PEPPERONI PIZZA QUESADILLAS

8 flour tortillas (I used Trader Joe's handmade tortillas)
8 ounces of shredded mozzarella cheese
1/3 lb pepperoni
1 16-ounce jar of pizza sauce
Optional: 1 6-ounce can of sliced black olives, 1 cup of sliced cremini mushrooms

Steps:

  • Heat a medium skillet over medium heat and fry the pepperoni until crisp. Transfer on a paper towel to drain.
  • Brush each tortilla with a thin layer of pizza sauce (so thin that if you turned it over, none would drip).
  • Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni and other toppings, if desired. Sprinkle with another layer of cheese and place the other tortilla on top (sauce side in).
  • Pre-heat a medium cast-iron skilled over medium heat.
  • Lay quesadilla in the pan and cook for 3-5 minutes on each side, until cheese is melted and tortillas are crispy.
  • Slice into quarters and serve with a little bowl of pizza dipping sauce.

1 large flour tortilla
1/3 cup shredded cheese ((cheddar, mozzarella or a Mexican blend))
6-8 pepperoni slices
1/2 tsp Italian seasoning
1/4 tsp garlic powder
pizza sauce ((for dipping))
butter ((for pan))

Steps:

  • Heat a large skillet to medium heat and fry the pepperoni until crisp. Remove them from the pan and place them on a paper towel to soak up the extra grease.
  • Use a paper towel to remove any remaining pepperoni grease from the pan and then add about 1/2 tbsp of butter and spread it around with a spatula as it melts.
  • Drop your tortilla into the pan, flipping it a few times so that both sides are evenly covered in butter. Crisp ONE SIDE of the tortilla for a minute and then flip and top the CRISPY SIDE with shredded cheese, pepperoni, Italian seasoning, and garlic powder.
  • Cook for an additional 2-3 minutes or until the under side is golden brown and your cheese is melted.
  • Fold one side of the tortilla over and remove from the pan. Allow it to rest for a few minutes before slicing with a pizza cutter.
  • Serve with warm pizza sauce or marinara.

1 cup meatless spaghetti sauce
2 teaspoons butter, softened
4 flour tortillas (10 inches)
1 cup shredded part-skim mozzarella cheese
8 thin slices hard salami
12 slices pepperoni
1/4 cup shredded Parmesan cheese
1/2 teaspoon dried oregano

Steps:

  • In a small saucepan, cook spaghetti sauce over medium-low heat for 3-4 minutes or until heated through. , Meanwhile, spread butter over one side of each tortilla. Sprinkle unbuttered sides of two tortillas with mozzarella cheese; top with salami and pepperoni. Sprinkle with Parmesan cheese and oregano. 2 flour tortillas
2 tablespoons pizza sauce or 2 tablespoons any type spaghetti sauce
8 -12 pepperoni slices
2 slices provolone cheese
mozzarella cheese
parmesan cheese
minced garlic
crushed red pepper flakes

Steps:

  • Place one flour tortilla on a baking sheet or pan. Place 2 tablespoon's of pizza sauce or spagetti sauce (bertolli is great) on tortilla and spread evenly over surface of tortilla.
  • Place 4-6 pepperoni slices on top of sauce, then sprinkle with parmesean cheese.
  • Take one slice of provolone cheese and tear it into four equally sized pieces. Place the four pieces on top of tortilla surface.
  • Sprinkle mozzerella cheese (not very much) over all ingrediants.
  • Place 4-6 more pepperoni slices over mozzerella, then sprinkle minced garlic over the mozzerella.
  • Put second flour tortilla over top of your now tortilla pizza. Place one more whole slice of provolone directly in middle of toritlla, put just sprinkle of mozzerella cheese, then some crushed red pepper.
  • Place in oven (set for 450 degrees) and wait about 10 minutes.
  • Check on your quesidilla and see if it is done (the tortillas need to be a little brown on the outside to give it a crust like texture). If its done take it out.
  • Cut into four triangles, and enjoy!
