1 tablespoon extra-virgin olive oil
5 cloves garlic, thinly sliced
A pinch of red pepper flakes
2 cans cannellini beans, drained
3 tablespoons pesto
2 tablespoons grated Parmesan cheese
3 cups chicken broth
1 cup chopped celery
1/2 cup chopped black olives
1/2 cup roasted peppers

Steps:

  • Heat the olive oil in a large skillet over medium-low heat, 30 seconds. Add the garlic and red pepper flakes and sauté until fragrant, about 1 minute.
  • Stir the cannellini beans and 1 cup of water into the skillet. Simmer over medium heat until the mixture is just thickened, 8 minutes. Stir in the pesto and Parmesan.
  • Add the chicken broth and celery and cook, stirring occasionally, until the celery is tender, 15 minutes. Stir in the olives and roasted peppers to combine.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 medium onion, chopped
1 medium potato, peeled and chopped
1 medium zucchini, chopped
Salt and pepper
1 (15-ounce) can garbanzo beans (ceci or chick peas)
1 (15-ounce) can white beans, cannellini, drained
6 cups chicken stock, available in paper containers on soup aisle
1 cup small, thin egg noodles for soup, any brand
1 box frozen chopped green beans
4 crusty rolls or 8 slices crusty bread
8 ounces, 1/2 pound, robiola or ricotta cheese
1 cup arugula leaves, loosely packed
8 slices prosciutto di Parma
1 cup basil leaves, packed
1 large clove garlic
2 to 3 tablespoons pine nuts (pignoli)
3 tablespoons grated Parmigiano-Reggiano
3 tablespoons extra-virgin olive oil

Steps:

  • Heat a medium soup pot over medium high heat. Add extra-virgin olive oil, 2 turns of the pan. Add onion, potato and zucchini and season with salt and pepper. Cook 5 or 6 minutes alone, stirring frequently, then add the canned beans and the chicken stock. Cover the pot and bring the soup up to a boil.
  • Preheat a panini grill or a heavy bottomed pan over medium heat. Build 4 panini: spread roll or bread with a couple ounces of cheese, then top with a few leaves of arugula and 2 slices of prosciutto for each sandwich. Place panini in sandwich press or onto hot, heavy bottomed pan. Top with another heavy skillet or a brick wrapped in foil to press sandwiches. Press sandwiches until crisp on both sides, 2 to 3 minutes on each side.
  • When the soup is at a boil, remove the lid. Stir in the noodles and green beans and reduce heat to low. Simmer soup an additional 5 to 6 minutes then remove it from the heat.
  • Combine basil, garlic, nuts and cheese in the food processor and turn it on. Stream in the extra-virgin olive oil and process until pesto is nearly smooth.
  • Scrape the pesto into a small bowl. Add a ladle of the soup broth to thin the pesto, then add the pesto to the soup. Stir to combine and serve soup immediately with panini, for dipping.

This soup is quick and easy. Use canned butter (lima) beans and a good quality vegetable stock or chicken stock. You can use home made or store bought pesto.

2 (14 ounce) cans butter beans, drained and rinsed
4 tablespoons sun-dried tomato puree (paste)
5 tablespoons pesto sauce

Steps:

  • Put stock in a pan with the butter beans and bring just to a boil.
  • Reduce the heat and stir in the tomato puree and pesto.
  • Cook gently for 5 minutes.
  • Transfer six ladlefuls of the soup to a blender or food processor, scooping up plenty of the beans.
  • Process until smooth, then return the puree to the pan.
  • Heat gently, stirring frequently, for 5 minutes, then season if necessary.
  • Ladel into warmed soup bowls and serve with a warm crusty bread or bread sticks.

7 cups vegetable or chicken broth, homemade or low-sodium canned
1 baking potato, peeled and cut into 1/4-inch cubes
2 tablespoons minced fresh thyme or 2 teaspoons dried
Salt and freshly ground pepper to taste
1 1/2 cups loosely packed basil leaves
1 large shallot, peeled and chopped
2 cloves garlic, peeled
1 tablespoon olive oil
1/4 cup water
1/8 teaspoon salt, plus more to tast

Steps:

  • To make the soup, heat olive oil in a large pot over medium heat. Add onion, garlic and leek and cook until softened, about 5 minutes. Stir in beans and broth. Bring to a simmer. Cook until beans are almost tender, about 1 hour. Stir in potato cubes. Cook until potato and beans are soft, about 20 minutes. Stir in thyme, salt and pepper.
  • Meanwhile, to make the pesto, place basil, shallots and garlic in a food processor. Process until chopped. Add olive oil and water.   • Combine first 4 ingredients in heavy large pot. Cover and cook over medium-low heat until vegetables are almost tender, stirring occasionally, about 8 minutes. Add broth; bring to boil. Stir in orzo; boil uncovered until orzo is almost tender, stirring often, about 12 minutes. Add green beans; reduce heat and simmer until beans are tender, about 6 minutes. Stir in cannellini and crushed pepper; simmer until heated through, about 3 minutes. Season with salt and pepper.
  • Divide pesto among 4 bowls. Ladle soup over pesto; swirl to blend. Sprinkle with 2 tablespoons cheese.

2 cloves garlic, minced
3 carrots, cut into 2 inch matchsticks

4 cups reduced-sodium fat-free chicken broth
2 medium tomatoes, diced

  • In a large stock pot heat oil over medium heat and add garlic.

2 bay leaves

1/4 cup walnuts
1/4 teaspoon freshly ground black pepper

Steps:

  • In a large pot, heat oil over medium heat. Cook onion, stirring occasionally, until golden, 3 to 5 minutes. Add celery, carrots and garlic; cook, stirring, until vegetables soften, 3 to 5 minutes. Add wine; stir to scrape brown bits off bottom of pot. Add stock, beans, tomatoes, bay leaves and 1/4 teaspoon salt. Bring soup to a boil; reduce heat, cover, and simmer, stirring occasionally, until carrots are very soft, 15 to 20 minutes.   • 1. Pour stock into large pot. Add beans and bring to a boil. Reduce heat and stir in tomato puree and pesto. Simmer for five minutes. 2. Transfer 6-7 ladles full to a blender, scooping up plenty of beans. Process until smooth and return to pot (be careful processing the hot liquid). 3. Heat gently, stirring frequently for five minutes. Season with salt and pepper.

2 cups uncooked chicken breast
4 c vegetable broth
1 small can, white beans, either navy or cannelini
1 large yellow onion, coarsely chopped
4 carrots, coarsely chopped
4 celery sticks, coarsely chopped
2 c kale, chopped
1 small can stewed tomatoes (preferable fire-roasted with green chili)
1 tbls dried basil
¼ c grated pecorina romano or your favorite hard cheese
about 2 cups of water
Pesto
About a dozen fresh basil leaves, stems removed, rinsed and dried
1/3 c hulled pistachios
About ¼ c extra virgin olive oil
2 fresh garlic cloves, peeled and blanched.
The juice of one fresh lemon
*note - if you don't have a food processor, you can use a blender or a mortar and pestle.

Steps:

  • •Heat a couple tbls of olive oil on medium heat in large skillet. •Add chicken breast, cook for about five minutes until slightly browned. It's not necessary that the chicken is fully cooked at this point. Remove chicken from pan and set aside. •To the heated pan, and in the same oil - add the onions, carrots and celery, and a little salt to taste. Cook for about 15-20 minutes until all the veggies become a little tender. •Add the tomatoes, chicken broth, beans and kale - and you can now return the chicken to pan with everything else, and salt and pepper to taste. •Bring all to a slight bowl and then turn the heat down to medium low. •While the soup is simmering, it's time to start adding a little water. It's important to keep your eye on the amount of liquid vs. the veggies and the chicken as the soup cooks. If you like it less soupy, add less water. If you like a little more broth, you'll want to add more water. I added about 2 c of water. •Cover loosely with a lid and let simmer for about another 20 minutes. Pesto •While the soup is simmering, it's time to prepare the simple pesto. •In a small food processor, add the basil, a couple tbls of the olive oil, and the pistachios. •Process quickly so that everything just blends together to make a chunky and sort of thick paste. •Put in a little bowl and have the lemon ready to squeeze into it when you're ready to serve the soup. •Once the soup has simmered and is ready, use a slotted spoon to scoop out enough veggies, beans and chicken for one serving. Place in a single serving bowl. •Now ladle out some of the broth and pour over the contents in the bowl. Put just enough broth so that the veggies and meat are above the broth. •Now you're going to put a spoonful of the pesto on the top and give a quick stir. Remember to add the lemon before you do that. The lemon makes all the difference! •If desired, top with freshly ground black pepper.

Steps:

  • For pesto:.
  • Puree all ingredients in processor. Season with salt and pepper. (Pesto can be made 1 day ahead. Cover and refrigerate.)
  • For soup:.
  • Combine first 4 ingredients in heavy large pot. Cover and cook over medium-low heat until vegetables are almost tender, stirring occasionally, about 8 minutes. Add broth; bring to boil. Stir in orzo; boil uncovered until orzo is almost tender, stirring often, about 12 minutes. Add green beans; reduce heat and simmer until beans are tender, about 6 minutes. Stir in cannellini and crushed pepper; simmer until heated through, about 3 minutes. Season with salt and pepper.
  • Divide pesto among 4 bowls. Ladle soup over pesto; swirl to blend. Sprinkle with 2 tablespoons cheese.

1/2 cup olive oil
1 large onion, diced
1/2 cup of flat leaf parsley
3 cloves of garlic minced
8 cups of water
1 package frozen lima beans
2 1/2 broken dried or fresh tagliatelle
1/4 cup walnut pieces
1/4 cup parm. reggiano-grated

Steps:

  • Heat the oil in a medium-sized soup pot over medium heat. Add onion and saute until golden about five minutes. Do not let the onion brown. Add 1/4 cup of the parsley and all the garlic. Stir well and cook until garlic is softened, two more minutes. Add water and lima beans and bring to a boil. Reduce heat to a very slow but steady simmer and cook, covered, until the beans are tender, 20-20 minutes. Remove two cups of beans and mash them in a food processor, return to soup pot. Add pasta, salt, pepper and cook uncovered until the pasta al dente. Meanwhile place the walnuts, grated cheese, and remaining 1/4 cup parsley in a small food processor. Pulse on and off 3 times to coarsely chop. Sprinkle the soup with more pepper, if desired, serve hot with a t of walnut pesto on each serving.

2 Tbsp olive oil
1 medium onion, peeled and cut into 16 wedges
2 large cloves garlic, minced
3 medium carrots, cut into 2 inch matchsticks
3 stalk(s) celery, sliced 1/4 inch thick
1/4 lb prosciutto, sliced into thin strips
4 c reduced fat, low sodium chicken broth
2 medium tomatoes, medium dice
2 can(s) 15 oz each cannellini beans, drained
3/4 c freshly grated parmigiano-reggiano cheese
1/2 c homemade pesto
salt and pepper to taste

Steps:

  • 1. In a large stock pot heat oil over medium heat.
  • 2. When hot add the onion, garlic, carrot, celery and prosciutto.
  • 3. Saute for 2 minutes, stirring constantly.
  • 4. Stir in tomatoes and broth.
  • 5. Bring to a boil, reduce heat and simmer for 10 minutes, stirring once or twice.
  • 6. Add the beans, simmer for an additional 5 minutes.
  • 7. Remove from heat.
  • 8. Ladle into bowls.
  • 9. Top each bowl with cheese and a tablespoon of pesto.
  • 10. Serve. Caesar Salad and Hot Italian Bread are perfect additions to this soup.
