1 cup rice
1 3/4 cups water
1 pinch salt

Steps:

  • Calculate ratios: I cup rice should be cooked in 1 3/4 cup water.
  • Don't rinse.
  • Go with a heavy thick bottomed pot to prevent scorching.
  • Simmer slowly: After coming to a boil, the rice should simmer, covered until it absorbs the water.
  • Steam to finish: Keep the rice covered, off heat to 10 minutes after cooking.

1 cup black rice
¼ cup diced onion
¼ cup slivered almonds
1 ¾ cups water
1 cube chicken bouillon

Steps:

  • Melt butter in a saucepan over medium heat. Add black rice, onion, and almonds; cook and stir until lightly toasted, 5 to 10 minutes. Add water and bouillon cube; bring to a boil. Reduce hear to low, cover, and simmer until rice is tender and liquid is absorbed, 25 to 30 minutes.

Black rice is an ancient grain known for its nutty, earthy taste, distinctive color and high levels of antioxidants. Some cultures prepare black rice as congee (rice pudding) or as a side dish topped with cooked chicken, eggs or pickled vegetables. Steps:

  • Stir together the rice, 1 3/4 cups of water and 1/4 teaspoon salt in a medium saucepan. Bring to a boil over medium-high heat, then cover, reduce heat and simmer until all the water is absorbed and the rice is tender, about 30 minutes. Turn off the heat and let sit, covered, for 10 minutes. Fluff with a fork, season with salt and serve.
