1 1/4 pounds kosher or rock salt
2 quarts water
2 pounds small fingerling potatoes, cleaned
4 tablespoons butter, optional
Freshly ground black pepper, optional
1 tablespoon freshly chopped chives, optional

Steps:

  • In a large pot, combine the salt, water, and potatoes and bring to a boil. Cook until the potatoes are fork-tender, approximately 25 to 30 minutes. Remove from the pot to a cooling rack and let stand for 5 to 7 minutes. Serve as is or with butter, pepper, or chives.

This recipe is from Alton Brown's Eat This Rock! You cook the potatoes in heavily salted water and the salt crystallizes on the outside of the potatoes. It seems like a lot of salt but it works. The reviews rave over it! I have slightly adapted it. They are even good cold!

  • In a large pot, combine the salt, water, and potatoes and bring to a boil.
  • Cook until the potatoes are fork-tender, about 25 to 30 minutes.

Number Of Ingredients 3

Fingerling potatoes (enough to cover the bottom of whatever pot you're using)
Low sodium Chicken Stock (one box should do it)
a drizzle of olive oil

Steps:

  • Add the oil to the bottom of the pot. Swirl around for even distribution. Add potatoes making one layer in the pot. Set heat to medium high. Add enough chicken broth to cover. Simmer until all broth is gone stirring occasionally. Once the broth is down to a minimum, reduce heat to low. Let the potatoes sear a bit to gain a golden brown spot. Cut the heat and set aside until the rest of dinner is ready. Clean up tip - the bottom of the pot will look really bad. No worries, simply soak in water for a few minutes. The mess wipes right out.
