No Bake Peppermint Chocolate Cheesecake image

A simple No Bake Cheesecake is made even more amazing with the addition of chocolate and peppermint. The perfect holiday dessert!

Number Of Ingredients 10

2 1/4 cup Oreo cookie crumbs
1/2 cup butter {melted}
2-8 oz. pkgs. cream cheese {softened}
1-14 oz. can sweetened condensed milk
1-8 oz. tub whipped topping
4 oz. semi-sweet chocolate {melted}
1/2 tsp peppermint extract
1 candy cane {crushed}
2 Oreo cookies {broken into crumbs}
4 oz. whipped topping

Steps:

  • Combine Oreo cookie crumbs and melted butter in a bowl. Mix together until everything is nicely incorporated. Pour into a ungreased spring form pan. Press crumbs firmly into the bottom and slightly up the sides of the spring form pan. Refrigerate until filling is ready.
  • Mix together cream cheese and sweetened condensed milk until creamy using a hand held {or stand mixer}. Add the whipped topping and fold into the cream cheese mixture until combined. Add peppermint extract and gently mix until completely incorporated. Divide batter into two bowls {1/3 batter in 1 bowl and 2/3 batter in 1 bowl}.Melt semi-sweet chocolate in the microwave starting with 30 seconds, stir and then add 10 second increments until completely melted. Once cooled {but still melted} pour the chocolate into bowl filled with 2/3 of the cheesecake filling. Fold the chocolate into the mixture being sure not to deflate the batter.
  • Pour the chocolate cheesecake into the Oreo crust and smooth into an even layer. Take the other plain cheesecake batter add dollops on top of the chocolate cheesecake. Using a toothpick or skewer swirl the regular cheesecake into the chocolate cheesecake. This will create beautiful swirls on the top of the cheesecake. Top the cheesecake with the crushed candy cane and refrigerate for at least 2 hours.
  • To serve, remove the outer portion of the spring form pan. If desired, pipe a border of whipped topping around the edge of the cheesecake and dust the whipped topping with crushed Oreo. Cut into wedges and serve. Refrigerate leftovers for up to 4 days.

1 ¼ cups chocolate cookie baking crumbs
¼ cup butter, melted
3 (250 g) packages PHILADELPHIA Chocolate Brick Cream Cheese, softened
¾ cup white sugar
1 teaspoon peppermint extract
3 eggs
½ cup whipping cream
1 tablespoon white sugar
1 candy cane, crushed

Steps:

  • Heat oven to 350 degrees F (175 degrees C).
  • Mix baking crumbs and butter; press onto bottom of 9-inch springform pan.
  • Beat cream cheese and 3/4 cup sugar in large bowl with mixer until blended. Add extract; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended; pour over crust.
  • Bake 40 to 45 minutes or until centre is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.
  • Beat cream in separate bowl with mixer on high speed until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form; spoon over cheesecake. Sprinkle with crushed candy.

This festive dessert is the result and one of my favorites to serve for the holidays. 2 cups Oreo cookie crumbs
6 tablespoons sugar
4 tablespoons butter, melted
FILLING:
3/4 cup semisweet chocolate chips
1/2 cup white baking chips
4 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 cup sour cream
2 tablespoons all-purpose flour
1/4 teaspoon peppermint extract
4 large eggs, lightly beaten
1/3 cup peppermint crunch baking chips
GANACHE:
1/2 cup semisweet chocolate chips
1/4 cup heavy whipping cream
Optional: whipped cream and peppermint crunch baking chips or peppermint striped white chocolate kisses

Steps:

  • Preheat oven to 325°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan. In a small bowl, mix cookie crumbs and sugar; stir in butter. Press onto bottom of prepared pan. In a microwave, melt chocolate chips; stir until smooth and cool slightly. Repeat with white baking chips., In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream, flour and extract. Add eggs; beat on low speed just until blended. Remove 2 cups batter to a small bowl; stir in cooled chocolate chips until blended. Pour over crust. Stir peppermint chips and cooled white chips into remaining batter; gently spoon over chocolate layer. Place springform pan in a larger baking pan; add 1 in. of hot water to larger pan., Bake until center is just set and top appears dull, 75-85 minutes. Remove springform pan from water bath. Cool cheesecake on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled. , Remove rim from pan. For ganache, place chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; stir with a whisk until smooth. Let stand 3 minutes. Spread over cheesecake. If desired, garnish with whipped cream and additional peppermint crunch baking chips or kisses.

2 cups chocolate wafer crumbs (about 35 wafers)
5 tablespoons butter, melted
3 tablespoons sugar
Vegetable cooking spray

1 cup semisweet chocolate morsels
1/4 cup heavy cream
4 (8-oz.) packages cream cheese, softened at room temperature
1 cup sugar
1 teaspoon vanilla extract

Steps:

  • Prepare Crust: Preheat oven to 350°. Stir together first 3 ingredients in a medium bowl. Press mixture on bottom and 1 inch up sides of a lightly greased (with cooking spray) 9-inch springform pan. Bake 10 minutes. Let stand at room temperature until ready to use.
  • Prepare Filling: Reduce oven temperature to 325°. Microwave chocolate morsels and cream in a small microwave-safe bowl at MEDIUM (50% power) 1 to 1 1/2 minutes or until melted and smooth, stirring every 30 seconds. Cool 10 minutes.
  • Beat cream cheese and 1 cup sugar at medium-low speed with a heavy-duty electric stand mixer just until smooth. Add chocolate mixture and extracts, and beat at low speed just until blended. Add eggs, 1 at a time, beating at low speed just until yellow disappears after each addition; pour into prepared crust.
  • Bake at 325° for 50 minutes to 1 hour or until center of cheesecake jiggles and is almost set. Remove cheesecake from oven, and gently run a knife around outer edge of cheesecake to loosen from sides of pan. (Do not remove sides.) Cool cheesecake completely on a wire rack (about 2 hours). Cover and chill 8 hours to 2 days.
  • Remove sides of pan, and spread Whipped Peppermint Cream over cheesecake.

10 oz cream cheese, room temperature
1/2 c sugar
1 large egg
1 Tbsp cocoa powder
2 Tbsp peppermint extract
CRUST
1 c chocolate graham cracker crumbs
3 Tbsp butter, melted
3 tsp sugar
GLAZE
12 peppermint patties ( small not the large ones)
2 Tbsp heavy whipping cream

Steps:

  • 1. Preheat oven to 350. In a small bowl add melted butter and sugar to chocolate graham cracker crumbs. Mix well. Pour into a 10 inch springform pan and press down. Bake 10 minutes, remove from oven and let cool
  • 2. In a bowl cream together cream cheese and sugar. Add cocoa and mix well. Add egg and peppermint extract and mix well. Pour onto cooled crust and spread to cover crust ( I wrapped my pan bottom with aluminum foil and place in a baking dish with 1 inch of water)
  • 3. Bake in a preheated 350 degree oven for 50-55 minutes ( mine was 50) Let cool for 45-60 minutes before removing from pan. Let chill for well as long as you can with out cutting it :) ( about 3 hours)
  • 4. In a microwave safe bowl break peppermint patties in pieces add heavy cream and microwave 1 minute. Stir well. Continue in 15 second burst until candies are melted and mixed well. Pour over cheesecake and let cool. Slice and enjoy.

3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
4 ounces white chocolate, chopped into 1/4-inch pieces
1/2 cup granulated sugar
6 tablespoons unsalted butter
1 large egg
2 teaspoons pure vanilla extract
4 ounces peppermint candies, chopped into 1/3 inch pieces

Steps:

  • Preheat the oven to 325°F
  • In a sifter, combine the flour, baking powder, and salt.
  • Sift onto a large piece of wax paper and set aside until needed.
  • Heat 1 inch of water in the bottom half of a double boiler over medium heat.
  • With the heat on, place the white chocolate in the top half of the double boiler.
  • Use a rubber spatula to stir the chocolate until completely melted and smooth, about 4 minutes.
  • Transfer the melted white chocolate to a 1-quart bowl and set aside until needed.
  • Place the granulated sugar and butter in the bowl of an electric mixer fitted with a paddle.
  • Beat on medium for 4 minutes until smooth.
  • Use a rubber spatula to scrape down the sides of the bowl, then continue to beat on medium for 2 more minutes until very smooth.
  • Add the egg and the vanilla extract and beat on medium for 1 minute until combined.
  • Scrape down the bowl.
  • Add the melted chocolate and beat on medium for 1 minute until combined.
  • Scrape down the bowl.
  • Add the sifted dry ingredients and mix on low until incorporated, about 30 seconds.
  • Add the chopped peppermint candy and mix on low until incorporated, about 30 seconds.
  • Remove the bowl from the mixer and use a rubber spatula to finish mixing the dough until thoroughly combined.
  • Using a heaping tablespoon of dough for each cookie (approximately 1/2 ounce), portion 12 cookies, evenly spaced, onto each of 3 nonstick baking sheets.
  • Place the baking sheets on the top and center rack of the preheated oven and bake for 9 minutes until lightly golden brown around the edges, rotating the sheets from top to center halfway through the the baking time (at that time also turn each sheet 180 degrees).
  • Remove the cookies from the oven and cool to room temperature for 30 minutes.
