4 cups crushed Oreo cookies (about 40 cookies)
1/4 cup butter, melted
1 pint (2 cups) vanilla ice cream, softened if necessary
2 cups heavy whipping cream
1 jar (7 ounces) marshmallow creme
1/4 cup 2% milk
1/4 to 1/2 teaspoon peppermint extract
3 drops green food coloring, optional

Steps:

  • In a large bowl, combine crushed cookies and melted butter; toss until coated. Reserve 1/4 cup mixture for topping. Press remaining mixture onto bottom of a 9-in. springform pan or 13x9-in. dish. Freeze 10 minutes. Spread ice cream over crust. Freeze, covered, until firm., In a bowl, beat cream until soft peaks form. In a large bowl, mix marshmallow creme, milk, extract and, if desired, food coloring until blended. Fold in whipped cream., Spread over ice cream. Sprinkle with reserved cookie mixture. Freeze, covered, until firm.

2 cups chocolate wafer crumbs
1/4 cup margarine, melted
1 (7 ounce) jar marshmallow creme
2 tablespoons milk
2 tablespoons creme de menthe
2 cups whipping cream, whipped

Steps:

  • Combine crumbs and margarine.
  • Reserve 1/2 cup for topping.
  • Press remaining crumb mixture onto bottom of 9-inch spring form pan.
  • Combine marshmallow creme, milk and creme de menthe, mixing with electric mixer or wire whisk until well blended.
  • Fold in whipped cream.
  • Pour over crust.
  • Sprinkle with reserved crumbs.
  • Freeze.
  • Variation: Increase milk to 1/4 cup.
  • Substitute a few drops peppermint extract and green food coloring for creme de menthe.

15 chocolate creme-filled sandwich cookies, finely chopped
3 tablespoons melted butter or margarine
1 jar (7 oz) marshmallow creme
1 tablespoon milk
3 cups frozen vanilla nonfat, yogurt, softened
1 container (8 oz) light frozen whipped topping, thawed
1/2 teaspoon peppermint extract
8 drops green food coloring

Steps:

  • Finely chop cookies in a food chopper (or by sealing in a ziploc baggie and crushing with a rolling in or other implement); combine with butter in a mixing bowl. Press crumb mixture onto bottom of Springform Pan. Refrigerate while preparing filling. Combine marshmallow creme and milk; whisk together. Whisk in frozen yogurt until well blended. Fold in whipped topping, peppermint extract, and food coloring with a scraper. Pour over prepared crust. Cover and freeze until firm, 8 hours or overnight. Garnish with additional chopped cookies, if desired.

2 pkg. (3.4 oz. each) JELL-O Pistachio Flavor Instant Pudding
3 cups cold milk
1/4 tsp. peppermint extract
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1-1/4 pkg. (9 oz. each) chocolate wafer cookies (60 wafers)
1 oz. BAKER'S Semi-Sweet Chocolate, melted

Steps:

  • Line 8-inch round pan with plastic wrap. Beat pudding mixes, milk and extract in large bowl with whisk 2 min. Gently stir in 2-1/2 cups COOL WHIP.
  • Spoon 3/4 cup pudding mixture into prepared pan; spread to within 1 inch of edge. Cover with layer of 10 wafers, top sides down, overlapping wafers as necessary to form even layer. Repeat layers 5 times; cover. Refrigerate 2 hours.
  • Invert dessert onto serving plate just before serving. Remove plastic wrap. Top dessert with remaining COOL WHIP; drizzle with chocolate.
