Bertolli olive oil
1 pound package spaghetti or fettucine
1 tbs. Bertolli olive oil

Steps:

  • Break spacghetti into thirds and cook al dente. Run under cold water. Toss with a tablespoon of Bertolli olive oil to keep it from sticking. Put the first seven ingredients in a food processor or blender and blend until a paste about the same consistency as pesto is created, adding water a tablespoon at a time if needed. (Lean to the thin side, remember the hummus will get firmer when chilled.) Pour hummus over the pasta and toss until coated. Chill. Before serving, toss in the tomatoes, onions, and olives. Drizzle with the 1/4 cup of Bertolli olive oil. Serve and enjoy.

1 small butternut squash (1 to 1 1/2 pounds), peeled and cut into small chunks (1/2 inch)
1/3 cup extra-virgin olive oil
Kosher salt
Freshly cracked black pepper
8 ounces canned chickpeas, drained
1/3 cup tahini
1/3 cup coconut milk
Juice of 1 lemon
1 tablespoon miso
One 15-ounce can chickpeas, drained
2 teaspoons ground cumin
2 teaspoons ground coriander
2 garlic cloves, finely chopped
1/2 yellow onion, finely chopped
1/2 cup fresh basil, roughly chopped
3 tablespoons extra-virgin olive oil, plus more for drizzling
Kosher salt
Freshly cracked black pepper
1 tablespoon sesame seeds

Steps:

  • For the butternut hummus: Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • Spread the butternut pieces evenly on the baking sheet, drizzle with 2 tablespoons of olive oil and sprinkle with a pinch of salt and pepper. Bake for 25 to 30 minutes or until soft and golden.
  • Combine the roasted butternut, chickpeas, tahini, coconut milk, lemon juice and remaining olive oil in a blender, season with salt and pepper and blitz until smooth. Set aside (you may need to clean your blender at this point).
  • For the pesto falafel: Combine the miso, chickpeas, cumin, coriander, garlic, onion, basil, olive oil and some salt and pepper in a blender or food processor until combined. Wet your hands and roll the mix into golf ball-sized balls and place on a parchment-lined baking sheet. Sprinkle with the sesame seeds. Refrigerate for 1 hour.
  • Preheat the oven to 400 degrees F.
  • Drizzle the falafel with olive oil and bake for 30 minutes or until golden. Note: You can twice cook them by adding oil to a frypan for a bit of an extra golden edge for 2 minutes on medium heat.
  • Serve the falafel on top of that super creamy and nutty butternut hummus.
